INGREDIENTS
For the crust:
1 1/2 sleeves of saltine crackers (about 6 ounces or 60 crackers)
1/2 cup softened unsalted butter
3 tablespoons sugar
For the filling:
1 (14-ounce) can sweetened condensed milk
4 egg yolks
1/2 cup lemon or lime juice or a mix of the two
Fresh whipped cream, for garnish
Coarse sea salt, for garnish

We've noticed since moving to the Atlantic Beach area revise of cracker crumbs crusts. Too many do not bake the crust enough. Yours looks better. Can't wait to try Bills recipe!!

This pie was a big hit. i have powdered coconut milk that i blended with the whipped creme and so FYI... it was awesome.

I live in the Midwest but have been too US beaches North (Great Lakes), South (Gulf Coast), East (Atlantic off Cape Cod), and West (Pacific off San Francisco), and I love anything called beach. I'm an NC native and I rem growing up at the beach and every restaurant would carry some version of this pie! Such great memories, need to make it again - also if y'all are passing thru, try the BBQ in the eastern part of the state, best in the country!

I did add a tiny bit of sugar to the whipped cream. But you MUST put the salt on top. That makes it.
I make a similar filling, but I fold in the whipped cream to make it fluffy, and add more plain on top!

When I finally made my pilgrimage to the capitol and beyond, it seemed to me that the vast majority of pies were salt cracker pie. I had my first chocolate pie on saltine crust. Coconut and custard the same. As a result, I adopted this method and now downright refuse to use Graham crackers. You can season your saltine crust, think lemon zest, cardamom, nutmeg, anise, in order to compliment your filling.

The lemon filling part has been around forever. I have my great grandmother's recipe cards from the 1920's and 30's and she has the recipe for the lemon filling. She used a graham cracker crust with meringue making it a classic lemon meringue pie. I am gonna try this variation!! Looks good.

My son's ex wife's mother was from Pennsylvania. She never ever puts vanilla sugar in her whipped cream. I had always wondered why her whipped cream taste like butter. Us Texans.. Mexican Vanilla n sugar is a must!

Saltines cheaper, we don't have graham crackers here in Baja Sur, but sure have saladitas!! Muchas! So I end up using galletas Marías, but they are moocho pesos for me- as I live below poverty- I will try using Mexican limes, and merengue because whipped cream is imported from USA and costs mooocho $ also- and since I have chickens I have free huevos- gracias!

Except for the cracker crust, that **IS** a Key Lime Pie (usually made with a graham cracker crust). Merengue is always optional.

My husband has lived in NC his entire life also, and he too says he's never heard of saltine cracker crust. Furthermore, just because someone wasn't raised having this pie served during their upbringing doesn't mean they're stupid. Lack of knowledge... 😡

This was my nannies pie. Bill Smith who? : ) Just kidding. She used graham crackers and meringue. Which is the one you were mentioning. She called it lemon ice box pie-served ice cold. Will encourage my mom to try it this way. The woman ADORES saltines. She makes a mock apple pie made out of ritz crackers, so she just may take the dive into the Atlantic Beach Pie of Bill Smith. ~ As for "THIS RIGHT HERE..." is simply magical isn't it? this is just an icebox pie with a saltine crust
My very 1st time making a key lime pie was a few days ago, and it turned out okay. I didn't use any egg yolks & honestly there was a bit of a bitter note to it. Well I did some research & found out that I had used the wrong type of limes (only had those large, golf ball, Persian limes available), and I probably should have used the egg yolks.
Well make an attempt at making this saltine cracker lemon/key lime pie. But will make sure I use the eggs & wait until I can get my hands on some real key limes.

He didn't invent this pie. It's a NC coast staple. He may have give you his recipe. It's one of those "my mom made it this way" pies

Personally I just made this saltine pie crust with my Lemon ice box pie and I still prefer a graham crust better. But it's all
personal preference. This is a 30's recipe here been around forever! Hence the ice-box title.

The recipe calls for an 8” pie pan. Are there any significant changes if you make it in a 9” pie pan (e.g. shorter baking time)?
Would using Ritz or Club crackers add more butter flavor to the crust?

I’m trying to make this right now and yea it’s not looking so great and that’s how you know you’re totally hopeless in the kitchen because this has got to be the simplest recipe yet I managed to fuck it up lol. Yay
rather than whipped cream you can also whip the egg whites for meringue then very briefly with attention, broil the top!
