    How To Make Cherry Pie With Claire Saffitz | Dessert Person
    Sour Cherry Pie occupies a perch on the dessert hierarchy above all others, sitting high and mighty. That’s because sour cherry pie, when executed well, has juicy but set filling, a balanced sweet-tart flavor, and golden flaky pastry. It’s everything a dessert should be and more. Here is Claire’s, inspired by the pies her mom used to make when she was a kid and informed by all the pie-making wisdom she’s gathered in her baking lifetime. Sour cherry season is fleeting, but seek out frozen ones and make this pie all year long.

    Ingredients
    Flaky All-Butter Pie Dough, Almond Variation (Pg 337)
    All-purpose flour, for rolling out
    8 cups fresh pitted sour cherries (2.5 lb / 1.12kg), from about 3 pounds (1.36kg)
    1 1/4 cups granulated sugar (8.8 oz / 250g)
    5 tablespoons cornstarch (1.6 oz / 44g)
    2 teaspoons finely grated lemon zest
    2 teaspoons vanilla extract
    1/2 teaspoon ground cinnamon
    1/4 teaspoon ground cardamon
    1/4 teaspoon Diamond Crystal kosher salt
    1/4 teaspoon almond extract
    1 large egg, beaten
    Demerara sugar, for sprinkling the top

      you should try for real :) my father in-law got me her book for Christmas last year and I've done so many of her recipes I never thought I could do!     I made this pie for Thanksgiving dinner last year and my family loved it! For the pie crust, I have a sister and a niece who both have celiac, so I used gluten free measure-for-measure flour and it turned out beautifully!

    for some reason the pre intro, with her dropping the bag and just laughing about it, just made me realize how stressed she always seemed on gourmet makes, how she would've almost definitely been very upset about just dropping that bag, at least if it was after the halfway mark of the video. I am so glad that Claire now gets to work in an environment that she determines herself and that does not force her to be that stressed or unhappy

    Claire, I think this was one of your best episodes. I’ve been baking for many years, but never had the best results with fruit pies. They always turn out to runny. I never thought about keeping the fruit frozen to reduce the juice.

    I never throw away extra pie crust. We make what my grandma called cinnamon yitchies, by putting butter, cinnamon, and sugar on the pieces and rolling them up like a crescent roll. Bake with the pie and you have something to eat so you aren't as tempted to cut into the pie too soon.

      I hate eating hot fruit also (as did the great English mathematician G. H. Hardy who subscribed to the view, as stated by someone else, that “a man who will eat a _hot_ fruit pie is unfit for decent society”-presumably he would have included women as well). That said, I’d just wait and eat it at room temperature.

    For anyone planning to make this recipe: the video omits the vanilla extract. The description and her book both say to use 2 tsp of vanilla. Just add it in at the same time as the almond extract!

      That is way too much vanilla. The almond pairs well with cherries. No vanilla is needed, or else she would have stated so.

    You can also do the lattice ahead on a cake round or flat plate and chill it. If it stays cold, you can slide the entire woven lattice as a whole onto the top of the pie. This helps avoid any of the fruit filling from getting where you don’t want it.

    Claire, I got a new kitchen with an island and a designated baking equipment cabinet in August 2020 only to figure out that I had developed Long Covid. I can’t do all the baking I long to do on that island but I think I’ve got everything I need except a stand mixer. So when I feel better, and I hope that day will come, I am going to make this cherry pie, because cherry pie is my favorite, too. In the meantime, I’ll be watching you bake.     I also grew up in Missouri, and at one of the houses we lived in growing up, there was a small family orchard with several kinds of fruit trees: apple, apricot, peach, pear, and one marvelous sour cherry tree in the side yard. My mother made pies and froze them so that we could have fruit pie in the winter. The sour cherry pie reminds me, like Claire, of my childhood, and is my favorite pie. The difficult part now is finding even frozen sour cherries. I may have to ask my local store if they can order them. Thanks for the memories, Claire!

    Finally made it. Fantastic pie, probably the best fruit pie I've ever had. Sweet, quite tart, with some warm spice notes in the background. The texture is perfect, it moist - neither runny nor stiff. I used frozen sour cherries and while I love sour desserts, I would probably add a bit more sugar next time, especially if I'm making it for company. And I think I would add a touch more spice - but that's purely personal preference.

    Delicious! Used mixed frozen berries - sour and sweet cherries and blueberries. Total bake time was 2.5 hours. Came out perfect! Will be more patient next time and let it fully COOL before cutting so filling will set. Thanks again, Claire!
