    how honored i am to be acknowledged by Erin for the macerating technique in this extraordinary pie tutorial. i cannot imagine a more complete, empowering, or enchanting pie 'class". if anything could make us a pie baking nation Erin has done it! and to weigh in on cornstarch as thickener, i find that it actually enhances the flavor of the fruit. i have never made an oven-roasted pie and now that i've watched and listened to Erin it is next on my agenda of pie baking! ❤️ ❤️ ❤️ brava Erin.

      I tried to reduce my fruit liquid as suggested, but by the time it was reduced down it had a caramel-like consistency. After cooling when I tried to mix it with the fruit mixture it was a big sticky mess. I still baked it to see how it would turn out and well, it was awful lol. Any tips? I was using cherries if that makes a difference.

      @@Sss-ob1bf please don't reduce it down so much and if, by mistake, you do, add a little hot water to dissolve it.

      Oh my gosh, I'm here looking for a recipe for a great blackberry or blueberry pie recipe, wanting something new and I see the famous, Rose Levy Beranbaum posting here. I have your wonderful, Cake Bible cookbook back from 1988, that was three husbands ago! It's one of my treasured cookbooks. I love all the old school recipes. Magical. Best wishes.
      P.S. Third time lucky and finally got it right with husband #3. Still happy and in love after 21 years. Never give up.

      @@spicerack4397 what a delightful note!!! you might enjoy knowing that many years ago i noticed i had a black and blue mark and this was the inspiration for my black and blue pie. it's in the pie and pastry bible and the ebook, i believe, is now on sale on Amazon for $1.99 and the hard cover at half price!

      Well if you can't wait...What are you going to do??? And, what is a "roasted" pie? LOL!!! Is that just another way to say a "Baked Pie" in another country other than the United States???     As usual, Erin is incredible! Seriously, what an amazing instructor, so thorough, knowledgeable, and a wonderful communicator and super cheerful and charismatic. I’ve learned so much from Erin’s videos and I really can’t wait for the next one! And those pies look so good, I can only imagine how they smell and taste.

    Girl....u have no idea how long I’ve been waiting to watch the new episode of Bake it up a notch!!! I get so excited each time I get a notification from you!!! I love it!!! You cook like my Grandma and TeTe from Crossett Arkansas! I miss it so much so love to cook and bake to remind myself of them! You are an encyclopedia of baking knowledge! I can’t wait to buy the book!! I made a blackberry cobbler last week bc I needed the flavor, but I didn’t feel like making a pie.

    I baked a peach pie today which was the best pie I’ve ever made. TIP: I put 2/3 cup of rolled oats on the bottom of the pie before putting in my peaches and sugar and 2 T of melted butter. I also put in a small pinch of cardamom and cinnamon. No glue or cornstarch. Just rolled oats to soak up the juices. Best ever.

    Great info on pies. I find it very difficult to make other pies except apple pies. With your suggestions it should be easier to execute. Happy pie making. Your pies look delicious.

    I have learned so much. i would love to learn about slab pies. I have been making a blackberry slab pie my mother taught me that will benefit from so many things i have learned here.. Considerations for a 11 x 17 inch pie crust.

      why wouldn't you put the board over the pan and then flip it to avoid the stragglers?

      @@Angie_P I wouldn't want my paws anywhere near oven-hot caramel... Holding the board, I have visions of it tipping and running down my wrist YEOUCH. Not sure it would solve the stragglers issue, either, if they were good and stuck.
