      Yan Bing Choo It came out in June that BA was severely underpaying - or in some cases not paying at all - a lot of the poc people in their videos like Sohla, Priya, Gabby, Rick, and Chaey. After it all came out BA promised to do better and then gave them bad and sometimes worse contracts, so all of them resigned from BA test kitchen videos a couple weeks ago, along with Molly and Carla out of solidarity. BA handled it impressively terribly, but that’s why they haven’t posted videos in a while.

      Being a person with a terrible memory, it’s so helpful to me to know “why.” That seems to make things stick with me much longer. I always know if I watch one of Erin’s videos, I’ll get every possible reason for the method explained really thoroughly. I also appreciate not being told that her preferences are the only way to go (unless it does matter). Pie dough is such an important skill - thank you for this.

      If you could've watched your grandmother's, you'd have learned... Even if you didn't know the chemistry... You'd have learned watching and then do'n with their supervision....
      Erin is add'n the chemistry so you understand Why it works or doesn't, then you Can correct things when stuff goes a bit off....

I learned so much and I am so excited to start my journey. I love to cook ( dinners, sauces, etc) but have never loved to bake. I never had any teachers so inspiring.     I'm changing up my game based on this tutorial. I've made great pie for 30 yrs. My dough included an egg yolk and a small amount of vinegar mixed into the ice water and I now see I was probably firming up the end-product. Plus, I had moved to pulsing the fat in a processor. I'm going with Erin's excellent explanation.

    Well....you sold me....I was about to give up trying to bake apple pies or any pie for that matter....Past 6 months I was just all over the place trying too many recipes....none worked for me...I just turned 74 and discovered your videos...YES my wife has ordered your book today for my B day.....I just can't wait for it....I hope that I can become a proficient pie baker....once I get your book....I feel like a kid again....waiting for your book to arrive with great anticipation...

      Savory pies are heavenly. Meat pies, cheese pies....I’ve even made vegetable pies for vegetarian friends (with Crisco in the crust. Did you know it’s vegan? Hahahahaha)

      I like that this lady explains thing in rational order, for example when explaining par and blind baking she kept her explanation of things in the order of par and blind, it's helpful when I need to pause and think about what she is saying.

    She is the absolute best teacher!!! I have a pastry chef degree and was never taught why we chill, not have butter melt, how to properly roll, what size butter pieces CAN be, how to properly coat the butter in flour before adding water, par baking, etc etc. I’ve been looking for these answers for over 10 years. Thank you!

    Your tip for placing the bowl of flour into the freezer has definitely helped me. I have very hot hands and no food processor. I always struggled making pie doughs until you gave me that cue thank you so much!!

    Can I have a minute to gush over the pie dough recipe!?! Oh my goodness!! This shingling method with the butter and keep it cold at every stage is the bees' knees!!!! I made a seafood pie with your recipe for the shell! Rave reviews at the potluck tonight. Then there was just some flake nibbets left! One flake was more than an inch square!!!     Hi Erin, Fellow Kansan here.......actually from Wichita :). I could not make a pie crust to save my soul! I found your series not too long ago and I just LOOOOOVE it!. The one thing is I found a recipe for pie crust from Cooks Illustrated. The only difference is I substitute 1/2 of the ice water with alcohol (that i have kept in the freezer). The rest is the same. With my cherry pies i like using amaretto in the crust, as well as in the filling. Banana cream i use rum or flavored vodka, etc. :) When i par bake a single crust i dock the crust as well as use pie beans (pinto, or rice whichever I have) with parchment or foil which ever i have at hand.

    Oh my gosh I learned soooo much from just this one video!! I love to "cook".....it's my passion! However, I'm trying to be more open to "baking". 😊 I do have my favorite things to bake, banana bread, rice pudding stuff like that, but pies have been my nemesis!     Erin, if you don't mind can I ask where you are from? I am new to your beautiful channel. I absolutely LOVE making pies! We owned a bakery/cake shop for over 50 years and at home I was an avid baker/cook. I actually won a blue ribbon at our local 'Down Home Days' festival for my pies. But now I can't seem to get the crusts right. I'm not sure why. Maybe I've lost my touch or maybe the ingredients have changed. ??? Anyway, I am so glad that I came across your video!     @Food52 thank you for this tutorial. I made the pie dough this weekend, and I followed the instructions to the letter-made sure the butter was always coated well in flour, kept the ingredients chilled throughout the preparation, chilled the assembled pie before baking, and had my oven preheated to the proper temperature. The butter pooled in the pie tin and spilled out during baking, resulting in a tough crust. I want to try this again, because I’m sure it’s a great recipe, but I’d like to know what you think went wrong? I sooo want this to work! Thank you!

    I love your videos Erin. I’m learning so much. One question - after you make the dough and put it in fridge to rest for 30 minutes or up to overnight, you then bring it back to your work surface to begin the rolling. How long do you let your dough disk sit out at room temperature before you start rolling it?

    Thank you! I love to bake and am known for my pies but crusts have always been an extreme source of stress. It seems like I’ve tried most everything, butter, shortening, lard, ice cold, but never found a comfort level. Here’s hoping for a better crust!

    I have just found your channel, what can I say you are BRILLIANT I consider my self a reasonable cook of 50 yrs, pastry short crust easy, no way flaky, rough puff sister made it or frozen . Thank you so much is your book available in uk ? I'm doing pastry tomorrow

    YOU ARE THE PIE AUTHORITY! I've bought 2 of your books, they are amazing! Can't wait to buy your new one.
    I have 1 question that still henders my pies! I use your all butter pie crust & par bake for my cooked pies. My crust removes beautifully after par baking (sturdy & crisp just like you say), BUT after I put the filling in & bake it, it refuses to come out. No soggy bottom tho! Really makes cutting a slice messy. I use a ceramic (with shiny interior) pie plate.
