    I made this several months ago and it was fabulous!
    I just made it again today but substituted key limes in place of the lemons. Key lime zest, key lime juice. Makes spectacular key lime pie!

    That lemon pie is looking so yummy and have me wishing to be devouring it. That is one of my favorite pies and the way that one looks I could eat the whole thing in one day.

    Just made it and it is excellent. Very easy to make and delicious. I ended up using two medium lemons for the juice and zest.

    We just called it Atlantic Beach pie and it originated, I believe, in the Morehead City area. We used the egg whites to make a meringue,
    however, instead of whipped cream. It s a version of “Magic Lemon “ pie from Borden’s.

I like to cook so i do most of the cooking, except for holidays & certain ethnic foods like mexican , etc...my wife likes to do those meals & she is better at cooking them than me, even though she is german/austrian.       Spice Master II I never have either, I believe it’s a southern thing. I food styled for QVC and a southern lady brought them in to sell, they didn’t look very pretty, rather simple. I took one bite, then found myself eating 2 entire mini pies. It was sooo good.

    14 ounce sweetened condensed milk,
    4 egg yolks
    1/4 cup heavy cream,
    1 tablespoon lemon zest,
    1/8 teaspoon salt,
    1/2 cup lemon juice,
    1/2 cup heavy cream
    2 teaspoons sugar
    1/2 tsp vanilla

    I know this is ATK's recipe but I wanna try this with passionfruit pulp(pulp and/or concentrate sold in most supermarkets) . I feel like orange peel and fresh squeezed o.j would be lovely as well.

      @@DeRien8 The original recipe is called "Bill Smith's Atlantic Beach Pie". ATK makes two changes here: (1) They use corn syrup instead of sugar in the crust so that it's easier to cut instead of shattering and (2) they add 1/4 cup of cream to the filling to cut down on the tartness just a bit. I've made both versions, and ATK hit the nail on the head with these two changes.
      It's 100% delicious and anyone who likes lemon pie will love this.

    Made this pie (2 actually) for the first time last night for friends. Pretty darned amazing if I must say. My wife was concerned about the whipped topping not being sweet enough. It was a perfect combination of ingredients. My crust didn't hold together like Ashleys did so looks like I have reason to try another one soon. Great job ATK!

    The crust appears higher when taken from the oven. When removed from refrig it crust seems shorter. Did filling expand due to cold?
    Can this pie be frozen and creamed at a later date.

    Proofing crust??
    Important info:
    I made this tonight and my first baking with crust only went fine except it was quite poofy and shrinking from the edges.
    I made a decision to go ahead while it’s hot & use my metal measuring cup to press it down lightly once again, same as previously instructed before baking.
    I’m grateful I did bc it shaped right up and allowed for my filling to have the space it needed.
    I used Kroger brand regular saltines and exactly 53 along with the 1/4 c light corn syrup and 10T butter.

    I just made your Lighthouse Potatoes for a pot luck. It was served along side a perfect tender smoked brisket here in our neighborhood in Palm Springs. It was a perfect match, thanks, everyone loved it.

    Okay y'all, so I'm gonna make this pie. But I'm going really quick and easy. I'm using a store bought pie crust and cool whip on top. Making the filling exactly as on video. Bet it's still really good. No food processor, no mixer. Go ahead and criticize me, but I'm all about short cuts.

      I'm all about the short-cuts, too, but I will NEVER buy another container of whipped cream again (although I will still use whipped cream out of the spray-can on my hot cocoa!). It's SOOO EASY to make homemade whipped cream, (& I always add almond in addition to the vanilla for extra flavor) & it's SOOO worth the extra 5 minutes b/c it tastes SOOO MUCH better than store-bought whipped cream.
      If you have difficulty getting your whipped cream to set/thicken/stiffen, you can buy a whipped topping mix like "Dream Whip" or "Whip-It" from the store to help you (which is what I do).
      Making homemade whipped cream makes 100% difference, especially with a little added almond flavor in it.

      put the crackers in a resealable plastic bag and roll them with a rolling pin until you get the right consistancy. That's what cooks did for any cookie/cracker crust before the food processor.

    This looked so yummy but, alas, I can't have anything from cow's milk due so I think I'll try making this vegan. Everything use that was a milk product, I can find in a vegan version. I hope it works!! I think I'll try Aquafaba for the eggs instead of the powdered stuff. Most of that stuff is just nasty.

      It's about making a recipe that's consistent for people. The amount of salt in each brand of salted butter can vary quite a bit. If they use unsalted butter, then add in just the perfect amount of salt, the results will be the same every time. If you want to use a brand of salted butter that you know and trust, go ahead. ATK is all about getting consistent results for all home cooks.

      @ Spice Master ll, you can control the salt easier by adding to the ingredients, you never know how much salt is added to salted butter, i've had some that tasted like it had little to no salt at all, & some that was extremely salty. I always use unsalted butter, i hope that helps friend, God Bless

    I made for family, filling is incredible. The crust was meh. Couldn’t really taste much of anything. And there was too much for a 9” pan. I’ll definitely make again and hopefully refine a little with quantity of saltines. I’d probably also add a little more salt to the crust.

      No such thing as unsweetened condensed milk. There is evaporated milk and condensed milk. The first I not sweet, the later is always sweet.

    I made this pie followed every step watching the video. I served it to my guest they all spit it out. I tasted and spit it out too. However, the cream topping was good. I was so embarrassed. No dessert tonight 😝 I throughout this recipe!!!

      Most cooking shows make one before filming, to use for the after. This is especially true for items that have to chill for a long time. This helps keep production cost at a reasonable level.
      The difference seen could have been from the distribution of the crust, side vs bottom, between the two.

    Not happy with this recipe. Center did not firm up after many hours of refrigeration! Very disappointed, usually your recipes are spot on, not this time!

    I’m really distracted by her curls. Not in a good way. Perhaps, tone down the tresses just a bit? This is food prep, after all.

      knitwoolybully its a cooking show, not a fashion one. why should she have to change her natural hair texture bc some people find it “distracting”? it’s just hair

      Curls are picky and must be left alone to do as they please. Her hair is beautiful, stop being pointlessly critical
