For example you wrote 7:15 1st stetch n fold, 7:30 2nd stretch n fold, etc. Is it ok to do it every 15 min instead of 30? Btw, I really like the way you do your inclusions with every stretch n fold instead of doing it at the end. Would that work for inclusions in any sourdough recipe if I were doing a chocolate sourdough recipe? That one calls for doing it when shaping the dough. Thanks
Yes! You can do 15 min apart stretch and folds. And yes you can do the other inclusions like that as well. Unless it’s something that will change the dough for instance cinnamon I would add at the end when shaping :) Thank you watching Hope it helps!
One more question- The ingredients have 100 g starter and then in the directions it says 8-10 am feed your starter (1 cup flour, 3/4 cup water and 50 grams of starter or the rest of your starter you had in the fridge). So are we talking about 2 separate starters or was there a mistake on the instructions? Thanks
No the starter you feed Once it doubles and active You take 100 g of that to make bread. The rest of the starter you put in fridge for next times to feed again and use :) Usually 1 feed will make two loaves for me and then I will feed it again.
oh no im so sorry about that! It could be a few different reasons why. I would need to hear your whole process. maybe your starter was more runny? or not as active? what kind of flour did you use? etc...

My loaf went flat when I dumped it out of my basket , why is that??? Also it seemed kinda wet , I couldn’t score it very well
