This recipe is working nicely for me but my dough seems to be much wetter than yours so I have a much harder time with the process from start to finish. Maybe it’s the humidity where I live..not sure. Do you think if I lower the hydration to 70% the loaf would still turn out ok? Thanks
Hi Mike, Yes! 70% hydration sourdough artisan bread is just as good as higher hydration sourdough bread. Add 315g water to make 70% hydration and squeeze pickled jalapeños peppers well with paper towels will also helps. Sharp cheddar cheese is more oily so using medium cheddar cheese would help as well.
