Incredibile come uno al livello di Crippa si definisca cuoco e non chef, io l’ho sempre sostenuto che l’umiltà è alla base della cucina professionale.
Il cuoco cucina piatti esistenti , lo chef crea piatti che non esistono, ci sono cuochi di altissimo livello, è solo una concezione popolare che il cuoco sia un lavoro umile, mentre lo chef la superstar, ma è un idea popolare sbagliata.

Just so wonderful. I was drooling watching.
I started cooking when I was 9 years old and even though I did not go to Culinary School I started cooking professionally at the age of 19, I was at a restaurant washing dishes and the other cooks and management realized I knew more about cooking than some of them that were twice my age. Anyway the main thing I want to say is that This Chef Inspires Me like I have not been Inspired in a Long Time. Especially with the Pasta, I have thought about doing fresh pasta but never have before now I think that I will take that Leap and Just Do It!!!

@@repetto74 Quello senz'altro, ma qui è un tutto contro tutti in ogni singola cosa: fila alle poste; per lavorare con clienti cui ci si dovrebbe venire incontro; in strada. Dubito, poi, che in tanti altri Paesi si decida di declassare la propria popolazione facendola diventare deliberatamente manodopera a basso costo, in tutto questo, non si reagisce un minimo. Poi, ovvio tu puoi metterla in questo piano perché di cose negative te ne son successe ben poche: io conoscevo un ragazzo che è stato ucciso e la polizia ha classificato la sua morte come suicidio. Poi, potrei continuare con questi esempi, ma tanto probabilmente paragoni l'Italia con gli Stati Uniti, i Paesi del Sud America, ed altri Paesi ex-sovietici, come l'Ungheria, la Russia, l'Ucraina: bei paragoni

He did....for every kg of flour, 5-6 eggs. It also looks and sounds like they might have thrown in some extra yolks, as the color is very yellow and he says they use a dough rich in yolks. Most Italians don't measure the amounts of flour/eggs (northern) or flour/water (southern) when making fresh pasta. You do it by feel, and the well method allows you to put in just the right amount of flour.

There are also some kind of Ravioli made, by tradition, with vegetables (specially in Liguria). However, these one require meat, it would make no sense to make them without meat as it would be like making apple pie without apples.

Buongiorno. I am a non-Italian who is a viewer of this channel and interested in Italian food.
I have heard that most pasta dishes that we know of were invented by poorer people, I have also learned that to make pasta dishes well it is best to use high quality ingredients since each dish has very few ingredients. To me, quality ingredients are expensive so how did the inventors of these dishes have access to the high quality versions? Is the standard/baseline quality of foods in Italy much higher than other places?

Short answer is generally yes, both in the past and today. But you also have to understand that when these dishes were made there was no mass distribution, no supermarkets, no things coming from 8000km away shipped in containers from around the globe. The ingredients that people had were readily available and often were cultivated or bred by the same people that ate them. This is true not just for Italy but for every western country, at least. There is no doubt that fresh ingredients, especially vegetables, are miles better than the standard which our world is now used to. Everyone can perceive this difference just by buying from their local farmer, if it exists. The problem is that it often doesn't exist, and to have that experience you have to pay a premium price - which by the way is often not entirely justified and often pumped by marketing and anti-scientific advertising, even here in Italy.
Btw, what you say is true: empirically, the fewer the ingredients, the higher quality they need to be to get a great dish. Italian cuisine in general uses few ingredients, so the focus is on quality.
These dishes were for special occasions, during the rest of the year they were eating vegetables, legumes, pasta without meat or with meat but poor meat like rabbit or chicken.

non sembrano difficili da fare però ci vuole un sacco di tempo, specie per fare 3 arrosti con le attrezzature casalinghe
Italia Squisita non mira a mostrare ricette che sono ogni volta ripetibili a casa. L'obbiettivo di questi video è semplicemente di far conoscere la cucina mondiale sia in Italia (dato gli Italiani hanno un'ignoranza assurda anche nella stessa cucina Italiana) che nel mondo.
In Piemonte li facciamo direttamente con l’ arrosto avanzato e il suo sugo il problema che a me non avanza mai l’arresto specialmente il sugo, se no quando li faccio da zero e come fanno molti ristoranti e famiglie prendi le carni le fai a cubetti, e le fai risolare molto bene nel burro una fai il soffritto sfumi tutto tutto con il vino e aggiungi il brodo fai andare il tutto per due ore alla fine aggiungi aromi e verdure separi la carne dalla salsa che farai ridurre per il sugo e con la carne fai il ripieno ….easy
Li preparo da sempre esattamente così, stessi identici tagli, e per gli arrosti mi ci vogliono al massimo due ore e mezza. Non mi "pare un sacco di tempo"...

Come mai lo chef fiammeggia il vino? L'alcol non evaporerebbe comunque durante la cottura?
Evidentemente è un bianco molto alcolico e probabilmente facendo grosse preparazioni e svuotando 3 litri di vino alla volta velocizzano la cottura flambando
La temperatura del forno, in modalita di cottura notturna e con valvola chiusa, non è sufficiente per far evaporare la componente alcolica del vino utilizzato (circa 13 gradi). Inoltre un eccesso di alcool residuo lascerebbe una nota amaricante troppo marcata.

Ha detto che usa più tuorli nel impasto ‘come da tradizione “del momento”.... non vuol dire niente, da tradizione si usa tutto l’uovo... come “moda del momento” si usano più tuorli perché fa figo che l’impasto sia più giallo. Non è tradizione perché la tradizione è del passato, quando c’era la fame e quindi vero rispetto per le materie prime: l’uovo lo usavano tutto. Giustamente
