      One of the really nice things about tortilla recipes without oil, or without yeast.... recipes with working with reduced or alternate ingredients... I love that there are so many affordable and/or food lifestyle alternatives to so many recipes. Working with special needs, or working with what you have. Weirdly this has become an obsession for me since Covid-19. A true source of entertainment and learning.

      I like to make "masa cakes" masa flour, water, heat on pan. Plantiful Kiki makes them and I'm a huge fan dipping them into soup or whatever. Soooo love your videos! Keep making more so I have something to look forward to with my morning coffee lolololol ☕😋😁

    I tried a flatbread “recipe” recently that was equal parts cooked mashed sweet potatoes/yams and flour (I used GF) with a pinch each of salt and baking powder. Flatten/roll out and cook in a medium heat pan on each side. (It was really more suggested steps than an actual recipe) I did need to add quite a bit more flour to roll/press them out without them sticking to everything. They were very good, and with almost half veggies, quite healthy.

    Mexican Vegetarian here, and I use this recipe (only makes about 6-8 tortillas) I cut it down from an original I can no longer find.
    1 1/4 cup flour
    1 tsp of salt
    1/2 tsp of baking powder
    2.5 tbsp of shortening
    Hot water
    1) mix dry ingredients
    2) add shortening and break it in with your fingers - until we’ll dispersed and mixed in with the flour
    3) add hot water a little at a time until your dough comes together into a ball. (If it feels too dry add water if too sticky add flour)
    4) rest it for 30minutes, you don’t HAVE to do this.
    5) make your smaller tortilla balls and begin rolling them out
    6) turn your griddle/pan to medium heat
    7) place your tortilla on there, you’ll see bubbles starting to form and the color begin to change, go ahead and flip it when this happens.
    8) cook the other side the whole way through, it will no longer be opaque and begin developing brown spots
    9) flip it back over to finish cooking the first side (until no longer opaque and similar brown spots start to form
    * cooking it this way, only flipping it twice, will ensure your tortillas aren’t tough- say the Mexican old wives 😊*

    I make that bread too! It’s so versatile and delicious! I will sometimes blend an apple and/or a carrot with water and use that as the liquid to make it a little healthier. You can also add nuts, seeds, raisins, etc..., and replace some of the flower with oats. I will have to try and make those tortillas next.

    I use frugal fit mom's bread recipe too! I've been delivering them to neighbors because I can't get over how good the loaves come out but I definitely shouldn't be eating that much bread alone, haha!

      @@flourishingmiranda when we were all very sick with Covid this winter ( the first time, when I was sick and the fam wasn't) I spoke to my neighbor over the fence - the next day, she honked and left a bag of bread on the fence post! Store-bought, but definitely so welcome! 💕👍(I do the shopping, the family wouldn't think of it until I would ask them, haha).

    You came up with some good ideas in this video. Wait a minute! I'm the one who told you about using bread dough for tortillas--not Pinterest!! And there is no reason to cook them in water. Just cook them on a hot pan like every Mexican tortilla lady does when making flour tortillas. The water idea seems way too involved and looks to yield a very stiff product. Also, if you put your freshly cooked tortillas between two tea towels while they cool and then store them in one of your used produce bags, they stay soft.

      You did tell me about them but I used a Pinterest recipe overall! I couldn’t go through all the comments to find yours and I didn’t screen shot it so I jumped on Pinterest and found this recipe and did it to what it said minus the sugar ☺️

    Miranda, inspiring us again. Thank you 🙏🏻 I made the bread recipe a little before pandemic hit when I first found Frugal Fit Mom and it’s delicious! I too used the two pan method, however, I have a Dutch oven now and plan to try that. Never thought of a naan or tortilla style though. You are so creative.

      The tortillas were a huge hit!!! I think you could make mini pizzas or different styles of hummus for them! Even use them on a side with a salad or soup!

    FYI...pizza joints make 50 lbs of flour into pizza crust with 1 pkt. Of yeast (1 Tablespoon) and proof in ref. overnight so you can make your weekly dough once with 1 pkt for up to 50 lbs of flour!

      I know this but there is no way I can make room or mix that 😂😂😂 I only have small mixing bowls!! I usually do 1/8 tsp of yeast for 3 loaves but when I make it for these types of videos I show the EXACT recipe so anyone new doesn’t have to experiment! They can try it for what it is☺️

    My husband and I decided to try making corn tortillas when we had more free time during the pandemic and I will never go back! They are super easy and sooooo delicious. A big bag of masa harina is like $2.50 and a cup of flour makes 6-8 tortillas so the value is amazing.

      @@flourishingmiranda so easy! We don't have a tortilla press. I cut a large ziploc bag to get two plastic sheets. Put a ball of dough between the pieces of plastic and then press them on the counter using a cutting board. Then you can peel the tortilla off the plastic sheet. Hopefully that makes sense.     My husband loves the bread recipe. I've made it several times over the past few weeks. This week, I had a bag of broccoli cuts which had really hard stalk pieces and were difficult to eat. I threw them into the blender with a little leftover riced cauliflower and little water, garlic powder and a spoonful of cheeze sauce and made a cream of broccoli soup. Topped with a little hot pepper sauce. Pretty good and used up those unsavory broccoli stalks. 😁

    You could try making tortillas using equal parts steamed potato and flour or sweet potato and flour, they come out real soft and much more pliable. You'll need more flour to roll out your tortillas so that the dough isn't sticky. Yours looks more like naan bread.

    FYI ~ you should look up the vegan biscuit recipe on the Pass the Plants website. Literally two ingredients (if using self rising flour, not counting water). They turn out fabulous!

    Love lentil tacos and sloppy Joe’s. I’m going to try adding zucchini. Chopped mushrooms is my usual add in with onions. I like that so many of your recipes I can just cook from my pantry. Your soup looks amazing. I make hacks on Three Sisters Soup all year long. Fall I love pintos, corn, and butternut squash, summer is corn, zucchini or yellow squash, and fresh green beans.

    Love your video...as always:). I have made lentil sloppy joes but I used just a can of manwich (but, oh!, the corn syrup!) -so have had in the back of my mind to try and create my own sauce.     I have got to do my meal plan and budget. I did really good last week, this week not so great at sticking to planned meals(work week ended up being a bit more intense) but I shall try again.       Yes I’ve made it a few times, I’ll try to dig up a video! But I use the exact same bread recipe but at 2-3 tbl of club soda it makes a really nice crunchy crust! I roll it out, pre bake it at 450’ until it’s my desired done than throw on the toppings and rebake

      I add 2-3 tbl of club soda to this same bread recipe and it adds a cruncher crust but you totally don’t have too!! Let the dough sit the same, rough it out back at 400 ish until desired bakeness add toppings and rebake!

    I noticed in this video you mentioned to bake bread at 400 for 30 min lid on and then 15 min lid off and it’s also listed in the recipe. I have been baking mine at 450 for that amount of time from your last bread recipe video. Have I been doing it wrong baking it at 450? Thanks so much.

    If you put a few drops of water in the pan and then cover it until the water burns off, your tortillas should stay softer. Also, at 65 tortillas a week, you may want to invest in a tortilla press.

    Great video and I liked how you used these foods in your extreme budget for the week :) I make my own corn tortillas and it is a labour of love but so worth it! You can make them as thick or as thin as you like and the flavour is so good. I find them more filling than the packaged kinds. I really wish I had a gas range....

    The taco soup looks awesome, I will try it! As I am Hungarian, I keep thinking whenever I watch your videos "Why is she not putting any paprika in the dishes?" :D:D:D But it's only bcs we put that like salt and pepper into basically everything. :D Then again, I know that would make the budget higher too. The breads you make always look soooo beautiful! Even though I eat gluten free, I have had luck in the past with making my own bread, my only issue is that right now my oven does not work, so I need to find money to have it repaired or change it and then I can get back to baking again...

      I put paprika - sweet or hot - in almost everything especially my potatoes and soups. Must be from my paternal half-Hungarian grandmother who did not really cook. But my mother used it in a lot of dishes she made.

    Lol..I'm a East Texan yes I do make my own tortillas which are a staple as well, as I just use about 2 cups all purpose flour, a large hot baked sweet potato(must be HOT) n a good pinch of pink salt and mead into a soft dough no water n no oil. I call them flatbread and I just shape into medium flat disc and cook till they bubble then flip to do the other side wa la done n tasty.

      @@flourishingmiranda yes it does when it's hot it binds the flour and the good pinch of salt gives that flavor as well, I've made them as a child and now as an adult. I make my wraps , tortillas with Asian sweet potatoes too. I will look forward to your Instagram post soon.

    I love your bread recipe, tastes so authentic like artisan bread. One question though, how do you prevent it from getting really hard. Mine as the days went on it turned really rock hard. I had it in a baggy sitting out.

    I have a question about Lentils. I know this particular video was using what you purchased, but will they take on flavor profiles when they're cooked? Can you add taco seasonings to the water when cooking them for instance, to give them more taco flavoring? Or can you cook them into your tomato sauce with Italian seasonings instead of water so they take on more of a spaghetti sauce flavor? Or perhaps add vegetable bouillon to the cooking water? Can you season them a bit in a pan to match the food profile of how you're using them?

      Yes they do! You can add any seasoning or flavoring and they really take it on well!!

      @@flourishingmiranda I have heard this. The only time I've had lentils previously was in soup. Last week I used it for the first time to reduce meat in a recipe, but next I'd like to try recipes to substitute meat all together... but I hear so many talk about how they don't really care for lentils I am a bit nervous about that one... but excited to try.

      My mom used to cook up lentils and brown rice, the plus them a little in her food processor to break them down a little bit, then add them to her spaghetti sauce as a meat replacement, and once it was all seasoned up and cooked together, I could only tell it was not ground meat because I’d seen her do it. If you thought it was meat sauce, you’d never know it was vegan!

      Yes there were breakfasts and bread is fickle. It’s all based on climate humidity means less water dry means more 🥰

    Looks like the bread you made is kind of a cross between naan and another popular Indian flatbread called roti (or chapati). Naan usually always has some sort of fat or dairy in it (yoghurt) and is leavened. Hard to find vegan ones at a restaurant but one of my favorite people Vegan Richa has lots of recipes for vegan naan.

    I’m half Hispanic and grew up warming tortillas on an open flame & continue to do so, lol! Thanks again for the time you take to give us all such great meal ideas. Do you ever eat tofu, or is it not in your dietary plan or just don’t like it? I love it and just wondered if you ever cook with it.

      I love tofu!!! But my stomach hates it!! I buy a brick here or there but every time I eat it I tell myself never again 😂

      I know I hate it so many good tofu recipes and whenever we go to restaurants it’s a big staple ingredient on the vegan menu!!

      @@flourishingmiranda many many moons ago when I was first trying to go vegan I bought tofu, had no clue how to cook with it, what the different textures meant, or about pressing out the water. So back then I found a recipe for scrambled tofu, I don’t even think I pressed it out, and only added salt & pepper, gave some to my teenage niece (she said it’s good auntie) it was soooo not good! 🤣
      Thank goodness I’ve learned how to cook with it now because I love it.

    I'm not on a plant based diet, but I love your meal ideas, which I usually use as lunch. I noticed that the boxes of pasta I have either have or may contain eggs. Is there a specific brand of noodles that you use that is egg free?

      I just get flour pastas that have 1 ingredient-- flour! Typically the store brand!!

      Items that say "may contain" just mean that they are made in the same factory/on the same equipment as other products that have those ingredients in them. It's more for those who have extreme allergies, and as a vegan I dont really pay attention to it lol.

      @@Cleosbitch I have an allergy to coconut so I just avoid items that say "may contain". I have a few vegan friends who are strict about animal products since they have been vegan for such a long time that it causes digestive issues.

      Considering most of the world eats way too little veggies I’m not concerned 😂😂😂 I eat my weight in veggies each week so I’m valid in my choices and for $1 a day you can’t buy that many veggies you won’t have enough starches to stretch your budget. It’s really JUST for ideas, it’s not bible as people should eat so I don’t need the veggie judgement comments

    when I cook I always make enough for dinner the next night. and lunch for me.Hubby is in construction so he always takes sandwiches etc. I try to only need to cook 3 times a week. :)

    I have a question. You have said in some videos you have issues with your stomach. Does oil sit on top and not digest? I have this issue. Anything fatty or oily I can't eat or I have to manually remove (vomit) chips or tortilla chips from stores are bad.

      No, I actually have issues with a lot of nuts, seeds, avocado, some soy products and such. Oils don't really bother me that I've noticed but I have never cooked with them. You might want to look into that because sometimes issues with straight oils is gallbladder i think

    Refrigeration does dry out bread. You would do better to place in a bag or a Tupperware and leave it in your pantry.

      I like it refrigerated plus all the blogs I’ve read is that it lasts longer in the fridge since there’s zero preservatives

      @@flourishingmiranda that is an added risk to not refrigerating unpreserved items, that's true. Rarely does fresh baked bread have to last that long in my large household, lol. Sadly, as you said though, refrigeration does dry bread out. Battles sometimes have to be picked. I just recently found out that tomatoes are one of those items that you're not suppose to refrigerate, too, and I have always refrigerated them.

    I have an electric stove so I'd have to cook the naan/tortillas in the oven. If I'm being honest, gas stove or not, I don't think I have the skill to cook these stovetop anyway. hehehe

    Your not making your tortillas right sorry to tell you I'm a Mexican you don't put water in the pan but that's the way you make them but your the first person that put water in the pan but I guess if it works for you then that's good
