Just like a lot of make up artist or make up influencers try to get you to “shop your stash” I think it’s about time I do that with all my food in my cupboards! Suzanne I love that you're going to do a use it up challenge!! I don't have too much to use up due to only really buying what we need each week but I love having a bit leftover in my cupboards and freezer just because 2020 has taught me to ALWAYS be prepare! I currently have some leftover frozen beans and lots or rice and pasta on hand! Enough to make a few emergency meals when needed!!

Love your recipes. May I suggest you saute your onions then add tomato paste and saute further for a minute to caramelise? This will intensify flavours further :)

I love dry beans in the IP now that I actually took the time to make them! You're right they are SO much more flavorful depending on the seasonings used! I'm glad I could showcase some high protein plant based meal ideas! For my husband he is not vegan and he wants higher protein so I try to share what works best for us in hopes it will help you all as well!
Great video, wonderful meals, especially the lentil shepards pie. However, if you sautee your veggies a bit before you add the stewed tomatoes to the soup you made, it will add another level of flavor. I am a soup fanatic and find doing it that way makes the soup more rich . Thanks for a great video!
The shepard’s pie was amazing! My husband said it’s his favorite. Don’t know if you’ve ever tried Dr.Pragers ground meat substitute but it’s so good, clean ingredients, and super versatile. I added that with the lentils, your husband would probably love it. I use it for tacos, sloppy joes etc…. Thanks so much for all of the fantastic ideas!!!

If you ever make too many and can't use them up fast enough, freeze them! I'm glad you found my video for some inspo but sometimes its hard to gage how much lentils and beans to make each week!
I have never seen anyone make a shepherd’s pie without meat or a taco soup with pasta! Nice job getting a variety of nutrients in. Try a magic eraser to eradicate the stains on your baking dish.
I love these recipes! Not only is it super healthy, super cheap, plant based but also creative. You repurposed so many ingredients in different recipes. I also like that you havr a Filipino brand soy sauce 😆

Well done! It's pretty easy to feed people nutritiously, deliciously, and heartily with very little money. We tried your bean sauce on pasta last week and enjoyed it. Actually, all the meals look delicious and I plan to try every one of your recipes. I'm thrilled that you learned the magic of baking bread and cooking dry beans. I've been cooking with real pantry ingredients for decades and love it. Try making fresh pasta next--fun and cheap). BUT...don't throw away your bean broth. It is nutrient-dense and adds way more flavor/nutrition than the water you added to almost every dish. We're two people now that our children are grown; these amounts would feed us about twice as many times as they fed you. With all that is left, we could probably eat on this for 3 weeks with just a bit more veg added on. Keep these videos coming, please. Bravo!!!
That’s amazing! We definitely had a lot of leftovers and enjoyed our meals a lot! I actually didn’t have very much bean broth left over- maybe 1/4 cup ish per lb and I didn’t save it knowing I was going to freeze them the always freeze way better for me without it but next time maybe I’ll keep that little bit around and throw it into the recipe!
You'll find that your soup, stews, sauces, etc will taste so much better if you sweat your onions down before adding your other ingredients. Even better, cut tge carrots a bit smaller, and sweat those down with the onions. Even better if you have celery. Those 3 together are your aromatics. Sweat them down with salt, and a little water or broth (just a little to help thrm cook in place of oil), until onions are translucent, and carrots and celery are cooked. You will be amazed by how much better your food tastes. Same thing with your lentils, or shepherd's pie. Always sweat those onions down first. You should also put your tomato paste in the pan, away from the onions, to cook the yomato paste. Never put raw onions in your recipes, always sweat them down first. You can look up Steam Frying onions to learn how to cook onions down without oil. Add your lentils after onions are cooked. ❤

Thank you! I have to admit I'm a very basic girl who could just eat plain pasta with a touch of sea salt so I have probably been guilty to this as well in many of my budget meal preps LOL! But I really tried to make these recipes fit the needs of everyone in the comments PLUS its never bad to bump up all the nutrients in your weekly meal when you're going really extreme with your budget!
I just found this video and really loved your budget friendly meal planning - great ideas! I doubt I'll ever be fully vegetarian, but I'm always looking for simple and budget friendly ways to add more plant-based meals into our week. I'll have to check into using nutritional yeast, I had no idea it would add a cheesy like flavor without the dairy. Also, when you mentioned that your digestive system does better with white pasta than whole grain pasta - my mom had that same thing her entire life but so many people wouldn't believe her and kept trying to get her to eat whole wheat this and brown rice that -- which she said felt like her insides were being scraped raw and caused frequent trips to the bathroom. I on the other hand am gluten intolerant so I would just substitute one of the high protein GF pastas that use quinoa, chickpeas, or lentils. Not as cheap but Trader Joe's has them at reasonable prices.
I get told constantly to eat brown rice and brown pasta! 😂 I know it’s “better for you” but it’s really tough on me- I have the same issues as your mom! Someone commented awhile back and told me they have the same issues and they can eat both when cold, I tried that and it was ok! But ya know I don’t always want cold rice or pasta! So I do use more white! And you don’t have to be plant based to enjoy any of these recipes! They’re all whole food plant based and you can take what you need out of the recipes! I try to share a balance so to give you all need ideas!
These look really good. I have a bag of lentils I have been waiting to cook. I need to get my rice cooker out and see how that might work with them. These are great!! I've been trying to find yummy and easy recipes to feed my family. I've been doing whole food plant based for 2 months. My family is learning all about beans, sweet potatoes and rice. I want all of us to eat the same so I stay sane!!

Your vegetable tomato soup was excellent! Made it for dinner tonight and it was the perfect dinner for a winter night. I did add a little Italian seasoning and it was perfection.
I made the kale and white bean soup. Instead of just using water I added better than bouillon (they have veggie!) and fresh garlic. AMAZING. I can't believe how little I spent on groceries and how much I got from it. Thank you for posting!

Broccoli pasta here I come!!! I have tons of fresh broccoli in fridge including steamed & also have frozen. Does it matter which I choose? If it’s all pre made as an “unformal” meal, would you say just warming in microwave works; or does it taste better with one overall bake in oven?
You can use either fresh or frozen broccoli! If you use fresh, I'd sauté it a bit in water in a skillet to soften it a bit before adding in the pasta! I think it taste better once its been in the oven because it soaks the cheezy sauce into the broccoli and pasta a bit more for added flavor however, you can defiantly skip that step! There are zero food rules here! You do what best works for you!
This is great. It will be a big help for my low buy year. I like to put Worcestershire sauce instead of soy sauce in my Sheppard’s Pie which I have made in a while so thanks😁
I’m glad it was helpful for you!! I don’t use Worcestershire since it’s not vegan and soy is the only alternative I can find that gives it the same “tang”. It’s such a unique flavor!!!
Worcestershire sauce is my fav I put it on everything lol.. can't u get a vegan one in the US?? there are a few different ones here in the UK @runningonplants
I have a dish that looked like yours too but I used steel wool and got it all cleaned up and it looks almost new! Great video! I’m going to try making my own beans in the instant pot as well as the soups!! Love @frugalfitmom too! Her bread recipe is a winner!!

Most of these budget meals do allow certain things from the pantry to use such as spices, flour n such. Just make what is your acceptable item to use from your Cupboard. I don't think the added Bread is wrong. Oh also that was a Beautiful Loaf of Bread. Very Healthy Challenge. Just needed some fruit. I like Fried Apples as it tastes like Hot Apple Pie with out the Crust, you can use most any Fruit.I am Gluten Free. I miss my Breads n Pastries with Regular Flours. Lol
I'm about to make the cheezy broccoli pasta for tomorrow but I made all the other recipes for my husband and I over the last 1.5 weeks (we had other leftovers and meals with family in between). Thank you for the inspiration! It was my first time to make the bean cheese sauce and it didn't smell very much like cheese to me... mostly vinegar/Dijon type smell but I followed your recipe for the amounts. Any tips? Btw I added italian seasoning, oregano, paprika, and red pepper flakes to the white bean soup for an "Italian sausage" flavor - we loved it the most! Especially paired with homemade bread!
I’m not crazy about brown rice or whole wheat pastas. I hear ya on your gut preferring the white version. I think because you eat so healthy that not always using whole wheat versions of things is absolutely fine. I agree about nooch as well, it had to grow on me. I like it much more now than when I first tried it for a mac & cheese recipe.

I will say- many people commented on a video this week and said they have the same issues and if they eat brown rice cold or the pasta cold it sits better with their stomach. I didn’t eat the pasta cold because that didn’t sound good 😂 but I did make a big batch of brown rice this week to eat cold for next week and if it sits better on my stomach! If not- white rice is always home to me!❤️
If you want to feel some intense satisfaction, make a paste of dish soap and baking soda, then use that with a rag on your baked-on glass pan. Gets rid of that thick, baked on grease so satisfyingly 😍

It sounds like you are VERY prepared!! Get to that meal prep! I have yet to find dry chickpeas at our stores so I may have to order some online because they're my fav!!
My house always has the stuff in the house to make either regular bread or sourdough bread. Which one I make (and I make bread a couple times a week) depends on which one I want on any given day when I am making bread. There's a 0% chance I will spend $2 for a single loaf of bread when for that same $2 I can make several loaves (and that includes the cost of the gas to run the oven).
Yes! And you know what it took me a really long time to venture into my own bread making and I’m so glad I did!!! And thank you for including about the cost of the oven, I had some people extremely judgy on the fact that if I’m trying to saving money the cost of turning on an oven doesn’t save but it does! It’s still so much cheaper!
@@flourishingmiranda As a general rule, if I am planning to have the oven on for some other purpose, I will also be making bread. Since the oven is already in use the cost comes out even cheaper than it would be if bread were the only thing I was making. But, I was raised by a child of the Depression so I've got frugal down pat and have been known to give lessons on saving money on food.
wow thanks for the great tips/recipes. Love your channel. I had a glass casserole like yours. Drove me crazy till one day I took a wet SOS pad to the glass and voila it was like new. Just a little warning if you press too hard it could make really small scratches but I didn't care looked so good after. Good luck!

Well done! It's pretty easy to feed people nutritiously, deliciously, and heartily with very little money. We tried your bean sauce on pasta last week and enjoyed it. Actually, all the meals look delicious and I plan to try every one of your recipes. I'm thrilled that you learned the magic of baking bread and cooking dry beans. I've been cooking with real pantry ingredients for decades and love it. Try making fresh pasta next--fun and cheap). BUT...don't throw away your bean broth. It is nutrient-dense and adds way more flavor/nutrition than the water you added to almost every dish. We're two people now that our children are grown; these amounts would feed us about twice as many times as they fed you. With all that is left, we could probably eat on this for 3 weeks with just a bit more veg added on. Keep these videos coming, please. Bravo!!!
That’s amazing! We definitely had a lot of leftovers and enjoyed our meals a lot! I actually didn’t have very much bean broth left over- maybe 1/4 cup ish per lb and I didn’t save it knowing I was going to freeze them the always freeze way better for me without it but next time maybe I’ll keep that little bit around and throw it into the recipe!
You'll find that your soup, stews, sauces, etc will taste so much better if you sweat your onions down before adding your other ingredients. Even better, cut tge carrots a bit smaller, and sweat those down with the onions. Even better if you have celery. Those 3 together are your aromatics. Sweat them down with salt, and a little water or broth (just a little to help thrm cook in place of oil), until onions are translucent, and carrots and celery are cooked. You will be amazed by how much better your food tastes.
Same thing with your lentils, or shepherd's pie. Always sweat those onions down first. You should also put your tomato paste in the pan, away from the onions, to cook the yomato paste. Never put raw onions in your recipes, always sweat them down first. You can look up Steam Frying onions to learn how to cook onions down without oil. Add your lentils after onions are cooked. ❤
I love this meal prep video. I have seen a lot of meal prep videos from other you tubers and they all look very bland and not always nutritious. All of your recipes look delicious and very healthy. Great job.
Thank you! I have to admit I'm a very basic girl who could just eat plain pasta with a touch of sea salt so I have probably been guilty to this as well in many of my budget meal preps LOL! But I really tried to make these recipes fit the needs of everyone in the comments PLUS its never bad to bump up all the nutrients in your weekly meal when you're going really extreme with your budget!

I just found this video and really loved your budget friendly meal planning - great ideas! I doubt I'll ever be fully vegetarian, but I'm always looking for simple and budget friendly ways to add more plant-based meals into our week. I'll have to check into using nutritional yeast, I had no idea it would add a cheesy like flavor without the dairy. Also, when you mentioned that your digestive system does better with white pasta than whole grain pasta - my mom had that same thing her entire life but so many people wouldn't believe her and kept trying to get her to eat whole wheat this and brown rice that -- which she said felt like her insides were being scraped raw and caused frequent trips to the bathroom. I on the other hand am gluten intolerant so I would just substitute one of the high protein GF pastas that use quinoa, chickpeas, or lentils. Not as cheap but Trader Joe's has them at reasonable prices.
I get told constantly to eat brown rice and brown pasta! 😂 I know it’s “better for you” but it’s really tough on me- I have the same issues as your mom! Someone commented awhile back and told me they have the same issues and they can eat both when cold, I tried that and it was ok! But ya know I don’t always want cold rice or pasta! So I do use more white!
And you don’t have to be plant based to enjoy any of these recipes! They’re all whole food plant based and you can take what you need out of the recipes! I try to share a balance so to give you all need ideas!

I made the kale and white bean soup. Instead of just using water I added better than bouillon (they have veggie!) and fresh garlic. AMAZING. I can't believe how little I spent on groceries and how much I got from it. Thank you for posting!

Broccoli pasta here I come!!! I have tons of fresh broccoli in fridge including steamed & also have frozen. Does it matter which I choose? If it’s all pre made as an “unformal” meal, would you say just warming in microwave works; or does it taste better with one overall bake in oven?
You can use either fresh or frozen broccoli! If you use fresh, I'd sauté it a bit in water in a skillet to soften it a bit before adding in the pasta! I think it taste better once its been in the oven because it soaks the cheezy sauce into the broccoli and pasta a bit more for added flavor however, you can defiantly skip that step! There are zero food rules here! You do what best works for you!

I’m glad it was helpful for you!! I don’t use Worcestershire since it’s not vegan and soy is the only alternative I can find that gives it the same “tang”. It’s such a unique flavor!!!
Worcestershire sauce is my fav I put it on everything lol.. can't u get a vegan one in the US?? there are a few different ones here in the UK @runningonplants

Most of these budget meals do allow certain things from the pantry to use such as spices, flour n such. Just make what is your acceptable item to use from your Cupboard. I don't think the added Bread is wrong. Oh also that was a Beautiful Loaf of Bread. Very Healthy Challenge. Just needed some fruit. I like Fried Apples as it tastes like Hot Apple Pie with out the Crust, you can use most any Fruit.I am Gluten Free. I miss my Breads n Pastries with Regular Flours. Lol

I'm about to make the cheezy broccoli pasta for tomorrow but I made all the other recipes for my husband and I over the last 1.5 weeks (we had other leftovers and meals with family in between). Thank you for the inspiration! It was my first time to make the bean cheese sauce and it didn't smell very much like cheese to me... mostly vinegar/Dijon type smell but I followed your recipe for the amounts. Any tips?
Btw I added italian seasoning, oregano, paprika, and red pepper flakes to the white bean soup for an "Italian sausage" flavor - we loved it the most! Especially paired with homemade bread!
I’m not crazy about brown rice or whole wheat pastas. I hear ya on your gut preferring the white version. I think because you eat so healthy that not always using whole wheat versions of things is absolutely fine.
I agree about nooch as well, it had to grow on me. I like it much more now than when I first tried it for a mac & cheese recipe.

I will say- many people commented on a video this week and said they have the same issues and if they eat brown rice cold or the pasta cold it sits better with their stomach. I didn’t eat the pasta cold because that didn’t sound good 😂 but I did make a big batch of brown rice this week to eat cold for next week and if it sits better on my stomach! If not- white rice is always home to me!❤️

If you want to feel some intense satisfaction, make a paste of dish soap and baking soda, then use that with a rag on your baked-on glass pan. Gets rid of that thick, baked on grease so satisfyingly 😍
I used an SOS pad with baking soda and you’re SO RIGHT! It’s so satisfying 😂😂😂 it’s sparkles like brand new!

Yesss all of which are my favs! When I first went vegan I had chickpeas 2xs a day for many many weeks 😂 all made different ways! I just love them!
My house always has the stuff in the house to make either regular bread or sourdough bread. Which one I make (and I make bread a couple times a week) depends on which one I want on any given day when I am making bread. There's a 0% chance I will spend $2 for a single loaf of bread when for that same $2 I can make several loaves (and that includes the cost of the gas to run the oven).
Yes! And you know what it took me a really long time to venture into my own bread making and I’m so glad I did!!! And thank you for including about the cost of the oven, I had some people extremely judgy on the fact that if I’m trying to saving money the cost of turning on an oven doesn’t save but it does! It’s still so much cheaper!
@@flourishingmiranda As a general rule, if I am planning to have the oven on for some other purpose, I will also be making bread. Since the oven is already in use the cost comes out even cheaper than it would be if bread were the only thing I was making. But, I was raised by a child of the Depression so I've got frugal down pat and have been known to give lessons on saving money on food.
wow thanks for the great tips/recipes. Love your channel. I had a glass casserole like yours. Drove me crazy till one day I took a wet SOS pad to the glass and voila it was like new. Just a little warning if you press too hard it could make really small scratches but I didn't care looked so good after. Good luck!
