Your videos are an explosion of ideas, I actually freeze up and can't decide what to make, for a single person, I tried an extreme budget meal week and I could not even finish the food in one week I had to throw some out, the food is very filling to me, almost kind of disturbs me how much money I can save (unless I'm buying expensive fruits and berries) following these EXTREMELY FILLING budget meal plans.
Something you can do is “massage” the dressing into the kale... literally put the dressing over the kale and then use your hands to massage it. It allows you to still eat it raw but it helps to break down some of the rough fibers, making it more enjoyable to eat. You can also massage kale dry, or without any dressing. Your hubby might enjoy it that way.
Awesome video! I go to a co-op and get an entire cart full of fresh produce for $10-$20. It’s a game changer since we are trying to save to buy a home and get out of debt.

We really are very blessed by the prices here! I always thought before we moved here certain prices of things like groceries and essentials would cost more since it’s all brought in, and we basically live in the middle of nowhere but that’s not the case. It seems there’s low competition so low costs of living overall!

In England you can buy mesh bags super cheap so that when you buy loose fruit veg and grains you put them in your own bags so that you don't use plastic. Wash and reuse. You should definitely check it out especially as you promote frugality and I hope looking after the planet. Even if you can't get these bags easily just don't use plastic bags x
I already own them unfortunately because of this pandemic we aren’t allowed to use them at our local stores they have signs up in the bulk and produce areas to only use their store bags to keep things more sanitary. And just as a reminder since I’ve said this in countless videos and I guess will have to continue to say it Incase anyone is new, I reuse the plastic bags to clean up after my dogs ❤️ they aren’t going to waste ever I reuse reduce recycle as much as I can!

I like the avocado dressing for the pasta salad you made. I almost always put chopped avocado in mine because of the healthy fat and fiber but I never thought to put it in the dressing. Game changer!
Yes! I get this kale salad from a little restaurant here and I love it and wanted to include more kale recipes but I know some times it can be a touch hard on people’s tummy’s!
If you haven’t tried yet, massage the kale before putting it together. My husband will eat kale if it’s massaged...which is good since I planted 6 kale plants outside and they are overproducers 🤣

That chocolate hummus sounds amazing. I'm going to make some this week. That pasta salad looks really good too. Gluten free pasta is a little more expensive but totally worth it sometimes. Every recipe looks like a winner here. I love both lentils and split peas. I can't do a lot of white potatoes so the shepherds pie with sweet potatoes is something that I will definitely be trying.

Congratulations on the debt paying off! 2020 was a huge year for me in terms of knocking out some of my student loan debt, and it feels good 🙌🏼 I have some apples to use up so I’m going to make some crock pot apples today! Such a great idea, especially as it’s still pretty chilly in the Chicagoland area.
I’m so glad for you too!!! 2020 helped us realize that with things closed and not much going on we could take the opportunity to really push and I’m glad we did and I bet you are as well because as you know it feels a huge weight has been lifted!

Great video and would always be happy to see another like this. I’ve seen the oatmeal cookies usually done with banana, and I’ve seen with pumpkin or sweet potato - but this is the first time with apples. I don’t have a food processor but it makes me wonder if I could do cookies with whole oats, applesauce and maple syrup.

I wound love to make that pie for my mom. She can’t have tomatoes. Can you think of a substitute suggestion I can use? Also could you type out all of the ingredients as well as how and high and how long you bakes it?
Can she eat butternut squash? We’ve used that before in place of tomatoes but we also did it with regular potatoes that time! Rough estimates for ingredients: -2 large sweets mashed -1 cup spilt peas cooked -2 medium onion sautéed -1 head of kale chopped *I cooked all my ingredients minus my sweet potatoes in a large pot until tender with a touch of sea salt. Added to a baking dish topped with mashed sweet potatoes and baked at 450 for 25-30 minutes

I can't eat a lot of avocado but a little here and there so I wanted to try something new! My husband loves avocado and this worked out really well!

Usually about and hour and a half, but cook them until they are soft to your liking!
