Went to the Manitowoc factory training seminar April 8 class paid for it out of my own pocket was well worth every penny I spent I like to work and people who care about the industry factory personnel mentioned this industry cant get enough qualified people like one fellow mentioned because too many lazy and want to cut corners but you lazy ones keep up the good work it means more for me my father said when it comes to work love what you do and do what you love my hats off to all the guys commenting and to you Chris HVACR,Mr Pettinato and the fellow from Nor Cal I love your videos keeps me interested still at my age

I always tell people that you should see(if visible from dining room/sales floor) an ice machine taken apart and cleaned or you should stop eating at that establishment. Some I've seen are freaking disgusting.
Too True. I had a friend that used to own a restaurant here in my country, and his establishment was the Only place I would dare eat at due to him being the most full of crap person I have ever seen when it came to hygiene. Besides the daily "Sterilising" of the entire place, every other day he would have ALL his staff (Himself included, and myself on the odd occasion) cleaning extractors, walk in freezers, shelves for glasses, canned goods (Cream, olives etc), dispatch and delivery, main office, and even under the tables picking off gum that the patrons stuck onto the bottom of the tables. Needless to say, the staff and waiters did not love him very much, but he more than made up for it with wages and incentives 🤷🤷🤷
When I was a wee lad back in the day - 1990's - I worked in a commercial kitchen than didn't like to spend money on anything. The ice machine stopped making ice; the water inlet was controlled by a float valve, and I found the float, um, floating. A pin had vanished out of its linkage, so it fell off, and the valve was running new water into the machine full-bore. Unwisely, I told the boss I could jury-rig it for now with a paperclip, to reconnect the linkage and get the inlet valve working again, but it would be very much a temporary fix and they needed to get the correct part. He said go ahead, and I did, and it worked. I don't remember how many days or weeks it lasted, but it didn't take long for that paperclip to rust through and the float to fall off again. This, of course, was my fault - "What do you mean it's broken again? You said you could fix it!" Good times.
I should have thought of that. 8-) I also should have burned all the ice and searched more carefully for that pin - theoretically, it might have gone through the water pump, and ended up in an ice cube, and then in the bin, and then in a kid's small intestine.

Fyi : For the New Guys Out there --- if u Have Heavy scale on The Plastic Parts of the ice machine. You CAN get Rid of EVERY spec of it. This is ONLY for Plastic parts ---- You can use Full strength ice machine cleaner or Full strength nickel safe on Plastic only ! You put it in a Spray bottle , Label it Full Strength , Then Spray it on ANY scale Wait a Few seconds and it will start eating / Foaming away at the scale. Lightscrub with a Stiff brush after 1 minute , Then Keep spraying on area till gone. , SPRAY Wait a Few minutes till foaming stops , then light scrub , Repeat , SPRAY till foaming starts, wait till it stops , then light scrub , Repeat. WEAR Eye Protection !!! ice machine cleaner is acid. ! Let the ice Machine cleaner do the Hard Work. not the scrubbing. Let the acid loosen the scale , then wipe it away. Spray , then wipe it away Repeat. The Scale neutralizes the acid , Thats why You Have to continually Add More ice machine cleaner / acid to the scale.
Reason why I stop having ice from fountain drinks. I don't trust the ice out there unless I cleaned the machine myself. I've seen all the nasty ones out there.

My first job in the trade was an ice machine service tech and damn, nobody takes maintenance seriously. Damn near every machine was filthy. Cleanings would take me roughly 4 hours on a good day.

I remember when I used to work at 7-Eleven Corp stores, the ice machine would be cleaned every month like clock work. Now I see why. If they had some kinda water treatment to pull that calcium out before hand, that likely would have stopped this machine from getting as bad as it was (unless they did and that wasn't being maintained as well). I can't believe they were using that machine for customers.

Unless I've been cleaning their ice machines or someone I know has, then I typically avoid either the restaurant or their ice in general. That has to be one of the nastiest areas in bars/kitchen areas and they love to neglect them until they stop working.

It should be mandatory to deep clean these ice machines every month, and if the staff is not able to do it pay a tech like this guy to come do it. Surprised we dont have more people getting sick from dirty machines.

I chose not to get into the refrigeration and ice makers. Just because of restaurant conditions and filth. Not to mention they're Pennywise and a dollar short.

We have a refrigeration company that comes out to clean our Hoshizaki Ice Machines but sad to say, they never come close to looking like the machines you service. To be honest, its hard to tell that they were ever cleaned to begin with & my employer keeps paying them! They are always looking for the cheapest price & like we all know you get what you pay for. I think these guys just clean the filter element & cycle chemicals through the machine & call it done. I always find missing screws, dirt, dust & the auger/gear motor assembly always looks like it was been sitting at the bottom of the ocean for a few years due to all the scale buildup on the housing. I wish we had the manpower & staffing so we could do our own or be able to hire your company to perform our ice machine PM's.
@T.Overton0413 When I perform a PM, you can tell someone has been there. Yes, things are not always perfect but you can see the results. Not much of a attempt is being made to clean the machines & they do not get taken apart by our vendors. I'm not too concerned with the hoses, its the lack of overall effort to attempt to properly clean the machine.
@T.Overton0413 The management here is our problem. I am located in San Diego, CA. They do not want to pay for the best. The problem is cheap labor always costs you 3 times as much in the end when they have to keep coming back.

I just got done with a Manitowoc Indigo non-working. The WLP tube was filled with water and had 38 errors in the log. Replaced the WLP. Working fantastic, but now the contactor is super loud. I can't remember if it was that loud before. Any recommendations?

Watching this again I just noticed the water filter cartridges (OptiPure(R)) on the wall. Wondering the change schedule if they feed the ice machines.....? If left unchanged could recontaminate the machines. Also a guy told me on some systems draining a sprinkler system can sometimes screw up downstream systems. GREAT Vids!
This is why government and health departments and inspectors exist. You can't trust the "free market" to enforce hygiene regulations. People must do the inspections. Regularly.
Any restaurant that's too cheap to properly clean and maintain something as critical as an ice machine is probably not a restaurant I want to be eating at (who knows where else they are cutting corners)
0:04 "Gnarly" A VERY appropriate word to use on something that dispenses something humans consume, as to how "Filthy" it is. Here in my country, we use "Siff" which loosely translated means either "Putrid" or if you had to break it down to an actual definition could be summed up as "Disgustingly filthy, slimy, gross and growing foreign bodies that should not be within 1KM of said "Siff" unit" However, I personally think "Gnarly" encompasses the above statement quite adequately, and use it when I find something that Disturbs my psyche in such a way that I land up having nightmares thinking about what goes on behind the scenes in hotels and restaurants 👍👍👍
Surfaces that have calcifications -- what about spraying them initially with a slightly diluted mixture of white vinegar? The acid in the vinegar should dissolve the calcifications, making the surfaces easier to was down with a plain water spray - perhaps with your proprietary cleaners.

Just wait until you realize no one cleans the lines or diffusers in soda fountain machines and they are regularly moldy. I worked at a gas station in NorCal that never cleaned that stuff until me & this other guy (we got hired at the same time) started doing it. Taste is night and day and we had many compliments. A lot of places dont take the time to make sure there is a proper co2 to syrup ratio either.

Ideally, how often should an ice maker (any brand, not just Manitowoc) be cleaned out, balancing practicality and other factors like mineral content in water supplies, etc... ?
So I have a customer that has a bakery, their ice machine is extremely difficult to keep clean. Have you ever used those UV kits? Or should I recommend more frequent cleaning scheduling?
Uv kits help a little bit but in a bakery they will likely require cleaning every 2-3 months to prevent really bad slime build up. Something about the yeast in the air causes slime buildup.

That acoustic probe is a really pain in the neck i tried soaking one before and i ended have trouble with it the cleaner got inside the probe causing damage to the mic..
I have a Manitowoc that's over filling after a good completed cycle/s. I have cleaned it thoroughly with Manitowoc cleaner and sanitzed it as well with Manitowoc sanitizing solution. It runs properly till I leave I get a call back that it keeps over filling. Basically the entire time that I'm there It runs and the customer says it runs a couple of hours and then it starts overflowing. I have cleaned it twice already. I have replaced the water level probe and the wire harness for the probe. Still same issue. Would you happen to know why? Great video btw 👍 the 2nd time I cleaned it I followed your steps in this video except I used Manitowoc brand cleaners.
I replaced that as well. Yes it's an indigo. Model IY1106A-261 Manitowoc. So far what has been done to it has been 2 cleans, replaced water inlet, water probe and wire probe harness. On the display when I go to inputs and check when "water high and low" touch water, the low stays on "no" even after it's touching water. And it only changes to "yes" when water high touches water but water high sometimes stays stuck on no causing the over flow. I have called Manitowoc and explained the same but they have no answer and will send me a board hopefully next week.
I hope it's the board. Previous guy was the one who replaced the inlet valve and the thickness probe. He couldn't fix it. I came in after and have replaced water probe and harness and next board. I did notice that the previous guy put his vice grips on the water level probe to bring it down and have the water shut off earlier than what it would shut off if it was in the normal position where it clips to hold it in place. I'm assuming Reason he did that was because the display takes like 8 seconds to change from "no" to "yes" and shut off the inlet. It seems to be working that way so I left it like that too. Thing is, when I leave after a couple of cycles it starts overflowing and then I get the call. Today I waited 2 hours just watching the machine operate and it seemed like it's fine. Hopefully it stays that way. I will still replace the board to make sure and leave it as if it came out from the manufacturer

I've tried that viper nickle safe and it is pretty damn good, not as good as they advertise but better than nu calgon nickle safe. It's too bad manitowoc never figured it out like hoshizaki to where you can use lime-a-way or something wicked. Hell now a days with new hoshizakis you can't use nickle safe.

Fyi : For the New Guys Out there --- if u Have Heavy scale on The Plastic Parts of the ice machine. You CAN get Rid of EVERY spec of it. This is ONLY for Plastic parts ---- You can use Full strength ice machine cleaner or Full strength nickel safe on Plastic only ! You put it in a Spray bottle , Label it Full Strength , Then Spray it on ANY scale Wait a Few seconds and it will start eating / Foaming away at the scale. Lightscrub with a Stiff brush after 1 minute , Then Keep spraying on area till gone. , SPRAY Wait a Few minutes till foaming stops , then light scrub , Repeat , SPRAY till foaming starts, wait till it stops , then light scrub , Repeat. WEAR Eye Protection !!! ice machine cleaner is acid. ! Let the ice Machine cleaner do the Hard Work. not the scrubbing. Let the acid loosen the scale , then wipe it away. Spray , then wipe it away Repeat. The Scale neutralizes the acid , Thats why You Have to continually Add More ice machine cleaner / acid to the scale.

My first job in the trade was an ice machine service tech and damn, nobody takes maintenance seriously. Damn near every machine was filthy. Cleanings would take me roughly 4 hours on a good day.

I remember when I used to work at 7-Eleven Corp stores, the ice machine would be cleaned every month like clock work. Now I see why. If they had some kinda water treatment to pull that calcium out before hand, that likely would have stopped this machine from getting as bad as it was (unless they did and that wasn't being maintained as well). I can't believe they were using that machine for customers.

Unless I've been cleaning their ice machines or someone I know has, then I typically avoid either the restaurant or their ice in general. That has to be one of the nastiest areas in bars/kitchen areas and they love to neglect them until they stop working.

It should be mandatory to deep clean these ice machines every month, and if the staff is not able to do it pay a tech like this guy to come do it. Surprised we dont have more people getting sick from dirty machines.

I have a Manitowoc Indigo machine. It took me a good 2 hours to throughly clean the machine.
I chose not to get into the refrigeration and ice makers. Just because of restaurant conditions and filth. Not to mention they're Pennywise and a dollar short.

We have a refrigeration company that comes out to clean our Hoshizaki Ice Machines but sad to say, they never come close to looking like the machines you service. To be honest, its hard to tell that they were ever cleaned to begin with & my employer keeps paying them! They are always looking for the cheapest price & like we all know you get what you pay for. I think these guys just clean the filter element & cycle chemicals through the machine & call it done. I always find missing screws, dirt, dust & the auger/gear motor assembly always looks like it was been sitting at the bottom of the ocean for a few years due to all the scale buildup on the housing. I wish we had the manpower & staffing so we could do our own or be able to hire your company to perform our ice machine PM's.
@T.Overton0413 When I perform a PM, you can tell someone has been there. Yes, things are not always perfect but you can see the results. Not much of a attempt is being made to clean the machines & they do not get taken apart by our vendors. I'm not too concerned with the hoses, its the lack of overall effort to attempt to properly clean the machine.
@T.Overton0413 The management here is our problem. I am located in San Diego, CA. They do not want to pay for the best. The problem is cheap labor always costs you 3 times as much in the end when they have to keep coming back.
I use same method. I also throw all the screws in the nickel safe while I am cleaning all the other shit. I love cleaning ice machines.

I just got done with a Manitowoc Indigo non-working. The WLP tube was filled with water and had 38 errors in the log. Replaced the WLP. Working fantastic, but now the contactor is super loud. I can't remember if it was that loud before. Any recommendations?

Watching this again I just noticed the water filter cartridges (OptiPure(R)) on the wall. Wondering the change schedule if they feed the ice machines.....? If left unchanged could recontaminate the machines. Also a guy told me on some systems draining a sprinkler system can sometimes screw up downstream systems. GREAT Vids!
This is why government and health departments and inspectors exist. You can't trust the "free market" to enforce hygiene regulations. People must do the inspections. Regularly.
Any restaurant that's too cheap to properly clean and maintain something as critical as an ice machine is probably not a restaurant I want to be eating at (who knows where else they are cutting corners)

Here in my country, we use "Siff" which loosely translated means either "Putrid" or if you had to break it down to an actual definition could be summed up as "Disgustingly filthy, slimy, gross and growing foreign bodies that should not be within 1KM of said "Siff" unit"
However, I personally think "Gnarly" encompasses the above statement quite adequately, and use it when I find something that Disturbs my psyche in such a way that I land up having nightmares thinking about what goes on behind the scenes in hotels and restaurants

Surfaces that have calcifications -- what about spraying them initially with a slightly diluted mixture of white vinegar? The acid in the vinegar should dissolve the calcifications, making the surfaces easier to was down with a plain water spray - perhaps with your proprietary cleaners.

Just wait until you realize no one cleans the lines or diffusers in soda fountain machines and they are regularly moldy.
I worked at a gas station in NorCal that never cleaned that stuff until me & this other guy (we got hired at the same time) started doing it. Taste is night and day and we had many compliments. A lot of places dont take the time to make sure there is a proper co2 to syrup ratio either.
I may not ever get ice in a drink at a restaurant again. Those ice machines were filthy. YUK

So I have a customer that has a bakery, their ice machine is extremely difficult to keep clean. Have you ever used those UV kits? Or should I recommend more frequent cleaning scheduling?
Uv kits help a little bit but in a bakery they will likely require cleaning every 2-3 months to prevent really bad slime build up. Something about the yeast in the air causes slime buildup.

That acoustic probe is a really pain in the neck i tried soaking one before and i ended have trouble with it the cleaner got inside the probe causing damage to the mic..
when there is debris laying under the sink in plain site you can just imagine what the rest will look like
I have a Manitowoc that's over filling after a good completed cycle/s. I have cleaned it thoroughly with Manitowoc cleaner and sanitzed it as well with Manitowoc sanitizing solution. It runs properly till I leave I get a call back that it keeps over filling. Basically the entire time that I'm there It runs and the customer says it runs a couple of hours and then it starts overflowing. I have cleaned it twice already. I have replaced the water level probe and the wire harness for the probe. Still same issue. Would you happen to know why? Great video btw 👍 the 2nd time I cleaned it I followed your steps in this video except I used Manitowoc brand cleaners.
The water inlet valve might be sticking open, is the machine an indigo model?
I replaced that as well. Yes it's an indigo. Model IY1106A-261 Manitowoc. So far what has been done to it has been 2 cleans, replaced water inlet, water probe and wire probe harness. On the display when I go to inputs and check when "water high and low" touch water, the low stays on "no" even after it's touching water. And it only changes to "yes" when water high touches water but water high sometimes stays stuck on no causing the over flow. I have called Manitowoc and explained the same but they have no answer and will send me a board hopefully next week.

I hope it's the board. Previous guy was the one who replaced the inlet valve and the thickness probe. He couldn't fix it. I came in after and have replaced water probe and harness and next board. I did notice that the previous guy put his vice grips on the water level probe to bring it down and have the water shut off earlier than what it would shut off if it was in the normal position where it clips to hold it in place. I'm assuming Reason he did that was because the display takes like 8 seconds to change from "no" to "yes" and shut off the inlet. It seems to be working that way so I left it like that too. Thing is, when I leave after a couple of cycles it starts overflowing and then I get the call. Today I waited 2 hours just watching the machine operate and it seemed like it's fine. Hopefully it stays that way. I will still replace the board to make sure and leave it as if it came out from the manufacturer

I've tried that viper nickle safe and it is pretty damn good, not as good as they advertise but better than nu calgon nickle safe. It's too bad manitowoc never figured it out like hoshizaki to where you can use lime-a-way or something wicked. Hell now a days with new hoshizakis you can't use nickle safe.
