  • This was a service call on some Manitowoc Ice Machines with low production. Right off the bat I found that the machines were extremely dirty, the left machine had bad evap sensors and the right machine had a plugged up drain. After solving all those issues I found that both machines needed new thickness sensors and water level probes. We got everything taken care of and the machines are now working properly again.

    It should be a legal requirement for machinery like this to be well maintained seeing as it's being used to produce food-grade consumables. Those machines were naaaaasty!!

      In Denmark and i guess most of Europe they would get a huge fine for shit like that if our Food inspection saw that. Heck, they might even get shut down for a period or completely if things like these repeats themselves.
      When it comes to food safety America seems like a third world country sometimes ;-( Don't they risk some huuuge lawsuits over there if anyone gets ill?

      Registered Sanitarian in Arizona. The ice machines are inspected as part of an inspection and fines can be issued or the business closed until fixed if warranted.

      @Kilo Byte Butt hurt much? :-p At least we have some form of inspection... But sure no problems in the US because you have no inspection to tell if there is a problem LOL! Here a butcher fx has to go through extensive control twice every year and everyone working with foods needs to have education in food safety/hygiene, they need to keep detailed logs of cleaning rutines, temperatures during the whole process etc. - and if inspection found anything like in this vid., they would be shut down asap and would get huge fines.
      Sorry, but despite not being perfect it is still miles better here. And YES the US is still close to being a third world country when it comes to food safety and general hygiene...

      heh. the state elevator inspector for a specific area from 2010 to 2014 (and probably earlier since i wasn't there at the time, but the inspection sheet said 2008.) just never bothered to even come check elevators in several buildings i worked at during that time period.
      some government workers will just let the sites they think they can get away with not going to slide as much as possible, and others will just not do anything at all.

      Health Inspectors just check the bin, not the rack. They wouldn't see this unless there was debris in the ice, which I'm kind of surprised there wasn't. This is one nasty ice machine...

    When I first started working at pub I was instructed to let the ice machine drain on a Sunday night and then just turn it back on again on Monday evening. As soon as I was trusted enough to be given a set of keys the first thing I did was go in on Monday morning and strip the ice machine down. It was not a nice sight, or smell. My boss responded to my actions by suggesting the staff pour a glass of line cleaner through the machine once a week rather than properly cleaning it. Like the 'mug' I am, I told them I'd deal with it and that became another unpaid job added to my workload. There was no way I was going to let anyone use beer line cleaner in the ice machine.

      Rule One: Inventory the customer wants
      Rule Two: Clean Beer Lines and Ice Machines
      Rule Three: Clean glasses to serve them in
      Rule *ZERO* : Responsible, competant staff to ensure rules one through through three actually get done.
      Get them all or don't bother.

      all the machines are nasty employees are never trained in how to break these machines down for cleaning. I worked at a place that had to replace like 10 ice cream machines because the maggots where so bad from spills inside the machines they were getting into the ice cream

      The funny thing is... even with how nasty it was, it's not really all that unhealthy. A healthy person with a healthy digestive track will never realise they eat dirty food several times a week. Our bodies are really good at protecting us from this kind of thing.
      Children, older people and those with compromised immune systems... well, those are the folks this kind of thing might eventually hurt.

    Never seen anything about hvac and know next to nothing about it, but for whatever reason I’m glad it’s on my recommended cause this is far more entertaining than almost everything i normally watch

    I work for a large restaurant chain that actually has technicians on-site and we're scheduled to do monthly cleanings on our ice machines. The models I see most frequently are Manitowocs like you show in this video, and this is much more thorough (and nastier) than the machines I'm used to seeing. Thanks for putting this out there, It's super instructive! My ice maker is already kept clean, but this gave me a few points to check I wasn't already aware of.

    Believe or not a majority of the time when people are violently ill from a restaurant it’s because of the ice machine is not properly taken care of. It’s pretty amazing how much bacteria will build up inside of one. That most of the restaurants I take care of I will thoroughly clean and sanitize the ice machines at least twice a year. And I always test the ice before I give it the OK. My sense of taste and smell is sharp like a bloodhound. 👍🏻

      That and the soda lines are never cleaned or replaced... same with the nozzles sometimes. Also draining pipes are not properly maintained, may not cause food poisoning but they stink to high heaven, putting bleach down there doesn’t work either. Underneath kitchen hardware needs to be cleaned and polished atleast once a month, rarely done... I could go on and on, this is experience from 4 different restaurants 3 are large chains.

      na nu - What I really hate I seen one guys they Were working with the beer brewing taps and they were purging the lines into an air conditioner condensate drain pan causing massive amounts of crap to build up there by clogging my drain and making me look bad.

    I'm always fighting the 'Time' fight. The company says "Hurry Up" and your need to do the job the correct way says, correct the incorrect and clean, etc., then move to your repairs i.e. faulty components etc. This dilemma is true on all types of equipment. One thing I got from this video is, being able to work for yourself or someone that values a job done well is a blessing. Also that your control pad data can give you valuable insights if you know how to interpret the values. Thanks, once again it's been a pleasure.

    I have installed/serviced several hundreds of Manitowoc units and I love them. They will still work even though they have been neglected and abused. Once they shut down, all they usually need is a good cleaning and they are good to go. I love 'em.

    Hey. I just installed a smaller manitowoc machine. I used pvc for the drain for simplicity. Water was dumping out the back, and found a hose disconnected inside. Was a brand new machine!

    I have a lot of chain restaurant accounts that we have maintenance contracts with. We include the cleaning of the ice machines as part of the contract. I won't do a contract that does not include it. If you don't, and some one gets sick, the blame seems to ALWAYS fall back on the hvac contractor.

    Nice! You clearly take pride in your work! This is one of those 'hidden' jobs that no one thinks about, yet if we suddenly had no ice machines, it would be VERY noticeable and not good.

    I break mine down and clean it before I run it through a cleaning and do a clean cycle and sanitizer cycle after I am done. Great video.

    I find some of the coolest plants and animals in ice machines lol, sometimes it's a pink fungus that grows a little tree like a sea anemone..

      It's Iron bacteria. It's present in iron rich water.

      You get equally cool stuff beneath one of those 1hr photo machines. At least, when I last worked at one 20-something years ago. The developer chemicals would leak into a drip pan below the machine, and over time, form into gorgeous, scintillating, crystals. I was always kind of reluctant to empty it. :P

      Seen those anywhere machines are close to prep areas making yeast rolls or bread of sometype. Blew my mind the first time i seen this, i blame them for all my kids defects and shortcomings. Cant win them all.

    Man this is taking me back watching you clean this ice machine. Manitowoc ice-o-matic and I can't remember the names but I know there was a few others that I had to clean as well. A good secret weapon is a toilet brush.

    That's really gross. Unfortunately there's many ice machine like that. Most common problem that I work on ice machine is half job clean , also nobody wash the sensors and drains in detailed. I did learning something from your work. Thank you for video big thumbs up.

    Another great video on ice machines! One thing I learned about ice machines this week was go to the manufacturers web site & download their service manuals. I cant believe the time I spent struggling & trying to learn everything on my own. These manuals (at least the Hoshizaki ones) are very detailed oriented & will tell you everything from order of operations, explanations of components, what circuit pins to jump out when isolating problems, to general maintenance & installation. They can really help shorten the learning curve for us ice machine rookie techs.

      Kale Mercer I was a general manager at a restaurant and I guarantee you the ice machine is the least of your worries the drink nozzles is the worst part those grow mold and nasty goo ice machine a little lime deposits and scale nothing compared to mold on nozzles.

      @@DoodleyDavid Your preaching to the Quire, My father was a refrigeration tech and I have gotten a former employer shut down because they didn't understand how important it was to check and clean their equipment.
      I also worked as a theater maintenance tech, and if more people understood that all movie theaters have a pest problem, they would eat the popcorn either.

      Kale Mercer cleaning and checking the equipment is key I was on my stuff like clock work always made sure it was done the machines make it so simple if you use the cleaner and sanitizer and don’t allow it to build up you should only have to deep clean every so often one thing my dad taught me is preventative maintenance is key.
      And some of these restaurants it’s incredible what they get by with. Definitely some need to be closed until they learn the importance of cleaning

    I am an industrial technician and I have repaired some of this brand. Since technical documentation is not readily available to me, most of the time I have to speculate to diagnose the fault. Most of the ones I've seen put me off ordering the drink with ice cubes. But this machine that you show in your video is disgusting. You have done an excellent job of cleaning. Greetings from Palma.

    Nice. Also good job cleaning the pumps. Most people wash down, Descale, sanitize and move on. I used to keep a few new pumps to change out and would clean the pumps when I had down time.

    As a emergency nurse and np student...one thought...people take care of their equipment like they take care of their body...🤔 I bet there is a correlation between those who do regular maintenance on their equipment and those who exercise and eat right...anyway interesting to watch a skilled craftsman at work...a science and an art to this...

    Love the sound of the trickling water, the coolness, and crispness of an ice maker. One summer, I worked in the flight kitchen (wide body kitchen) for United Airlines at Chicago O'Hare. For some reason, they put me on ice and worked with this massive ice machine. It had a conveyer... that I always had to jury rig, but filled about 700 bags each night, packed them in tray, 3 bags to a tray, each tray had a piece of dry ice I dropped in, crushed ice for the Hawaii flight, and then loaded everything into the modules that go on the planes. It beat working on the dish washing line or the food tray assembly line. They called me" the iceman". I was also known as "college boy" by one guy who hazed me in particular. Ran into him a year later on a flight with my parents and boy did he act sheepish . Yet, I introduced him, I acted as nice as can be with a big smile, and never said a thing about him being cruel. Ok, that was a tangent... but yea, ice makers are cool.

    Great video and my favorite machines! And to everyone afraid of the ice I guarantee you the drink nozzles on the machines is the thing to worry about even the water nozzle gets gross and nasty next time you drive thru ask them when they cleaned their drink nozzles

      good thing considering an ice machine cleaning cycle does "NOT" actually clean the system. It just allows the chemicals 'that you add' to work on the salts and calcium left behind by the water by circulating the water without draining. You still need to tear it apart and wash it with Ice machine sanitizer to get it clean.

      @@evanbell6518 I'm a manger at an events venue and I tore apart one of our ice machines during this downtime. It's embarrassing how dirty the internal plastics were when I took them apart. It's taking me 2 days to fully clean out our everything I could get to. It feels great having one clean but now I still have 4 left to clean.

    Kudos to you soldering those 2 drain pipes together like that. It should keep them from making annoying clanking noises from movement or vibration of machines. Great Idea!

    I remember when I was the store manager at McDonald's many years ago, I think I was the only one who made sure the p.m. was performed on the ice machine. They get nasty really quick and to this day I get my drinks without ice

    Great video Chris in the same way go through it with a fine tooth comb or else you’ll be right back on a recall. We all know customers don’t mind paying the first time done right but a second time there a tad more to be pissy about paying for. I did learn a couple of extra tips on cleaning from your video.     I love your passion on doing a great service and doing it the right way! There are so many hacks out there . So wish you where in Michigan! No one can figure out my issues I have with my Air conditioner not being able to cool the house properly without having to use box fans. Keep up the great work and great videos!

    Ahh, memories... Great post. I used to do this every 6 months on a crap old ice machine, and I thought it was the age that made it so gross so quick. NOPE - brand new replacement machine had pink slime just like the old one within the first 6 months. These things need so much cleaning and maintenance - quarterly at most - but virtually no one does it. At ANY restaurant - yeah, hold the ice, please! (and not just cause you're ripping me off by filling the entire glass with ice...)

    The more of your videos I watch the more inclined I am to disassemble and clean my small ice machine. it's one of those models you just put on a kitchen counter and fill with water then it makes ice and as it melts cycles the water directly into the tank. And yes I do replace the water in said tank every 3 days or so already.

    I'm an HVAC tec, gas pump tec, a few other kinds of tec, and I also work on this exact machine. Also crushed ice. They are all nasty. It's theroputic to watch someone clean them, and for me to not have to do it this time. Thanks man. Since I work on several different trades I don't get to learn all the little tips and tricks that someone who works more exclusively on this kind of stuff would know. I learned a few things.

    Excellent video, Very thorough cleaning and service. I would eat ice from this machine. Most people don't realize the ice machine and the ice hopper on the soda fountain are some of the dirtiest pieces of equipment in a restaurant. They are also one of the biggest causes of food born illness.

    I used to clean the ice machines quarterly, the bacteria growth especially on the underside of the top of the bins can get disgusting after a bit. Looks like that machine has not been cleaned in years.

    That was a great move, to move the piping to the unit itself. Now you have the freedom to move. Very smart move: I know that it might not look such a big deal but when you have to do things on the spot, it is.

    Good vid. nice catch on the Frequency's. ice thick probe. nice when u have another machine side by side.😁 Also Nice re- do on the drain lines. way better now. i can't believe who ever was doing drain lines and did not see the drawing on how to do the drain line right on the back of the machine. i guess they figured it did not matter , it's just a drain line. 🤣🤣

    When it's that bad, pull it apart and scrubby-dub-dub before the cleaning cycle. Get the big stuff out first, then run the cleaning cycle. Then rinse and repeat the scrubbing of everything again. Yes it takes longer, but it does clean it more efficiently and thoroughly. Then rinse, sanitize, and check operation. If you change the water level probes, ALWAYS replace the cable between the water level probes and the control board, per Manitowoc. Then you can check over all operation of the machine.

    New drain line looks great, but I'm curious why you use copper instead of pvc? I like to use 3/4" pvc for the drain lines. its cheaper, easier to run, and I've found that Vinyl tubes and copper seem to be more susceptible to clogging with limescale or slime over time. Also, I like to add a union 2 or 3 feet below the Tee, just in case I have to pull out the machine and don't want to remove the drain line. I'm not nit-picking btw, I just love working on ice machines and your videos are gold! Its pretty cool to watch your ice machine videos and see almost the exact stream of thought that I have while working on them narrated in your videos. keep up the good work, man.

    I worked dietary in a nursing home. State never checked our ice machines and no one cleaned or maintained them. Shortly after I started I noticed gray sludge in the ice. It was worse than this. I cleaned what I could but there was still sludge. Eventually our walk in fridge needed maintenance and I got a chance the talk to the repairmen and they took it apart and cleaned it properly

    ugh, franchise owners. i can hear it now, "the ice maker cleaner is too expensive". instead of running a cleaning cycle regularly, they end up paying more in the long run to have you do a deep clean on the machine.

    The other thing you need to check is that the Ice Machine is perfectly level. I've found the front leveling legs spun in from mopping, and using floor buffers and hitting the legs.

    just curiuos but i noticed that these machines had the uv add on did u change the bulbs? those things make a huge diffrence in helping the machines stay clean especially when they have snot build up..love the vids

      Yeah they have a filter changing company come thru and change the water filters and uv lights twice a year so they dont want me to touch those

      safe to say those bulbs are probably bad. i set up two machines sharing a common bin and installed the uv kit on just one of the machines when i returned 6months later i was shocked in the diffrence between the two machines. it truly was a night and day diffrence between the two the uv machine was much much cleaner

    I was an electrician for a few years then I dumped my career and went into a failed business venture for the last decade of my life. Now I'm watching your video's and studying HVACR maybe I might change to a more permanent profession that pays well and ensures my retirement.     In the 80s we would have problems with the evaporator costing flaking off leaving black specks in the ice. We did not have all the toys you guys have today! Nice clean job!!

      I think it's a full service restaurant with servers and bussers and all that because you can hear them saying "corner" several times in the background. That said, i used to work a fast food place and the ice machine was always completely covered in mold. Like a 3ft by 2ft section inside the machine.

      This is Jack in the box I've worked in a couple fast food and Jack in the box has a weird buzzer that someone outside presses when they have a delivery and they're outside the back door

      Fyi anyone can press the buzzer it's really annoying and someone will show up at the door within 10 to 15 seconds no matter how busy because that buzzer is annoying

      I work for a store called Krogers. In the Deli department.... Our floors are nasty as fuck as well as our equipment. I can't understand how we pass inspection.
      I can only clean stuff so much that I can get to. I do not want to spend hours of my work day just trying to get the stuff clean when I'm supposed to be manning the fryers and such.

    When fixing these working for a beverage company. Manitowoc told us ohm it out..."yea we dont have the same time ice machine only.repair guys have"
    I literally just have to gauge symptoms and what part i know causes it. Like youre water issue, i would just replace the probe and see if.that worked. If not i would grab that cable if i had.it.
    With the thickness probe...i only replace it if its not working at all.
