    Here is the recipe in writing for both:
    Canning Corn
    3-6 lbs, ears of corn
    Husk corn, remove silk and wash.
    Blanche for 3 minutes, cool completely
    Remove kernels from corn
    Measure your corn. For every quart of corn kernals add 2 quarts of water OR for every Pint of Kernals add 1 cup of water ( if you have an odd amount.
    Bring to a boil for 5 minutes. Ladle hot corn and liquid into jars leaving 1 inch headspace. Remove any bubbles. Wipe rims clean with a Vinegar towel, add seals and rings. Finger tighten.
    Add jars to hot water in your Pressure Canner ( Do NOT Water Bath Corn! )
    Process Pints 55 minutes, quarts 1 hour 25 minutes at 10 lbs Pressure.
    Depending on the type of corn you are using, sometimes the sugar content will cause the corn to darken a bit, this is Not a cause for alarm.
    Corn Cobb Jelly
    12 ears of corn snapped in half
    2 boxes pectin
    6 cups sugar
    2 quarts filtered water
    Boil corn ears in 2 quarts of water, or enough to completely cover corn
    Boil for 45 minutes
    Remove cobbs
    Strain juice with cheese cloth into a large container.
    Measure 6 cups of strained juice into saucepan
    ( Add water if needed to make 6 cups)
    Add pectin and stir well until completely dissolved, on low heat.
    Bring to boil
    Stir constantly, you do not want to burn pectin or jelly will not set!
    Boil for 5 minutes , stirring continously
    Remove from heat.
    Let set for 5 minutes, until foam forms a coating on top.
    Remove foam easily by skimming
    Fill half pints with Hot liquid with 1/2 inch headspace. Jelly will be liquid still.
    Wipe rims with Vinegar towel, add seals and rings
    Set jars in Water bath canner, add 1/4 cup vinegar to water ( to prevent mineral deposits on jars)
    Bring water to boil and process for 10-15 minutes.
    Lift rack and let sit for 5 minutes.
    Remove jars from canner
    Let jars sit untouched for 3-5 days to set. They will seem liquidy at first. If they seem to not be setting properly , place in refrigerator to set completely.
