    I ABSOLUTELY Do NOT Store my Jars with Rings ON. I add rings BACK on the Jars going to another person! When you give away or sell a Jar, put the ring BACK ON! . This way they have a way to KEEP Jams, Jellies, Pickles, etc in their Refrigerator with the Seal AND Ring!

      FAlse seal. With lid on if seal breaks because of temps. But jars will reseal but product are spoiled

    I did the color carrots and canned them for the first time but I canned them in an herb seasoning mix and they actually turned out really great when I went to heat them up I just drained them and tossed on some grape seed oil and roasted in the oven for bit and so tasty

    Thank you for answering my question and if you can potatoes, raw pack them and I also put a tablespoon of onion soup mix 8n the jars.
    I also put The Onion mixed soup in my chicken

      I do raw pack, after blanching for just a minute. Sweet potatoes I strictly raw pack. They do Not come out mushy!

    We are still fairly new to canning and have limited things we can. For me, I love these will and wont canning videos.. very informative. Seeing what others do and learning from all the ladies (and gents) is fantastic.. Thank you.. I would love to see tutorials on your Lemon Curd and Pickled Garlic.

    The raw packed sweet potatoes are really good. I do that and I also do the raw packed sweet potatoes with the brown sugar and water. It is so good. My family loves both ways!

    My family uses the sweet chili sauce on holiday ham and meat loafs. Also really good if you make meatballs with cranberry sauce with a can of the chili sauce in the crock!

    I use the sweet chili sauce as you said for egg roll dipping but also when I make chicken and pineapple fried rice, I add soy sauce and oyster sauce or at least soy sauce when I make a stir fry in place of teriyaki and you can also add a lot of garlic to it and it comes off as a very nice teriyaki sauce. If you make homemade baked beans it's good in those especially if you do the tomato kind and not my New England baked beans. Think about what you can add to it to make it something else that is useful. :-)

    Try your sweet chili as a dip with chips. Serve it on bread and butter with cold meat. Serve it on cheese and crackers. Mix it into stews. On hot dogs or burgers.

    Thank you so much for this wonderful video. I have been canning meat since I got married,at 14 years old.yes I am still married to the same man . my mother-in-law tought me . I do hot dogs and sausages. I only do it for my family, I will not take the chance on somebody getting sick . I can say that so far nothing is gone wrong with my family. I do everything. I even told my husband don't get in my way or I will put you in a jar .lol. station hanging with your videos find pleasure in walking app.

    I use my homemade chilli sauce in my baked beans. It's so good! A little brown sugar, some molasas, and mustard powder with it and they are a favorite.

    Very enjoyable video. I like Tomato jelly/Jam. Yellow tomatoes I think are best because they are less acidic than others. red are OK too but just don't compete with yellow for my taste. Also caned grape juice is a nice treat from time to time and can also be used for grape jelly down the road if one runs out.

    I canned apple pie filling for Christmas gifts last year and used Vietnamese cinnamon. They were so good and my family is asking when I will make so.e again!

    You can use the sweet chili sauce for a lot of asian cooking. I don't usually use the sweet chili sauce, because I like garlic chili sauce more, but the sweet one is used in lots of thai recipes :P They can go into sauces for noodles and for meats and stir fries. Some chili sauce, soy sauce, and fish sauce or oyster sauce, mixed with some water and thickened with corn starch, will make a good glaze or stir fry sauce.

    I've seen lots of people do raw packed chicken and it comes out crystal clear and very nice without pre cooking. :-)

    I canned butternut pumpkin and then sweet potato and they came out just as you described. However, I tipped the jar in a saucepan, mashed with a potato masher, added butter and milk and made the most delicious soup!!!

    Sweet Chili sauce up your ribs overnight, Betting that would be good, Or Chicken, Mainly maybe a great marinade

    Great variety! If you eat fresh salmon, that sweet chili sauce would be good glazed on top of the fish and broiled till it caramelizes. Yummmm! Looking forward to the lemon curd video. My husband loves sour treats and I’m trying to keep him out of the candy aisle lol

    Really enjoyed this video Diane! This is a fun colab to watch. Potatoes are one of my favorites that I can, and is so nice to have in my pantry. Quick and easy for meals, just open a jar and wall la, no peeling required. I usually buy 40 pounds and do them. It's a pain peeling all of them but so worth not having to worry about peeling them after they're canned. I want to learn to make corn cob jelly. It sounds delicious! I'm looking forward to watching your upcoming video on it. Thanks!

    Wow! You are a canning wonder! I would love to can up some chicken and hamburger meat but I am sooooo leary of canning meats! Don't want to make anybody in my family sick. You've given me some ideas though! Excellent job, thank you!!! Lori

    You can use the sweet chili sauce in a stir fry with rice noodles or udo noodles. I would use fresh chopped asian type veggies. Bok choy, nappa cabbage, celery, carrots, green onion, red bell peppers, broccoli, ect. I stir fry the veggies in seasame oil and soy sauce, then add the noodles and sweet chili sauce.

    ALL SOUNDS YUMMY!!! I LOVE canned meats. Chicken... YUMMY!!! and the hot dogs and sausages I do can. They have a different texture.. But Excellent and better once you brown them again. Love Jams. Love all of the things you showed that you liked. The Not so much. I am not sure about.

    SWEET CHILI SAUCE can be used for Meatloaf. Add some to the meat mixture and / or cover the meatloaf with the sweet chili sauce before cooking. Super yummy!

    I am going through some of my more popular videos that I will be doing updates in in a couple of weeks and looking back a year ago I began thinking I needed to increase our food storage back up to a full years supply.       This video is 5 years old. I just made a newer version last month. The jars that you see rings ON here are because I had all of my jars out the day I filmed and those With rings were being given to help a family. I do a Lot of gift giving as well, so rings go back on when I give to others.
      My view on rings, take them Off! Rings are only for holding the lid On during processing. Once lids are sealed, we Always remove rings.
      This is because if a lid fails with the ring On, that lid, due to Pressure from the ring, will reseal giving you a false Seal and you may NEVER know.
      I just made a video on this pretty recently and have others as well. It happens, and can be dangerous. Please search my videos for False Seal

    Sweet chili sauce would be great on breaded fried chicken pieces or shrimp
    Think like sweet and sour you can always add onions and peppers and put over rice love this video!

    Caponata is an antipasto. No eggplant no caponata! :-). Red beans are red beans not kidney beans. There was a thing called small red beans and they're not adzuki beans. I use those for red beans and rice and I don't need to canned beans because dried beans are good nearly indefinitely! I have used beans to make my homemade baked beans that would probably 10 years old and they came out beautifully. That's just me though everybody does their own thing! :-)

      With Caponata I like to add Fresh eggplant. I'm Sicilian , that was how my family did it. Eggplant can get a bit mushy after Canning. This video is 4 years old. I do this , and many other things a bit differently now. Lol

    I am new to canning although when a boy I tried to escape. There are plenty of things small hands and arms are handy for, like washing jars,peeling things, picking more from the garden so I escaped asap from canning when I could. I always figured a wife someday would cover that lol. I learned some things from your video and thank you for taking your time to make it. I canned some ham and beans once and it was only 3 pints that was going to be thrown out if I hadn't. I ate those within 3 weeks. All were sealed ok I put them in a pan on the stove to heat them up good before capping them. I don't know if a pressure cooker is a must or not for crock pot stuff like beans and soup but it might have went bad as I didn't know I was only doing what I think my Mama did. Sorry but she is no longer with us and my wife is elsewhere presently. I am going to look for the hot dog canning video. What brand of pressure cooker do you think I should look for when buying a used one? Or any tips on other things like size or other important specifics? Thanks

      Good for you! Yes, all meats, veggies, soups, stews etc NEED to be pressure canned.
      I would look for an inexpensive one, such as Mirro or T-Fal, both under $50 for a one tired model. Great to start with

      @@DianeTheCanningNana Thanks for your tips on which ones to look at used. I saw one in a post recently with some jars too. It was an 8 qt. Idk what brand. Mama had a big round pot with handles all around it that flipped up thru slots in the lid that she tightened by skipping around much like the head of a condenser or manway door on a tank. I could only think of those examples as in field construction we did a similar top bottom side to side sequence tightening up so we didn't have leaks. Idk whatever happened when she passed or if she even still had it. Thanks again for the video and advice I will try to learn more. Don't let this trade of yours go away quietly.       Thanks for your advice I scored a 4 quart presto for 5 bucks last week at a yard sale. I must get serious in my quest. I don't have any small people to conscript as slaves like my mother did. I learned quickly to stay away and not get curious about what others were doing in the house. Yes going in for a snack was a bad idea with no way out but the back door or mama put kids underfoot to doing any task she could.

    Dont precook the potatoes either. I love using a watered down onion soup mix, and i also made a blend of lemon, dill, parsley, lack pepper, and sat. I use those for potato salad. Delicious

    I would love to have your recipe for (gabolata) sp? You said it was a mixture of vegetables you serve in pasta. I really struggle with knowing what to do with my canned foods to make a great meal. I hope you will talk more about that. Oh, by the way, after seeing this episode a while back I started canning good quality hot dogs. I make beanie wienies with them and my Home canned baked beans. Thank you!!

    I just subscribed, love canning everything. Can't wait to see you make lemon curd. Our grocery store had limes on clearance so I bought ten bags, produced about 16 pints so m waiting to make lime curd.

    Heat homemade meatballs in your chili sauce. If not too sweet, mix it with grape jelly.

      I have heard of that! I have seen a frozen package of meatballs with grape jelly as well. Never tried them that way though! We love fresh, hot meatballs right out of the pan and then the rest go into my pot of sauce to absorb the sauce as they finish cooking.

    I have a lot of sweet chilli sauce also. Try adding 1/2 to 1 cup (to taste) into rice the next time you make it. I'm calling it Spanish Rice.

    Check out taco pie recipes for your sweet chili sauce. I have not tried it yet, but a veteran canner/chef says it is awesome and they freeze well, too.

    Hi Diane. Just now catching this video. My Mother-in-law used to make a homemade chili sauce (very similar to Nance's chili sauce available in grocery stores if you happen to be familiar with that brand). She would brown pork chops and then place them in a baking dish and spread some of her chili sauce over each chop and finish cooking them in the oven. I can't remember how she did it. I use Nance's and I cover the baking dish and bake, then uncover for a short while to caramelize the sauce a bit. It's my husband's favorite way to eat pork chops. This may have been a way to use your chili sauce. My Mother-in-law has been gone for 30 years. Sure wish I had her recipe.

      Do NOT water bath Can your Green Beans!! They HAVE to be pressure Canned. I didn't put lemon Zest in green beans, I have , at times, used lemon Juice , seasonings and mushrooms, but they are ALWAYS Pressure Canned.
      Most vegetables are Not acidic enough for the Water Bath Canning method. The Only exception would be if you are pickling them, such as making Dilly Beans out of Green Beans. ❤️🤗

    Canning potatoes is very easy. however you will notice a taste difference even if you use lemon juice.

    Hi Diane! Just found you and subscribed. Thank you for sharing your talent and honest thoughts about so many different foods and applications. I am excited to try some of your creations. I, too, can chili sauce. Not sure if yours is sweeter than mine. I use mine for making sloppy joes by adding the sauce to cooked lean ground beef, then simmer to infuse flavor. Have done this for years. Another idea might be to use it as an ingredient for an appetizer dish, pour over the top of cream cheese spread 1/4 inch thick, maybe a little more and serve with crackers. Also could be used in making shrimp cocktail :) I would love to know if any of these ideas work for you.

    Hey Diane! I stumbled across this video and the "bait-click" showing the canned chicken had me hook, line & sinker! I have been pressure canning now for over 5 years and I ONLY can meat. (Wild & store-bought)... I came here thinking I was going to give YOU an education and say "if you don't like canned meat you're doing something wrong!" but what a pleasure it was to see you too, have experimented with raw-pack and pre-cooking your pressure canned meat. Great video! Inspiring! Definitely deserve a sub and thumbs up for this one! I am actually, right now, pressure canning some moose and I gotta tell ya, the red meats, for me, still hand's down...raw pack with a tsp of pickling salt in a pint turns out the best. I have read ppl say it looks like a "science experiment" in the jar but damn! It is simply the best for stews, gravies or even straight up out of the jar with a fork. (I have never gotten sick from not heating my pressure canned meat cold out of the jar)... Anyway...sorry for the long-windiness...keep it up! Canning really is a "lost art" these days! you got a sub and 2 thumbs up girl! Now...my search for your canned hot dogs video begins!!! :)

      Thank you SO much for your kind words!! We make chicken salads and chicken salad sandwiches out of our canned chicken All the time! I do not reheat the chicken first. The Canning process is sufficient, as long as you process for the correct time and pressure. Canned beef right out of the car is delicious! Hot dog video is coming! I lost my completed video after my computer went down. Just got a new one!
      We are near the Thousand Oaks fire and went through the Thomas fire a year ago, and of course need to be prepared for earthquakes here! Our camping trailer is always stocked and ready! We don't need to worry about food in a power outage. Anything defrosted from a power outage can be quickly saved by Canning it up on our portable double burner camping stove. This is just one of the reasons I Can. It is something I truly enjoy doing and Love to teach so future generations are prepared as well 🤗❤️

      My guess is that it will make a come back now that instant pot...has a 15 psi pressure canner function

      I, personally, do not use my instant pot for pressure Canning. From all I have heard and read from other experienced Canners is it reliable enough for safe canning temperatures.

    With the peach vanilla cinnamon jam, take out the vanilla, change the cinnamon to powder instead of extract, and add apples or pears... I've made peach pear plum jam and peach apple jam (both with a dash of cinnamon), and they're both delicious! They smell like apple pie filling, but the peaches take the front when you taste them. Thank you so much for making this video, and for the tip on canning chicken... I just got a pressure canner, so I'm doing a lot of research (I've been water bath canning for a year), and will definitely be cooking my chicken first rather than raw packing.

      @@DianeTheCanningNana Yes, definitely! The only things I've water bath canned are pickles, pickled peppers, tomato sauce, and jams. I always make sure to go to reliable sites (I can't remember the name of the government one, but I use that and the Ball site) when I find recipes, and only use tested, safe recipes and methods. I have a relative that insists that a water bath is enough for things like green beans, and I'm still desperately trying to convince her that it's a horrible idea, and that she needs to use a pressure canner for them.

    Cherry almond is fantabulous! I would try making that next year or whenever you have the cherries. Cherry and almond are known to be best friends hot dog sauce! I have subscribed to your channel but you might not want me here or your people might not want me here. I'm a serial commenter as I live alone and I have a PA during the day but I don't sleep well and all night I am by myself Wheeling around the house. :-)

    When making chicken soup, I only see recipes that call for pre-cooked chicken. How do you keep the chicken from being dry and overcooked after a 90-minute processing? My first batch tasted delicious, but the cubed chicken was as dry as can be.
    I enjoyed seeing your different items, and hearing your opinions about what worked well, and what didn't. Thanks.

      Mine tastes great, not dry. Add fresh chicken if you are having a problem.

    Sweet potatoes raw pack much better. Suggestion for your sweet potatoes toss them in the dehydrator and make dog treats. My dogs go crazy over them

    Try putting a couple tablespoons of sweet chili sauce in your hot wok before stir fry. Get it hot before adding your rice.

    First...I LOVE THIS COLLAB! Thank you for participating. There is so much to learn from the experience and wisdom of you great YT canners. (I had to Google Search posole sauce and found out is is much different than I imagined.) You'll laugh but hubby prefers commercial metallic-tasting corn so I don't bother with it.
