Hi Wendy...tried the recipe. After refrigeration the mixture released a lot of water and the mixture became impossible to shape. Had to add a lot of breadcrumbs to make it manageable again but that ruined the taste. How can I prevent the mixture turning wet?
Derek did the water come from condensation? You would need to place a plastic wrap touching the face of the mixture when refrigerating to avoid water falling into the mixture.

Hi Wendy, did you add some herbs to the bread crumbs in which you rolled the croquettes.
Hi Marilyn, the breadcrumbs I used had a little herbs in it but regular breadcrumbs work perfectly well.

I've always seen shrimp croquettes recipes chock full of potatoes, this is a wonderful change. Quick question though, can we bake these instead of frying? Does anything need to be changed?

@@Butterfly-ln8zl I did! I made a mistake of trying a low temperature first (150° ish) and switching to a higher temperature (190 - 200°) this ended up drying out my croquettes. So my next batch I just baked it for 15ish minutes (depends on your oven and the size of your croquettes) at 190° they ended up perfectly golden brown and IMO they were crispier than the fried ones.
