To keep the crust from getting gummy, I paint the crust with soft butter. This barrier prevents the meringue or filling from making the crust soggy. A little butter never hurts. I also use the Broiler to brown meringue for about 5--7 minutes, turning. The bottom does not over heat, which will also make the crust soggy.

Hi Paula. Love your daily shows. So uplifting. This lemon pie only worked for me frozen! The filling didn't set at all even after hours in this fridge...the crust came out beautifully with a yummy buttery flavor
Her written recipe fails to bake the pie without the meringue. It simply says to preheat the oven and then tells you to make the meringue than bake it. But wait....this is not a lemon meringue pie. This is an old fashion eagle brand CREAM pie that calls for baking BUT does NOT call for a baked meringue topping. It calls for a whipped topping. In the video no wonder she never cut the pie. She made the filling correctly and baked it. So far so good. But then instead of putting a no cook whipped topping on the pie she put a cooked meringue topping. Go look up any recipe for a lemon meringue pie and you will see the filling does NOT call for condensed milk. What a mess. Then go up look up any lemon or lime pie that calls for condensed milk and you will see it calls for a no cook whipped topping. And secondly this is not a lemon meringue pie. This is an eagle brand pie that calls for a whipped cream e topping not a baked meringue topping.

My great aunt on my daddy's side of the family used to make lemon meringue pie when she was able to come to our house for Christmas I miss her she died 8 years ago daddy and I along with 2 other preachers had part in her funeral I had the graveside service

To keep marangue from weeping use one tablespoon of marangue powder incorporate it in the beating process. It will prevent the topping from weeping..
My Momma always made meringue when she made banana pudding which was made from scratch too.
