    INGREDIENTS
    For the lemon curd:
    - 1 9-inch pie crust baked
    - 4 large egg yolks (whites reserved)
    - 4 large whole eggs
    - 1 cup sugar
    - 1/4 cup cornstarch
    - 1 1/4 cup lemon juice
    - 1/2 tsp salt
    For the Swiss meringue:
    - 4 large egg whites
    - 1 cup sugar
    - 1/8 tsp cream of tartar
    - 1/2 tsp salt
    - 1 tsp vanilla extract
    INSTRUCTIONS
    For the lemon curd filling:
    - In a 4 quart saucepan, combine the four whole eggs, four egg yolks, lemon juice, sugar, cornstarch, and salt. Whisk to combine and place over medium-low heat. Continue to whisk until the mixture begins to thicken with a few bubbles forming around the edges, 5-6 minutes. Keep whisking and allow the curd to cook until it is noticeably very thick with large bubbles forming, 4-6 minutes.
    - Remove the curd from the heat and pour through a sieve into the prepared pie shell. Place plastic wrap directly on the lemon curd filling and place in the refrigerator until chilled, or for up to 24 hours. Once chilled, top with the meringue (recipe following).
    For the Swiss meringue:
    - In the bowl of an electric mixer or a glass bowl, combine the reserved four egg whites, cream of tartar, sugar, and salt. Whisk to combine and place over barely simmering water. Continue to whisk until the mixture thickens slightly and reaches 160°F. Remove from the heat and transfer to a stand mixer.
    - Using the whisk attachment, whisk the meringue on medium speed, increasing to medium-high until the egg whites cool to room temperature, 3-4 minutes. Continue to whisk until the meringue becomes thick and holds a stiff peak, 4-6 minutes.
    - Once at stiff peaks, whisk in the vanilla extract. Add the meringue to the prepared and chilled lemon pie.
    - Using a kitchen torch or broiler, brown the meringue and serve immediately.

    This is my daughters favorite pie but I always thought it was too hard for me to make it! Tempering eggs scared the bejezzes out of me! This I think I can do! Trying it for Easter! Thank you!

    This is my favorite pie. I like that you put a substantial amount of lemon filling in your pie. I think I'll put this in a square pan and serve it in squares.

    I was never taught to cook as a child because my older sister did most of the cooking with mom. I find it really difficult to cook just about anything but I really think with your teaching, I can cook this pie. Thanks, I am going to try it.

    I have key lime juice and zest in my freezer. I am making this a key lime meringue pie instead of lemon. I have been looking for a different way to make a key lime pie and this is the perfect recipe to switch up the lime for the lemon and also adding zest. Thinking I might do candied limes too. Thank you Kaleb for another fantastic recipe. I will be using my broiler since I don't have a kitchen torch.

    Sounds yummy, but I have one question. The recipe for your pie crust says to add butter and shortening pieces to the dry ingredients and pulse however there is no shortening given in the recipe?

    Kaleb! Another winner. My mom used to make lemon meringue pies for us and they were always so special. My parents are in the cattle business and my brother used to call it "calf slobber pie" because the meringue around his mouth looked like the white slobber from the cow's milk on a suckling calf's mouth. (Being from Iowa, I'm sure you can appreciate that visual.) I think that is why it is still my favorite today. I will try this because your meringue intrigues me! Thank you so much.

    If you add your egg whites to a hot pie and cook for 20 minutes till it browns evenly all over, temperature for oven is 325 it will never weep
