Not quite, the point of AdS CFT is that while we don't have exsct solutions for cfts we can calculate Einstein metrics. Thus we can develop gravity duals to theories like QED and QCD or other more specialized cases. The idea is not that somehow normal space is hyperbolic. Rather it's that that hyberbolic space exist inside of a boundary, on which there is our CFT. It's importwnt to remember AdS/CFT is part of a larger development in theortical physics that looks at spacetime as emrgent from QM, whether it be the relationship between TQFTs and knots, susskinds ER=EPR hypothesis Kaputsin-Witten theory. The ER=EPR idea is a fascinating way to conceptualize how particles can both be extended objects and appear point like and the more you think about it the more AdS/CFT will make sense
