I have been amazed by the New Zealand tour but this video blew it out of the water. The chef has a pure heart, he speaks of childhood experiences, native ingredients and cultural considerations for food discovery. The chef is a child in a candy store, he is so genuine in his emotion and feeling when describing food and the desire to share and inspire. Truly amazing, keep it Kiwi, love you guys.

I have to say as an Aussie who for the first time went to NZ in January this year, was blown away by these people, from the Māori in Rotorua to Dunedin (my fav) to Auckland we loved every bit of it and can’t wait to return, my favourite part were the war memorials, whilst sad they gave me a better understanding of the brotherhood of the Anzacs, I’ve realised whilst we fight like warriors in rugby and cricket, we are truly brethren when it comes to backing up our mates and standing for what is right.
Woohoo! Dunedin finally gets a 'favourite' (we feel a bit left out all the way down here! 😅). Did you see the Gallipoli exhibition at Te Papa while you were here? I came out of that so tearful and proud of all the ANZACs ❤ So glad you had a good experience here - kia kaha, cuz ❤
Each dish was presented unbelievably art work - with so much love and patience. What a chef! And he ate w/ you. Yes, the history. Native. I did not realize Nee Zealand was such a young country. Glad you had such an amazing experience in Aotearoa. I ate at Ahi once, and it definitely leaves you wanting more - so many taste sensations. It's staggering to see a chef with such passion for his craft, the local ingredients and the cooking process. The thought that has gone into adapting the techniques to NZ food is fantastic. All with a classic Kiwi accent. "Like getting smashed in the mouth by a wave". YES!

As a Korean I had no idea eel was eaten outside of Asia. I love the respect this restaurant has for local ingredients and their possibilities. Mark please consider coming to Canada one day.
It's eaten all over the world. Jellied eels is a British classic but other places in Europe also do smoked eel, pickled eel, grilled eel. And of course we love it here in Oceania. Korea does do a fantastic eel though, some of the best I've ever had was when I lived in namhae.

We have an amazing selection of restaurants in NZ that rival world-class restaurants, in fact they often end up on world's-best lists - see: Sidart, Cassia, French Cafe, Nest, Ahi, Amisfield - list goes on.
