Just tried this. Notes: I made my rub with chipotle, paprika, salt, finely ground coffee, and coconut palm sugar (the least refined sugar I had on hand). The sear takes some of the spice out, so I wouldn't be afraid to make the rub with some kick. No need for black pepper in the rub. I used Yukon gold potatoes, quartered lengthwise. That worked ok. I didn't blanch mine quite enough, which meant more time in the pan, which meant the steak was waiting a bit too long, so be sure to start this whole process by blanching your potatoes until they are almost done cooking so they don't need much sear time. That is the biggest timing variable, as long as you've prepped all your ingredients before you start the steaks in the pan. I don't know where you get thyme flowers, so I just used fresh thyme leaves in the mushrooms and it was great. I cooked three steaks. I used two portabello caps and a pack of mixed mushrooms from the refrigerated mushroom section at my grocery store. That was barely enough, so I'd probably do a bit more next time. The trick is to get them all to fit in the pan(s) at the beginning before they've cooked down a bit. Keep the pan hot and they cook down quickly. The steaks were amazing without any sauce. If anything, at least the way I did it, the bold flavor of the rub overwhelmed the more delicate flavor of the mushrooms a bit, but honestly I think the answer is just more mushrooms so you don't have to eat them sparingly.

Thank you so much Chef for doing these videos. Being able to watch you cook is like a poor man's culinary class. Fresh, healthy, vibrantly colored, flavorful food is something that we could all use more of. You could have easily released these videos on a subscription or pay-per-video basis, but instead you chose to share your talent with the world. I truly thank you for that...
I like these videos. Straight to the point and done....not a 20 min cook video learning about the cooks whole life story. And I have used many of these videos with amazing results.
I agree. I would have liked to know all the ingredients of the rub. But I like how he doesn't specify exact portion sizes. The video's move along at a nice pace too. I tried my first GR recipe last night (Pork chops and sweet and sour bell peppers). It was really good.
I think he means lower the gas. When you put the butter in, you don't want the pan to be flaming hot because it'll burn the butter and you lose the nutty notes. It becomes brown butter at that point. The shallots and garlic have been finely diced, so you don't want to put the garlic and shallots first. He said sauteed the mushrooms first.
Vegetable oil is better for steak because olive oil has too low smoking point. Also pepper is important or else you get a more boring flavor though still delicious
I've cooked the Steak and potatoes twice since watching this. Gordon has schooled me big time! I use to only be a filet mignon or occasional Ribeye person. Now I must have a NY Strip done this way. And the potatoes! I wept when I bit into them. Crispy on the outside, fluffy and tender on the inside. I'm learning to cook all over again. Thank you Chef Ramsay!
You're not wrong but this is literally steak and potatoes, it's not exactly rocket science and everyone has their own version of it, so it's natural that opinions are strong. Ever notice how everyone in the world has strong opinions about steak and pizza but nobody has strong opinions about confit duck or galantine? That's because your average "king of the barbeque" regular Joe doesn't know how the fuck to make a confit duck or galantine.
Omg Chef I made the steak exactly like you did & it turned out perfect the potatoes & as well as the mushrooms was so good this is the best recipe ever
I made this for my husband for Christmas Eve. I have never made steak before in my life. He gave it an 8.5. Thank you for the recipe and Merry Christmas!

mushrooms first cuz they take longer to cook, so shallots and garlic later to prevent burning
