Oil separation is exactly what you want in this, that's the coconut oil. A lot of the coconut milk you find in stores is homogenized and hard to separate, but traditionally one method is to fry the coconut milk first until the oil separates a bit

Original Thai Green Curry you never put oil in! The oil will come from the coconut milk!!

I think if the coconut milk isn’t fresh the oil doesn’t seperate from it
