Yes he should change the title, not a star but a guide because the sign of a chef using quality ingredients that are well cooked; simple a good meal. This RUclipsr needs to correct this, not the restaurant fault for letting him put on it.

Согласна. Помывка НАРЕЗАННОГО уже лука вообще меня рассмешила. Это же чистейшие понты на камеру и вообще непонятно куда они дели тот отрезочек прозрачный от свиного рулета. Ибо в бульйоне его нет, как и говядины или курицы Там вообще ничего кроме яйца полусваренного, почти дубовой недоваренной лапши, чуточку салатов (?!) и 4 отрезочка с палец какого то типа мясного дополнения - ничего нет. Куча черного перца, что не всегда хорошо в рамене и не для каждого. Всё видео и готовка тупо показуха и понты. Не более. Ожидаемый вкус очень так себе, судя по ингридиентам.

Love the emulsification technique, I’ve used this before and it’s a good technique to give the creamy texture without the heaviness. Give the illusion that it’s rich but it’s actually lighter than you would think
Too bad I didn't try this when I was in South Korea, I tried Korean cuisine instead, but next time I'll definitely remember to go there. I ate a lot of ramens in Japan though, and most of them were delicious.
i'm more interested to hear about the ones you didn't enjoy. sometimes i have a bad experience with my ramen shops but it's usually because i order something off the wall that i end up not liking, like curry ramens.. can't gel with those, at least yet

I love and appreciate that their equipment and kitchen is so sanitized and clean. I’ve noticed that about Korea and Japan specifically. Can’t say the same about another country, which I’m not going to name names. So tired of said countries restaurants being shut down due to roach/mice infestations and just overall uncleanliness.

근데 육수 내는 닭은 육수만 뽑고 버려지는 건가요? 냉면집에서 육수 뽑은 고기로 수육이나 고명으로 활용하듯이 저 닭들도 어떻게든 활용이 되어야 업장에선 로스가 줄고 소비자는 가격이 낮아지는 선순환이 될 텐데 이 부분이 안나오네요. 고명으로 들어가는 닭고기는 별도의 닭가슴살 정육이고.. 궁금하네요ㅎ
@@TehPieLuver it's quite simple, just calculate the difference by dividing the assumptions. So if this were 100litre pot, just divide it by 10 litres instead and measure ingredients accordingly. Or in my case, if I had a 10litre pot, I'd throw in a while chicken and double of the seasoning for extra strength and simmer for as long as possible

오레노 아닐까 하고 들어왔는데 역시 오레노이네요. 여기 진짜 맛있어요... 돼지고기가 아니라 닭육수 국물인데 고소하다고 할까요. 돼지고기 육수 라멘과는 다른 매력이에요. 가끔씩 생각나요. 마침 얼마전에도 본점 다녀왔는데 ㅋㅋ

근데 육수 내는 닭은 육수만 뽑고 버려지는 건가요? 냉면집에서 육수 뽑은 고기로 수육이나 고명으로 활용하듯이 저 닭들도 어떻게든 활용이 되어야 업장에선 로스가 줄고 소비자는 가격이 낮아지는 선순환이 될 텐데 이 부분이 안나오네요. 고명으로 들어가는 닭고기는 별도의 닭가슴살 정육이고.. 궁금하네요ㅎ

아무런 맛이 없을정도까지 뽑았기에 그건 그냥 퍼석한 어떠한 덩어리일 뿐이지 아무것도 아닙니다. 오히려 저걸 코스트에 엎어서 사용하려하면 손님의 컴플레인이 어마무시하게 들어올거에요. 요리는 열과 수분을 어떻게 이용했느냐에 대한 싸움입니다.

@@TehPieLuver it's quite simple, just calculate the difference by dividing the assumptions. So if this were 100litre pot, just divide it by 10 litres instead and measure ingredients accordingly. Or in my case, if I had a 10litre pot, I'd throw in a while chicken and double of the seasoning for extra strength and simmer for as long as possible
@@trcs3079 From what it seems a whole chicken and some pork carcass should work for the broth, toppings and oils are fairly simple as well so I agree this should be doable
@@TehPieLuver I can get a much better stock from simmering chicken bones for 6 hours and using various vegetables than the usual msg loaded restaurant soup. It doesn’t seem like you are writing from experience yourself.
