Actually that's the concept of Onigiri...traditionally onigiri fillings only a Ume (pickled plum), and Katsuoboshi...this restaurant are famous for near infinite choices of fillings and the size and amount of fillings...back when I goes to Japan, I tried like 3 times goes in this place, before it sold out in just 3 hours or so...notice that all the employees are all women, mothers and grandmas in general...
I think it’s more like 70% and 30% filling, which is fine. The onigiri that I have at my local supermarket ( not in Japan ) only got 10% filling, the size is also much smaller and the price is about the same.
First place I saw a Japanese Rice Ball was in 'Zatouichi' movies, the blind swordsman. It's one of those recognitions, that engages the imagination, if you've never had one before and I haven't. You know it's sticky rice with meat inside, which is, in theory, the perfect food. The Chinese have a version with lotus leaf wrapped around it. Latin world has the tamale, but with corn, I believe. This is my first time seeing a Rice Ball, being made and it's nice to be right, for a change.
You should definitely try one yourself. They come in an array of flavours and fillings and soooo many are sooo yummy. Well, you already know this from the video. Haha. Perhaps, if it’s hard to find a place that sells them, you can try making them yourself? It’s not so hard to make them and to purchase the ingredients are pretty easy since seaweed and other Japanese ingredients you can just get at your local Asian market or online.

É muito bom para o corpo, mas é um pouco demorado de fazer em casa, pois a cama de farelo precisa de ser mexida todos os dias. Para além dos pepinos, utilizam-se frequentemente cenouras, rabanetes, beringelas e couve chinesa. É delicioso!

I live in Ontario Canada and when I'm fast enough, I can buy onigiri at a local Asian market near me, as it sells out quickly, but it's only tuna mayo or artificial crabmeat and mayo. Plus, I've never seen such big onigiri before, and I follow a lot of Japanese RUclips channels. I'm coming to visit your beautiful country in December 2024 through to mid January 2025. I'm Japanese. Japanese traditional Onigiri is smaller and it's 2 or 3 versions such as pickled plum, dried bonito flakes or kelp. Most Japanese have never seen such big Onigiri before. Many of the ingredients she puts in her onigiri are her originals, such as avocado and cream cheese, which are not included in traditional Onigiri. Onigiri are portable meals traditionally made at home. They have only been sold in stores since a few decades. Restaurants specializing in onigiri, as this one does, are relatively a new fad.

They froze it to make the soft yolk hard which will make the separation easier.
