Hey everyone! Today I'm cooking one of my favorite things! SEAFOOD!! Crawfish! I've been missing out on doing Mukbangs and Jimmy's kitchen but I’m back in my new kitchen! You can't go wrong with real Louisiana crawfish that I got from my crawfish boil. Feel free to use shrimp when cooking your etouffee. A man who can make you laugh, cook for you AND has freckles?! Why am I on the wrong continent! 😞
A little tip to improve the flavor and complexity of the dish. When ever you make etouffee or gumbo, slowly cook a dark brown roux (the color of chocolate). It takes about 45 minutes to an hour, then add your holy trinity. Another thing is cajun cuisine uses vegetable oil instead of butter for the roux (you can finish it with some cold butter to boost that flavor up though). That being said it looks delicious, and is a great way to get those cajun flavors in a dish quickly, if you dont have the time to baby a wonderful dark roux.

damn those are some big ass crawfish! Good job! but I usually see the flour added directly to the butter to get that dark color, then you add the veggies to stop the cooking right at the perfect point. I love etouffee! Great job!

When I used to live in Long Beach they had a fire creole spot near Downtown. Maybe Pine St if I remember correctly. Great crawfish etoufee, po boys, gumbo, etc.

Fun fact I used to live about 11 blocks from Emeril's school where he holds cooking classes!!! I lived on Peckham St in Fall River and usually I would have to take a bus & ride it towards the school and get off & walk one street up!!
I am vegetarian but I love your cooking style specially cooking with chopsticks. When you pick it in chop sticks I feel you ask me to try it. My mouth is watering 😋

Jimmy, have you ever used canned San Marzano tomatoes as a base for pasta sauce? I did this for the first time recently, I was amazed at how good it was.
I was skeptical, because they’re pretty pricy, but it’s totally worth it! It beats the pants off the regular canned diced tomatoes I was using.
I’ve noticed the more authentic tomato sauce recipes tend to always have diced onion, fresh basil, and red pepper flakes. You sauté the onions, and it lends a bit of sweetness to the sauce (a shortcut some people use is adding a few pinches of sugar to offset the acidity of the tomatoes, but most people agree it’s better with onion.)
I used San Marzano tomatoes that were imported from Italy, but there are some grown in California as well. I don’t know if there’s a difference in taste; I only saw the kind from Italy at the grocery store.

Jimmy, I love your kitchen videos. I grew up in New Orleans and New York City. I love that your accent sounds like you're from NYC, but you're making a NOLA dish. My only correction is that it's not pronounced E-touffe, it's more like Et- toufee. Keep up the cookin'! Love the vids!

In Brazil we call it vatapá. The slight different is that we use shrimp and sometimes okra.

Dear Jimmy, Etouffee is pronounced with E like the sound of e in egg.
Also, the roux is very important. Stir the flour constantly until it is the color of peanut butter 🙂.

as a kid living in Louisiana I loved the food. I found that if you find a cool Vietnamese restaurant, you can ask for some Louisiana dishes. Here in Seattle they do really well.

Chinese people obsess with crawfish, chilly pepper, and garlic. I thin Cajun food has all of these aspects, that’s the possible reason
