    INGREDIENTS
    FOR CHICKEN MARINATE
    1) Chicken With bones - 700 gms
    2) Kashmiri Red Chili - 2 tea spoon
    3) Ginger garlic paste - 1 tea spoon
    4) turmeric powder - 1/2 tea spoon
    5) red chili powder - 1/2 tea spoon
    5.1) salt - 1 tea spoon
    WHOLE SPICES FOR COOKIN
    7) Crushed Coriander seeds - 2 table spoon
    8) fennel seeds - 1/2 tea spoon
    9) cumin seeds - 1/2 tea spoon
    10) cloves - 4 to 5
    11) cinnamon - 1/2 inch
    12) black pepper - 1/2 tea spoon
    13) green cardamom - 4 nos
    14) mace - 2 flowers
    15) bay leaf - 4 leafs
    FOR COOKING
    16) OIL - 1/4 cup
    17) green chilies - 2 -3 slit cuts
    18) Chopped onions - 2 to 3 onions
    19) Chopped tomatoes - 2 tomatoes
    20) ginger garlic paste - 1 tea spoon
    21) curd - 2 to 3 table spoon
    22) kasuri methi - 1 tea spoon
    23) fresh coriander - some freshly chopped
    COOKING PROCESS
    - Take chicken in a bowl and add Kashmir red chili powder, ginger garlic paste, turmeric powder, red chili powder and salt and mix all well. Marinade chicken for 1 hour. Marinating chicken with Kashmiri red chili, red chili powder, salt, and turmeric powder is an exciting and intriguing process. The vibrant red color of the Kashmiri red chili entices me, promising a spicy kick. Kashmiri red chili powder adds its distinct warmth and mild spiciness to the marinade, enhancing the overall flavor profile. Red chili powder, on the other hand, brings an intense heat, contributing a fiery kick and boldness to the chicken. Turmeric powder, with its golden hue, adds a radiant glow to the chicken, enhancing its visual appeal. Together, these spices create a rich and aromatic marinade that will infuse the chicken with a delightful tapestry of flavors.
    -now heat a kadai and add some oil in it the add Crushed Coriander seeds, fennel seeds, cumin seeds, cloves, cinnamon, black pepper, green cardamom, mace, bay leaf in to it and fry for nice aroma. As the spices sizzle, they release their unique fragrances, blending harmoniously to create a rich and enticing flavor profile.
    - now add slit cut green chilies and fine chopped onion and fry onion till onion turn translucent creates a tantalizing aroma. The sizzling sound and visual transformation add excitement. It signifies flavor development and sets the stage for a delicious outcome.
    - now add chopped tomato and cook it until it softens, the tomato releases its natural sweetness and tanginess, filling the air with a mouthwatering aroma. Watching it soften evokes a sense of anticipation
    -now add marinated chicken and mix all well, and then add ginger garlic paste and fry chicken for 4 to 5 minutes. A symphony of aromas fills the kitchen. The sizzling sound of the chicken creates a satisfying sensation. The spices release their fragrant notes, infusing the chicken with a tantalizing flavor.
    - now add curd and mix all well, now fry chicken for 2 - minutes and then cover and cook for 10 to 12 minutes, don't add water, let chicken cook in its own juices.
    -after 12 minutes open the lid and mix all well.
    -now add some kasuri methi dand freshly chopped coriander and mix all well. The Chicken Khada Masala dish is now complete, a culinary masterpiece ready to be savored.
