I'm Filipino and my sister is a chef who was trained in Indian Cuisine while she was working at a well-known international hotel. About 6 years ago, she brought the chicken biryani and murgh makhani among other Indian cuisine recipes at home and it was well-loved by all family members. To me, to the point of obsession XD. When we have celebrations here, pancit is now often switched to biryani rice which goes very well with most of the Filipino celebration staples like lumpia, lechon kawali, calamares, etc. To me, Indian food is a comfort food.

I think the dum process is safer, i just cook the chicken and rice separately and drain the rice from water to dry it, so I'm already sure the rice are gonna be separated.. then just add the rice and chicken in layers with bit of kewra water, saffron water(it's okay to do without these too), ghee, biriyani masala(store bought) and some fried onions, then let it sit for 10-15 mints,, and it's done, by this process the rice are generally one white and one colourful

The tinola looked more like adobo. 😂 I don’t know why the soup turned into that dark color, and I can tell that she didn’t really like the end result. It needs more ginger and more water. I suggest using chicken broth/stock if you’re going to try to prepare it for the first time to make sure you get the taste right.

To be fair to godfrey he wasn't told the most ideal and traditional way to cook biryani. It's always best to boil and drain the rice then layer the biryani masala and rice, then cook on slow with lid on until the remaining moisture is gone from the rice and the masala and fluffy rice are well-infused. Cooking biryani in a pressure cooker that way is way more tricky and risky compared to the traditional way.

I love Biryani (Chicken, Veggie, Beef, fish)! Tikka Masala is great too! One of my favorites. We also make our own paratha and chapati for our breakfast or dinner
    ❤️ from Philippines ❤️

adding slices of green bell pepper, in lieu of the chili leaves required, will give more flavor to the Tinola Soup. also, some spinach too.

Native advice, side eggplant Omelet with minced fresh tomatoes and shallots on the side. Add salt or soy sauce or for adventurous dish mixed omelet fresh minced tomatoes and shallots and a teaspoon of BAGOONG. not sure if you call BAGOONG a fish paste or fish gravy but bagoong is if you want a salad dish. Add ons could be white raddish. 😁🥗

Good thing she liked the tortang talong. Cooking it is quite tricky than what the guy said as depending on how cooked the eggplant is its texture and taste will varies. It should have same texture consistency as a scrambled egg but if its not cooked properly the middle part usually of the eggplant will be harder and wont have much depth in flavor.

for a first time... you should never have attempted it in a pressure cooker.. should have just given him instructions to parboil the rice separately and then assemble the biriyani. Its a little extra work but is far harder to mess up comparatively! loved the effort though.. loved the enthusiasm.. very pure and beautiful energy!

I am not sure, but I think she customised the biriyani recipe to make it easy for Godfrey. Raw rice cooked in meat broth is pulao or tahiri, not biriyani.
Godfrey did great with the instructions, he can do better next time 😊

I'd cover the pan with lid while making dosai so the steam cooks the top & it doesn't dry & break, which is what happened to your dosai 😢 also, fresh grated coconut & make it more watery.

The tinola could use more water since it’s a soup. The biryani might have too much water or it was overcooked.😅 either way, the flavor was there.

See getting rice to a perfect cook is difficult in pressure cooker so you can cook rice separately
until 80% done and chicken separately. Then layer them in a pot and cook together for 20 mins. It'll taste the same and you will know how much you have cooked your rice.
