Nice wall. I used texture house paint on canvas before to create texture, and used it on block walls to help fill small voids for smoother surface or to make look like plaster, before painting murals, but after priming.... All Water cleanup. Used Kilz or zinsser primer 1st after lite wall cleaning, scraping and sanding. And lite sand between all primer coats. Until your surface is ready to apply the actual paint for artwork. If a block wall is not sealed/painted properly on the opposite side, outside, moisture can end up popping your art off, cause blistering, bubbling, mold and chipping.
Considering doing this for an indoor mural I will be in charge of, what do you figure the longevity of this could be? Will it crack after some time? I've used joint compound in the past but it was as a texture medium on canvas.
As long as your ratio favors the gesso and not the joint compound, then you should be safe. The cracking is minimal and can be filled in after the initial layer is dry (before painting). I haven’t seen any cracking after I completed my mural several years ago when I recorded this

What joint compound did you use? I assume the pre-mix? I'm asking because if you mix in the powder version the ratio would be rather different. ;-)

Basic latex house paint works, or some gesso if you want to spend the money on that much of it.
Would this work for an outdoor mural?
It may, for an outdoor one I'd rather mix with a smooth concrete than the joint compound to promote longevity.
