I've been making cinnamon buns for 10 years, every Christmas morning. as of last year - this is my new go-to recipe! the bread flour is a game changer!
Made this last night and it was delicious. Kids loved it! There were a few tweaks to the recipe and i would like to share. I used instant yeast and All Purpose flour ( not available at the grocery store) and i needed to add a little extra because it was too sticky. I think i left the dough out a bit too long( 90mins ) after the first rise and i ended up having to roll it out bigger, 11" × 17". After spreading the butter and cinnamon mixture i decided to roll from the longer side. I didn't get as much cinnamon rings as the video but i managed to get a good 14 cuts with a slightly smaller roll size. I recommend using dental floss for cutting. I baked it for about 30- 32mins. Despite the changes, it tasted great!!!
I've made these 5 times in the last 9 days-never going to Cinnabon everrrrr again-and I don't have a stand mixer. I like to add crushed pecans to the filling. The best way with the butter is leave the half you're using for the filling just leave it in the wrapper till it's mushy soft and just smear it with the wrapper than sprinkle the brown sugar cinnamon and press with a plate than add the crushed pecans
I made these. These are seriously the best cinnamon rolls I've ever made. I've used many different recipes in the past, this is the best in my opinion. So easy, so soft and delicious! I'm making these again today for tea time.

I had some apples, so I diced a red delicious into small pieces and cooked them in some butter,cinnamon,a little sugar and lemon and added this with pecans to the cinnamon rolls ,when adding the butter and cinnamon to the dough and they turned out amazing!
@@Soxruleyanksdrool Yeah, red delicious can be mealy, but I've also had some that are truly delicious and juicy, not mealy.bBut I've notice when you cook them in a little butter they lose the mealy texture.

I added a teaspoon to the actual dough recipe and omg, they are seriously the best cinnamon rolls I've ever eaten in my life!!! So fluffy and delicious, I made 12 rolls instead of 9 so they could be a bit smaller, absolutely perfect 10/10

Well, I just made this and they turned out amazing. It is the first time I do cinnamon rolls. Also I used fresh yeast from my local bakery so I had to let it ferment first with the milk, sugar and two teaspoons of the flour the recipe uses.
Currently waiting on the 1st rise for the dough so I can't say anything about the completed product yet, but the frosting alone is fantastic! Best frosting recipe I've ever had
MY dough just finished rising for the first 1.5hr and i dont think it rose big enough, its not double in size, do i give it more time or will that mess it up? @@ambitiouskitchen

The person made every change in the book to the recipe and had the audacity to say these weren't the best cinnamon rolls. OMG he doesn't see the irony in his own comment. I made these yesterday, using Strong Flour. OMG so delicious!! The yeast I use must work really well though because the dough ball doubled in size after only 50 minutes. But using the mixer to knead for a full 20 minutes was so important! The dough ball felt SO soft and pliable, I think i could have just played with it for hours! LOL
I have tried this recipe and also making it today again.... cause obviously it came out delicious. The best recipe. It tasted good even without the icing on it.
How long do they last in the fridge (post 2nd rise, pre-baking)? I made these and they turned out okay (I messed up and then successfully salvaged the dough). I'm able to knock them outthe park now but don't want any to go to waste..

Hey! 😊 I converted the quantities of this recipe AND to make sure I was in the good scale of quantities I checked ALOT of recipes on French sites where it's in metric - I'm baking it right now! My dough looks amazing, So here is the recipe from this particular video 😉 for the dough : 180 ml milk 12g active Yeast 50g sugar 1egg and 1 yolk 55g butter Pinch of salt (around 3g) 400g flour For filling : 130g brown sugar 55g butter 1 spoon of cinnamon (depends of your taste) Frosting : 40g butter 80g ice sugar 120g cream cheese

My square pan was a little too small to fit all the scrolls in, so there were really puffy and squished. But to me that didn't matter because it tasted delish!!! Best cinnamon scroll recipe ever! Always remember to use bread flour, it takes them to a whole new level! 😄😍
hi! what size pan did you use? sometimes mine pop up in the middles while baking but I just gently press them down once they're out of the oven :) SO happy you loved them though!
I followed your recipe to the T and they turned out drier and firmer than I thought they would. It seemed like there was not enough hydration in the dough which surprised me because it had been raining here for two days and the humidity was high. The next time I try this recipe I will use a little more milk and larger eggs. When I make bread I use a scale and measure my liquid vs flour ingredients in grams. I will try and determine what the hydration percentages are the next time I make these buns.
Not bad. I would suggest to cream your softened butter (10 tbsp) with your cinnamon and brown sugar to more easily spread your filling. The good thing is is that the brown sugar and cinnamon would be worked into the butter. For a bit of an extra ingredient? Try adding some chili powder, about a 3 or 4 to 1 ratio of cinnamon to chili powder.
I tried ur receipt. It tastes good. However I have a problem. My dough is much wetter and stickier. I have to beat for a much longer time and higher speed. Pls advise. Thanks

I’ve tried making this recipe six times following exactly what you said and the dough just doesn’t come together and is still so tough. the milk and the butter are barely lukewarm and it just seems as if it needs more milk, but I’m not sure what I’m doing wrong as it won’t come together properly
I followed the recipe every measurement and step-I also used bread flor. When I baked it for 23 min it looks so delicious! However when I ate there is slight floury flavour- any idea what did i do wrong? Thank you 😊

I just made this recipe. I'm french, baking for my American husband so I bake all of his favorites 😂 I've never actually had cinnamon rolls myself. I haven't tried them yet but mine look too "bready". I didn't flatten the dough as mush as you. Next time I'll correct that.

Red delicious apples are mealy and therefore inedible. The last thing they are is delicious. I'd make your version but with a non-mealy apple.

What if my dough comes out a bit on the dry side? I’ve tried this recipe twice and it’s been dry each time and barely rises

Ciao Carmine....io sono Canadese quindi i Cinnamon Rolls li conosco molto bene. Ci sono cresciuta! Volevo chiederti quale farina hai usato? Io ho trovato che per avere la consistenza giusta dovo usare un misto di Maniroba e 00. Penso che forse la farina Manitoba in Italia è più forte della farina che si usa per pane in Canada e i rolls non escono morbidi come li da noi. Hai usato Manitoba? Quanto è forte la marca che usi tu?
I'm making them now I don't known how it will turn out though ! Love trying new things but I'm not putting the cream cheese in I just don't like it but don't worry I have my own little icing recipe . Might comment how it turned out . :)
I was gonna make these and I just realized I only have 9" by 13" sheet ;-;

I’ve tried making this recipe six times following exactly what you said and the dough just doesn’t come together and is still so tough. the milk and the butter are barely lukewarm and it just seems as if it needs more milk, but I’m not sure what I’m doing wrong as it won’t come together properly

I followed the recipe every measurement and step-I also used bread flor. When I baked it for 23 min it looks so delicious! However when I ate there is slight floury flavour- any idea what did i do wrong? Thank you 😊

Has anyone adjusted this recipe so you can make the dough and let it sit overnight? Is it the same process just letting the dough sit longer? Should I use active dry yeast vs the quick rise?

Hi there, just recently came up your blog and linked to this video. Thank you for the video - you are so personable and make everything look so easy! I do have a question for now, but also for future reference. If I am making some cinnamon rolls for overnight and then some for a couple of days from now. Can they stay in the fridge? Or should I freeze them? I definitely want them fresh baked for my grandkids!!! Thank you in advance for an answer!
hi! sorry i'm late! if you're making them farther in advance than the night before, I'd recommend freezing them to avoid overproofing!

Ive been making this recipe for quite a while now and I’ve made it multiple times and let me tell this is a crowd pleaser and a personal favourite , it tastes just like cinabon if not better.

P.S. i used instant yeast and ap flour because i didnt have quick rise yeast and bread flour, and it turned out just as awesome, 10/10 would recommend
hello :-) just wanted to let you know that quick rise yeast is instant yeast so technically, the only ingredient you substituted was bread flour

I've never actually had cinnamon rolls myself. I haven't tried them yet but mine look too "bready". I didn't flatten the dough as mush as you. Next time I'll correct that.
