Also, chicken tinga freezes great! I always make a big batch and freeze the rest. It's my family's go to freezer meal when I have to leave out of town for a week.
Great idea! I do the same with my molé, I remove all chicken an freeze sauce. Then when we want molé, we just add fresh cooked chicken and use the broth that I boiled chicken in to make our arroz. Omgosh, now se me antojo! 😉😛
A while back I used leftover roasted chicken, same dried peppers, seasonings and tomato. I thought I was making enchilada filling. Yep, and it was delicious in tacos also. It was Tinga...now I know...but yours looks better. You rock young lady.

You know, I made some of those containers by using empty Goya Soda Cracker containers. I spray painted one citron orange for potatoes and twinkle yellow for onions, then stenciled the letters and designs with spray paint. They turned out sooo CUTE! The cracker containers are sold in Hispanic food section in stores or Mexican grocery stores. They're great cause they come with lids! 😋
I will be using a white sauce because of the lye in the tomato. I was thinking bechamel sauce, chicken alfredo sauce, roasted garlic Parmesan sauce, have you tried a white sauce? Or I could make a red pepper sauce. Your presentation looks tasty.
I have a sincere concern how our food is grown the pesticides used they sip in through the vine that's attached between the vine and the fruits, veggies, and so forth. The soil does not contain the nutrientes to give the fruits, veggies what is required since 1936. If you can grow your own veggies, herbs ala aquaponics the better you'll be I have seen how on Pinterest they show how to do small growth.

I love your channel! You make a lot of the foods I grew up with. So I’m wondering if you know something my Mom made. It was a a sauce she made with cumin and garlic and tomato sauce/gravy. She added flour to it so it was a little thick and she cooked it with pork chops. I don’t know what it’s called. Does anything like that sound familiar to you?

Are the guajilo peppers spicy? Also, can the Chipotle peppers be replaced with something else not spicy as someone whose whole family is prone to heart burn?
You can switch out spice with tomato paste to thicken it up and the sour cream/mexican crema will tone down the acidity of tomato paste. I've tried and it's delicious. 😋

There isn't lye in fresh tomatoes. Some prepeeled canned tomatoes has been peeled with lye.
