They were SO DELICIOUS. I have thought of them many times over the years and wished we would have learned how to make them from her ex's mom. I’m SO happy this came to my feed! The tamales I always buy have been changed-they are smaller, they are wrapped in paper instead of husks, and the filling is pasty instead of chunky like it was. Now I can make my own and freeze them!! ❤

Oh! My favorite food during the holidays! I am actually making some pork tamales on Saturday. My daughter and a friend are helping me. I have fond memories of my Grandmother and my Mom and aunts making them 😊. I learned very young how to make them.❤

So from experience I can tell everyone that the prepared masa has a bit of a bouncy texture to it kind of like what a sponge cake has and tends to be a bit on the drier side.. Versus If you add things such as lard or shortening or even olive oil (remember the potency of this fat will mask the chicken/filling flavor if used) will help with the tenderness of the end product and ultimately give a longer life to the tamal..... As she said it is optional but if you want flavors and texture to stay regardless of the timing you reheat/eat then I would add the extra bit of lard along with baking powder to smooth the dough as well.❤
I love making tamales using my left over turkey from Thanksgiving. Yes of course I use one of your other recipes. All the Mexican dishes I use are your recipes. Lol except my salsa. I like tomatoe base but I still add a couple tomatillo and a poblano. I haven't seen anyone on RUclips do it like that but that's the best flavor I've found.

I love the chicken with rajas y queso! I might try that one this year to mix it up. I usually make plain rajas con queso and rojo de puerco. I NEVER buy the pre-mixed masa, as I love using the meat broth to flavor the masa along with my chili of color. Plus, I don't feel like the stores main purpose is profit (they charge more for prepared masa) and not taste so that is a solid NO for me. I do have issues with cooking my tamales longer than 1.5 hours than most people do. I may be adding too much yummy broth.

My Dad taught me how to make tamales, and he always spread the masa on the rough side because it - according to him - made the masa “catch” onto the hoja. I’ve never tried on the smooth side. Maybe this year is the year.

I've got a question for those who know things. :) I live about 6 hrs from my parents and have considered making some tamales as a surprise when I go visit, dad grew up in New Mexico and loves the food but they don't make the more involved stuff often and I've made them a couple times, but even a small batch are so many for 1 person. Anyway. When I've considered making them in the past I wasn't sure the best method. Cook them the day before I leave, refrigerate, overnight, into cooler with ice on the trip and then steam them enough to reheat at their house OR make them and set them aside and cook them the first time at their house? Any ideas?
