    I've only recently discovered your channel. While I am not vegan there are some foods I try to avoid which can be common in street food for other cities. You're definitely making me consider Yinchuan for future travel plans.

      Haha, this was a spoof that I made based on some of the comments I get from trolls who want to say I'm not vegan for ridiculous reasons like this. I learned very early on in my vegan in China journey to always ask about the oil 😂

    There are many ways chicken feet are cooked. Try some different varieties to better know this ingredient. It's considered a kind of snack dish, or eat-for-fun dish or complementary dish for drinking baijiu (distilled alcoholic beverage). I think the reason it is considered an interesting or even playful eat is because it has lots of small bones that gets the mouth busy to work them out and a gelatonous texture as you're essentially eating the super developed skin and tenon whose texture contrast with other regular meats such as drumsticks or chicken breast. Admittedly it may be an acquired taste. It's like other foods that're based on acquired taste, one needs to "acquire" a taste for it.

      The deboned version is there for the lazy-mouth folks. Amd i don't know how it came to be, but a lot of Chinese people who're considered foodies do like chicken feet a lot. One last trivia about chicken feet. We Chinese like to name our dishes in poetic or creative ways. Chicken feet are actually often called Phoenix Claws 凤爪 actually.

One good idea to explore would be to make these eclectic dishes available around the world including North America by sharing your knowhow with entrepreneurs and that would also provide an opportunity to benefit from your deep knowledge of vegan Chinese food.
