My great Aunt Treva also was a baker and taught me how to make great pies, both "fancy" and "fruit" pies.
Ron and I love to travel. From Spain to Kentucky and beyond we enjoy meeting people and trying new things.

Broiled Tomatoes, Basil and Parmesan
3 Roma tomatoes or fresh garden tomatoes, thickly sliced
Salt/pepper, to taste
6 basil leaves, chopped
½ cup shredded parmesan cheese
Preheat the oven to broil.
In a 1.7 qt. baking dish, place the sliced tomatoes in a single layer. Sprinkle the salt/pepper and basil over the tomatoes. Top with the parmesan cheese.
Place the baking dish under the broiler and broil until the cheese has melted and has a nice brown color.
This is such an easy and delicious dish that is great for brunch. I have been making this for over ten years and it is such a treat when making it with fresh garden tomatoes and basil. I hope you would consider making it for your family.
