Homemade Strawberry Ice Cream

  • 2 cups fresh strawberries, chopped
    1 can evaporated milk
    2 cups half and half
    1 Box Cook and Serve Vanilla Pudding
    3 cups milk
    4 egg yolks
    1 tablespoon vanilla
    2 ½ -3 cups sugar
    3 ½ cups whole milk
    Ice Cream Salt (Rock Salt)
    In a mixing bowl add the chopped strawberries, evaporated milk and half/half. Set aside.
    In a saucepan, cook the vanilla pudding, adding the 3 cups milk and egg yolks. Cook until thickened.
    Add the cooked pudding to the strawberry mixture. Then add the sugar, vanilla and the remaining milk. Stir well.
    Pour mixture into the ice cream canister and place in the maker. Add ice up to ¼ of the maker, then add a layer of rock salt. Alternate the ice and salt until the lid of the canister is covered. Turn on the maker and process until it stops. Unplug the ice cream maker and wipe the lid of excess salt. Remove the dasher and pour into a freezable container. Enjoy!
