Different design principle, ventilation is controlled below on TLUD' stoves. The dampener is the flame shaped ventilation control on front of stove. Grandma's stove had just primary ventilation below the grate and was not a gasifier. Grandma's stove was not re-burning emissions with secondary gasification above the flame. I use a hobo stove my friend made for me to cook on, works great too but I can only cook on it on warmer days and not counting the wind issues I seem to always have. This is an awesome stove, saving my pennies, lol! Take care Todd, God Bless!
The portable Hunter chimney stove is primarily a low mass outdoor kitchen / recreation stove, that can be taken indoors in an emergency, or other for short duration cooking applications. It would not be a great candidate for long term indoor use due to lack of ash drawer. The stove is inverted to remove ash after cooking. Long term heating solutions are better met with stoves with ash drawers that are more easily managed and have high mass designed specifically for heat and cooking. This stove is designed for both high and low power off-grid cooking. This is one of our favorite natural draft stoves used in unison with rocket stoves, due to longer duration burn times and ability to sit unattended at low power. It is our favorite salt block grilling stove, cooking viscous dishes, low fire or high power cast iron cookware cooking, roasting coffee at low fire power, and more. Trial and error. Typically 45 degree elbows are better, hard turns create more flow resistance and may impact emissions. Lots of variables factors (fuel, temperature, negative air pressure, humidity, elevation, wind eddies, etc..., can impact chimney drafting performance.
Todd here is my problem I have used and made the small gasifier stoves but like the Scout it is too small to cook much food, though it is a great stove. The bigger stoves you make are too big to transport on my small boat easily. Why don’t you make a Goldylocks stove that’s just right, not too big, well you get the idea…
Yes, pallets are an excellent source of free wood, that is unless they are fumigated. Do not burn fumigated pallet wood (treated for insects). That would be a potential health hazard.

The TLUD (top lit updraft gasifier) utilizes secondary & primary air, not just primary air from below the stove, that as you point out is easily controlled by a dampner in a chimney on a stove with primary ventilation. In a TLUD stove efficient gasification is controlled by the dampner in the front of the stove to direct more secondary air above the flame for cleaner emissions through the louvered back of the stove. In regard to cooking and controlling the burn period, time is the program. You control the cooking phase by time since it is a vertical batch loaded stove. A typical batch of quality twig fuel is going to run over 2 hours. A well designed stove allows high firepower on the front end of the cooking period, as this is the period the cook is typically browning meat, boiling, frying, woking and so on (the high fire power period). After the first half hour the stove will dampen down naturally for the remainder of the cooking period. This is the low firepower cooking period that can last up to 2 hours with twigs and longer with dense hardwood. The stove will dampen down the cooking process for you. In the event you need higher fire power again, just add more fuel and crack the dampener open, then re-close to clean up emissions. Adding a chimney dampner to a TLUD is going to impact fuel use and emissions. The design principle of this fabulous stove is very different than other wood stoves, rocket stoves, or small gasifiers you may have used. The Hunter starts off at high firepower and during that phase, a Dutch Oven with legs would make cooking possible, however, not efficient. Heat transfer efficiency is gap-dependent. Low firepower would be problematic since so much heat transfer would be lost, defeating stove design efficiency. SilverFire.

But its big and I have to fill up the propane once a month. I'm looking for a small grill that can cook 2 steaks and it needs to be able to get very hot. How hot can the Hunter grill at? All cooking is transferring heat to the cooking vessel, regardless if your using a Chevy hubcap (redneck cooking) or Himalayan salt block (gourmet cooking), or cast iron grill plate. The Hunter can boil a large pot of water faster than the biggest burner on your gas or electric burner on your residential cooktop or propane setup. The hardest task for any stove is to transfer energy (calories into water). The entire point of a chimney stove design is for the chimney design is drafting emissions outdoors. An appropriate pot bottom diameter on the stove top seals the stove top and ensures the hot flue gases and any smoke is adequately directed outdoors. Of course, this does require that the cook is operating the stove design correctly.
