    Directions:
Heat up some oil and brown the ribs, about 1 minute each side. Use multi-cooker set to open lid cooking. If you don't have a multi-cooker, use a normal pot.
    Remove ribs from the pot.
Add more oil to the pot. To the pot, add star anise, cinnamon, ginger, shallots, garlic, and chillies. Stir fry for 1 minute.
Add Chinese rice wine, brown sugar, hoisin sauce, oyster sauce, light soy sauce, dark soy sauce, and rice wine vinegar. Bring to a boil and add in ribs, bone-side up.
Add enough water to cover the ribs (3 cm above ribs).
Put lid of pressure cooker on. Cook for 40 minutes.
Release steam from pressure cooker, and carefully open lid.
Set cooker to open lid cooking and simmer until sauce is reduced and sticky, approximately 15 minutes. When the sauce coats the back of a spoon, it is done. Enjoy.
    Ingredients:
500g of prime ribs (you can also use spare ribs or beef ribs)
    1 piece star anise
    1 piece of cinnamon bark (5 - 7 cm)
1 thumb size young ginger - minced
    2 pieces shallots minced
4 cloves of garlic - minced
3 pieces dried chilli, rehydrated and deseeded
1 cup of Chinese rice wine
    2 tablespoons of brown sugar
    1 tablespoon of hoisin sauce
    1 tablespoon of oyster sauce
2 tablespoons of low sodium light soy sauce
2 tablespoons of premium dark soy sauce
2 tablespoons of rice wine vinegar (or apple cider)
Enough water to cover the ribs

This method of boiling the meat then taking off the lid to reduce the juices till thick really is the best on any meat and makes the meat tender and falling off the bone . I do this with chicken .

@@quinten4401 I 4x the recipe and used 2 instant pots. When I sautéed the ribs in the pots, they kept sticking so if I were to do it differently, I’d cook it in a separate pan. I also couldn’t achieve that sticky texture of the sauce, so maybe once the ribs are done cooking, remove them and let the sauce boil for a bit or mix in some corn starch

Thank you chef, came out good not as good as yours, but i will have to practice it again, but the taste was definitely there!, i think i put too much water and took 30m minutes plus to reduce ,but still could not get the consistency you had, then the meat started to crumble off the bone. But taste wise it was great. I will do again and nail it, Thank you for the recipe chef!!! Regards, Rene . Sarasota, Florida . USA

For the first time, my very picky dad liked something I cooked! I can tell my family get hungry every time the aroma of the star anise & cinnamon comes steaming from the (manual) pressure cooker. I love it when the sauce starts to reduce and gets darker & darker on the wok, concentrating the flavors on that sticky addicting stuff! Thank you Spice N' Pans! :)
