Filipino Adobo

  • Have you ever tried Filipino food? Lumpia was my first try and I love it but this one is my favorite. I'm a huge fan of soups, stews, gumbos and such. This dish definitely has the win on the effort/flavor ratio. Super easy and flavorful just don't skimp on the ingredients. There is almost no technique/know how here. Just put the ingredients in a pot bring to a boil, reduce and simmer. This is the recipe I use. it makes enough for 16 with rice.
    12 cups water
    3 cups white vinegar
    3 cups lite soy sauce (buy the good stuff)
    1 cup Sweet Swine O' Mine Wilsonshire Sauce
    1 onion rough chopped
    4 crushed cloves of garlic
    4 tbsp granulated onion
    4 tbsp granulated garlic
    1 tbsp curry powder
    4 tsp cumin
    4 tsp paprika
    1 family pack of chicken legs
    12 wings flats or drummies
    1 pound of rib trimmings
    2 pounds pork belly cut into cubes
    black pepper to taste at the end when its done
    Chopped scallions to taste at the end when its done
    Mix all ingredients into a large pot. Bring to a boil. Reduce heat cover and simmer until meat is tender. Serve with roasted or mashed potatoes, serve with white rice.
