You've Got To Try This Air Fryer Victoria Sponge - Its So Good

  • We decided to make this Victoria Sponge in our Ninja AF400 Air Fryer. We used 2 6" cake tins and they fit in the Ninja baskets just fine.
    Victoria sponge ingredients
    2 eggs, Weigh the eggs and the rest of the ingredients are the same weight as the whole eggs.
    Self Raising Flour,
    Margerine or Butter,
    Some Sugar,
    1 teaspoon of Vanilla Extract,
    1 teaspoon of baking powder
    The filling is:
    Strawberry Jam and about 150 grams of double cream whipped to stiff peaks.
    Cook on the Bake setting at 160 Deg C for 30 minutes.
    Let the cakes cool before turning out.

    Got my Ninja AF400 a few days ago after doing lots of research and following many of your videos.
    I was worried I’d bought one too big as often cook for just me since my husband died last year.
    But… I cooked my own Yorkshire puddings yesterday for a roast dinner with my son and his partner, roast potatoes, roast carrots and parsnips all in the air fryer. (Meat cooked in slow cooker, green veg in microwave). It was lovely, so thank you for inspiring me.
    Today I cooked a Victoria sponge following your recipe as well and it’s perfect.
    I’m determined to cook more ‘proper meals’ for me now I don’t have to heat my big oven just for me. Choosing the AF400, which seems big for one person, is a game changer. I can use one or both drawers and can cook for just me, or more when I have visitors!
    You both make me smile and I love learning from you and sharing in your lives. Thank you so much x

    Used your recipe this morning but I put the batter all in my 6” tin and baked it in my Instant Pot Pro on the bake setting, and it came out perfect. I have never used your method before but will continue to use it. I am 74 and you are never too old to learn. Thank you.

    My favourite rr use make my mum one ,yours cooked nice in ninja, iv air fryer but try , love fresh cream I normally do butter n icing sugar wipped up but fresh cream looks better Sharon, thanks showing

    Many years ago I won a competition for making a Victoria sandwich, at a local fête once. We all had to use that recipe, except we didn't put vanilla in it. It came out exactly like yours. In fact, I had to make two, as whilst one was cooling my son took a great big bite out of it, so I had to quickly make another. I'll have to make a cake in my air fryer one day.     I've never seen this method for the ingredients. Will have to give it a go. My friend used lime marmalade instead of jam, you had to be quick to get a slice. Yum.

    I was making sponges with my gran years ago she always used her Be Ro cook book never heard to weigh eggs also walnut sponge is yummy, and I still use her book today wouldn't it be easier to go by a recipe and time saving, ps I enjoy your Sunday outings

    Hi Martin and Sharon, i've never heard of doing it this way before, i will do it your way next time. I always make Yorkshire puddings the way you do Sharon. I've just made a Victoria sponge going of the bero book recipe. I did 7 ozs of flour, sugar and marg and 3 eggs and some vanilla extract. I did it at 140 degrees for 25 minutes, i think my tins were either 8 or 9 inch, i did it in the dual blaze. I did forget to take the crisper plate out but they didn't turn out too well, i maybe had the temperature too low. I'll have one more go using your recipe and if it doesn't turn out then i'm going back to my main oven for cakes

    Your Victoria Sponge looks great. I was taught this method in school cookery classes 64 years ago. Unfortunately my husband is type 2 like you Martin but recently is gluten intolerant as well. I made your marble cake using gluten free SR flour and Truvia caster sugar for baking. It turned out fine. You could try that so Martin could have some cake. You'd just need a different filling. Love your videos.

    Hi there folks , they looked good enough to eat! I have the Casori air fryer, I always make an egg sponge , which is , 3, 3 & 3, I use free stand mixer & let it mix away , plenty of air in it , it's very light . Your good to watch the pair of you , thanks again, from me in Scotland .

    Looks great. I have an Instant double drawer AF and the drawers aren’t quite as wide as ninja. So I will use two small loaf tins - so it will be an oblong Vic sponge.
