    Victoria Sponge
    The Sponge
    200g / 7½ oz softened Butter
    200g / 7½ oz Caster Sugar
    250g / 9 oz Self Raising Flour / if you use All Purpose or Plain Flour add an extra 2 tsps of baking powder to th recipe
    5 Medium or 4 Large Eggs
    2tsp Baking Powder
    ½tsp Vanilla Extract
    The Filling
    300mls of double or Heavy Cream
    1½tsp Icing or Powdered Sugar
    1tsp Vanilla Extract
    120g of Jam
    Powdered Sugar for dusting

    Also being retired due to health issues I find cooking and baking great therapy to stop me getting bored. Loved the tip about making your own caster and powdered sugar, not having a spice grinder (yet) I just used a pestle and mortar. Saved a few bob already

    I have watched several videos on baking a Victoria sponge cake. This is the best- it is methodical with clear explanations of each step. I am English domiciled in Norway and I really like the Northern accent - confidence inspiring. I will be trying this recipe.

    Well ! I've given up reading, watching t.v.,knitting etc etc. I just spend my evenings watching Mr Kirkwoods lovely you tube videos.     Me and our 12 year old daughter Inga have tried our hand at this cake. We added the sugar before seeing the part about making it fine, turns out ours is jam sugar! When it came time to do the "drop test" our batter stuck to the spoon like clay and we laughed so hard!!!! It's in the oven now and we'll give an update how it came out after our wee apple timer goes off!

      Have often thought about doing my own castor and icing sugar. It's amazing the difference in price great tip John.. Cake looks delicious. As per 👍❤️

    You're so helpful with all the tips you give. I had no idea about granulated sugar becoming caster sugar becoming icing sugar. Some of us (most of us?), especially those of us who only occasionally cook and bake, or barely do it at all, don't know this stuff and so head off to the shops buying items that we think are different/separate. But it's not just this, it's all the little tips throughout all of your videos, which when I've followed your simple instructions and the tips have always seen me have a successful outcome.
    Now I gotta go buy me those sandwich tin things coz we ain't got them. I didn't know they were a thing until now.

    thanks John, literally just made this, as i was dividing the mixture i realised i had an 8" and a 10" oops, so just used the 8" and baked for 33 minutes, cut in half and a lovely birthday cake for a friend.

      I've watched loads of the videos . I baked at the weekend and made a lemon drizzle cake and millionaire shortbread . But John's recipes and methods have shown me much easier ways . I'm 70 so it proves we are never too old to learn . Keep up the good work 👌

    Success John - Thanks. Your hand made method brings back memories of my Mum making them in the 1950's/60's though not tried until now at 68. Especially impressed that you included the Americans in with their different terminology for powdered sugar, all purpose flour and degrees Fahrenheit too.

    I made this cake today and it turned out delicious. The batter looked a bit too thick at the end so I melted and added around 20-30g butter which helped. Thanks for the recipe.

    Hi John …. I did this yesterday for my wife’s birthday cakes… beautiful…. But my batter didn’t turn out the same…. In the video you showed it being thin and falling of spatula….. now I did add 1 egg at a time..l but I think what you described about the mixture going abit bitty happened….. not sure why… maybe didn’t mix hard enough or butter started to harden up abit… but it was more of a thicker batter paste… still turned out beautiful and light airy… I was tempted to add milk or something.. but if anyone else is reading this I would always keep to johns recipe… as you know your guaranteed great results! Even if you have a wobble half way through like me…

      Sounds like your eggs were a bit cold and the mix has split, but it should still have come together when you added the flour, but it also sounds like you quantities are out somewhat.

    Another lovely cake John. I'm not a chef but what I do when I'm adding the eggs is add a little bit of the flour at the same time so it doesn't curdle. I don't know whether this is the right thing to do it not, I think I read it somewhere

    Thank you John, splendid recipe... my batter curdled and after the addition of the flour was thick like a dough....I moistened it with some milk and it turned out amazing, light and springy to the touch.

    Delicious:) I have just made this for the third time. I would leaf to cool on a backing try for half hr like Chef John says. Then in the fridge for a further half hr. This is to make sure its cooled way down. Thanks once again Chef John. Sand dancers are the best and not the worst..
