225g butter
225g caster sugar
4 large free range eggs
1tsp vanilla extract
225g self raising flour
About 3 tbsp of milk to loosen batter (if necessary)
1 jar of good quality strawberry jam
250ml double cream
To Finish
Dusting of icing sugar
A good handful of fresh strawberries, halved

I got this from my friend and i see it a lot in other victoria sponge cake videos/recipes but it makes a absolutely lovely touch to add sliced strawberrys in with the cream and strawberry jam.

vanilla buttercream is amazing in this as well!!
tip: if you put the cream on first, the jam doesnt spill over the edges of the cream, so it is much easier to spread and keep in place

This brings back so many memories! I loved victoria sponges and also had a mild obsession with kerrygold where I wouldn't eat butter unless it was salted and kerrygold. Children are so strange.

Ah, Kerrygold butter....the best!! Funny I always use salted Kerrygold butter in my baking, you just can't beat that flavour!! Thanks Donal...you are so right, it is the perfect summer bake! I'm going to a bar-b-que this weekend (Irish weather permitting of course...lol) and you've given me the inspiration to bake this to bring for the afters! :)

A lot of the butter here (in the US) is white.
Willowflower No it is not. Butter is yellow.
The butter that IS white is the whipped butter and it's delicious and fresh. So if that british person commenting above has a problem with it, kick rocks.
I have sticks of butter in my fridge that are white.

Coincidentally I made this Cake last week (and using KerryGold as well! ) and OMG So buttery, light and delicious - a bit salty at the bottom but in a pleasant way actually. I didn't use jam but fresh strawberries. Next time I'll try the jam again.
