    Victoria Sponge Cake in the KYVOL AF600 Air Fryer
    Servings: 8
    Ingredients:
    12 ounces self rising flour
    12 ounces sugar
    12 ounces unsalted butter, room temperature
    6 eggs, lightly beaten
    1 cup strawberry jam
    ½ cup caster/superfine granulated sugar
    Directions:
    Step 1
    In a food processor add the flour, sugar, butter and eggs. Pulse 4-5 times until the mix is combined and there are no lumps.
    Step 2
    Line 2 six inch cake tins with baking parchment and spray with vegetable oil (base and sides)
    Step 3
    Divide the batter between the two cake tins.
    Step 4
    Preheat the Kyvol air fryer on its preheat setting 400 degrees F for 5 minutes
    Step 5
    Bake one of the sponges for 30 minutes. Remove to a cooling wire and bake the second cake.
    Step 6
    Spread jam over the top of one of the sponges. Place the second sponge on top and sprinkle with the castor sugar.

    I am Canadian and my grandmother used to make a cake similar to this for my birthday. Only difference was she "iced" it with whipped cream. Best cake ever!

    I too love a slice of Victoria sponge cake with a cuppa, Darren 😋...I add a layer of butter cream under the strawberry jam. I know it isn't authentic to the original recipe, but - as you know - it's common practice over here - and it's delicious. I love your videos and thank you for sharing your recipes and anecdotes. 😊

      My grandma put a lovely layer of home made butter cream in hers 👍🏻I couldn’t imagine it without ? But who are we to question a royal chef 👍🏻she also used raspberry jam 👍🏻

    You can buy superfine sugar at any grocery store. Domino (among others) makes it. I use nothing but superfine when I make meringues.

    My grandmother loved those. She only made them rarely though. I had one once for my twelfth birthday (well, late birthday since that year I visited her in the summer and my birthday is in January).

    That Victoria Sponge looks so good! I've always wanted to make one. I'll have to bring out my own air fryer the next time I want to have cake but don't want to turn on the oven. This would be perfect for tea.

      We went to Bakewell last summer with the intention of bringing a few Bakewell puddings back but at £12 for a small one we changed our minds, we bought one for ourselves and must be honest it was delicious 😋

An enduring British pleasure and part of our culture, adopted by our old friends where we settled and should be enjoyed by everyone on these isles. ( I never took this seriously and worked my break until an old fella explained that men had made sacrifices for this privelidge).     Just out of hospital after a stroke. I would totally love a cup of tea and some Victoria Sponge right now!!! Thanks Darren for all your vids. Gotta love the all in one method!! I wonder if the Royal chefs bring favorite meals or other foodie treats to the RF when, as with HRH Prince Philip recently, a royal stays in hospital, just to cheer the patient up?? Maybe that is too personal a RF question!!!!

    Thank you for using ounces and cups! My only will be buttercream in the middle, under the jam (to keep the latter from soaking into and/or running out of the cake). Thank you for the history lesson, too. I had no idea Bird's custard powder was invented by the same man.

    Your Victoria sponge looked so yummy. One day when I go to London and and have afternoon tea, when I have a slice of sponge I'll be thinking of yours. I learned something new from this video , and that is why caster sugar is caster sugar and it's because of the casters it was put in . Just a couple of questions, where was Winston, will he be making an appearance in the next video and did he get a slice of sponge?

      Winston was on the shelf , behind Darren's shoulder. I also used to wonder about castor sugar, from British cookbooks. I didn't know that it was the same as superfine. I always learn how Darren's videos.

    Darren, you're absolutely lovely and I always thoroughly enjoy your videos and memories. I love British cuisine and dishes like yorkshire pudding, sunday roast, scones, shepherd's pie, haggis (yes I actually LOVE it!), golden syrup sponge pudding, bubble and squeak, pasties, pork pies, builder's tea etc., but to be honest, I've never enjoyed the classic victoria sandwich with just jam in the middle and castor sugar on top. Respectfully, I feel it needs some cream so I always sandwich it generously with a layer each of jam and whipped double cream and it is divine! Thank you for sharing your recipes and memories. They are a wonderful way to feel connected to Diana ❤️

      You can split the one cake in half and just sandwich the one cake

    This is rather interesting because it has given me a clue as to where I have been going wrong with Victoria Sponges; I am always disappointed with my sponges because even though they have a lovely texture and flavour, they never really become towering beauties - and looking at the quantities given in your recipe, I can see that the recipes I have been using never yield quite enough batter for the size of tins! I mean, they look fine, and with a cream filling look respectable, but even with all the baking powder in the world, the sponges never really had a chance! So I will be giving your quantities and size of tins a go, and I am sure they will come out a lot better!

    Love a good sponge. Might have to look into an air fryer, I didn’t know you can cook cakes in them. Just one thing when you say the temperature that you are cooking something at, could use please say whether it’s C or F. I thought the English are Celsius the same as us in Australia but I may be wrong. Keep up the good work. 😍👍

    Wait ... 300 F or 400 F? Recipe says 400 F which I just used and had a smoking disaster. When you replaced the 2nd cake you said 300 F. Which is correct?

    Traditional filling for Victoria sponge is raspberry jam, not strawberry. All the sources point to that.

    Hang on: The Victoria Sandwich first appeared in print in 1861, but could not evolve into the cake until baking powder was invented in 1843, 18 years prior? Uh, Darren, no trolling here, but could you please clarify?

    I love this channel altho I am no cook. We always had kitchen help when I was growing up so I was never allowed into the kitchen. Ever. I went to Texas for lunch once. That is a family joke. I went to Galveston to visit a childhood friend when I was like 18. One day in I called my Mom to say I was cutting the trip short. She put my Father on the phone who asked if I needed the police. I said " no I just want to come home ". Texas was the most horrible place I have ever been to. Within 5 minutes we had multiple cop cars to race me off to the airport. The whole thing was soo embarrassing but my Dad was the best :) He really was. He wasn't taking any chances. I would be very interested in how you ended up in the worst place in the world and if you ever think of going back to the UK ? Also, I am ordering the spices !

    Lovely recipe for a Victoria Sandwich, but, since it's not a Genoese Sponge mix, it's not actually a sponge cake but a sandwich cake - which is great, because it lasts a lot longer (if I can resist another slice! LOL)
