I would like to hear the options for keto or paleo sugar substitutions. I can't have erythritol and birch xylitol doesn't create structure and allulose is too moist instead used for caramel. I did have success with isomalt last year I have to try that again I also have inulin. Recently I used honey, coconut sugar and date syrup but it tasted like blackstrap molasses and also too sweet I want to stick to keto.
