Baileys Chocolate Cake - Easy Irish Cream Cake Recipe

    Ingredients for an easy Baileys Chocolate Cake recipe
    Flour - 125 gms
    Sugar - 225 gms
    Cocoa Powder - 36 gms
    Baking Powder - 1 tsp
    Baking Soda - 3/4 tsp
    Salt - 1/2 tsp
    Baileys Irish Cream - 125 ml
    Oil - 20 ml
    Butter - 60 ml (melted)
    Egg - 1
    Vanilla - 1 tsp
    Hot Water - 125 ml
    Whipped Icing
    Whipped cream - 150 gms
    Baileys Irish Cream - 4 tbsp
    Icing Sugar - 2 tsp
    Vanilla - 1 tsp
    Method:
    In a large mixing bowl add all your sifted dry ingredients and give them a quick whisk.. Next add in the wet ingredients except the Hot water, and give all of this a good mix with a hand mixer or a stand mixer. Fold in the hot water and give a final mix with the mixer till everything is well combined. Give one last scrape to the bowl to make sure no dry ingredients are left at the bottom of the bowl.
    Divide this batter equally between 2 6" round tins, which are greased with butter, dusted with cocoa powder and lined with parchment paper.
    Bake at 350 f / 180 C for about 30-35 minutes or until a skewer inserted in the center comes out clean.

    Chocolate therapy by nishi yes I followed ur recipe down to a T! Took it out the oven left it in the pans for ten minutes then I got them out and let them cool on the wire rack but bits were falling from around the sides of the cake so was a bit worried on how it would taste but omg it tasted amazing everyone who had a piece on Christmas Day loved it! I used caster sugar would it have been that as u only mention in your ingredients sugar or should I use granulated sugar? Thankyou for getting no to me appreciate it Leanne

      Hey Leanna, im so happy everyone enjoyed the cake and that you all had a lovely Christmas. Im still a little miffed as to why it would crumb on the sides... Did u grease and dusted with flour ??
      I was onto the sugar too when u said it was falling off... But i use castor sugar too. Not sure if that would be different where u are. I think the texture of the sugar should be same everywhere. Maybe try again 😉, second time a charm. 😁 happy new year.

      Great.. Yeah i think have a go again, dust the pans this time round, and maybe bake for a couple more minutes longer so as the sides of the cake leave the pan... Then take it out. Lemme knw how it goes.

    Hello. Do you mix all the ingredients for the cream at the same time? Mine is not coming out with the correct consistency.

      Hello Gloria,
      Yes i do infact mix all the ingredients together, the cream is super chilled, the bowl im mixing is absolutely freezing and the beaters too were kept in the freezer before using. Maybe u can try to have a ice bath under the bowl you are making the icing in. And make sure everything is chilled before starting. Also it may not form stiff peaks but just about. What else.... Ahh maybe the weather is too hot where you are, try doing it in a air conditioned room... Let me know if i missed something or was there something else at play here.

      Leanne.. Im not sure.. I don't have much to go by. But if you followed the recipe to the T, you should not have had any problem. Unless you added little extra liquid (baileys) for that extra happiness. I really im bumbed that it didn't work out for you. Maybe also check the temperature of the oven. Did u let it cool completely before taking it out the pan ??

    If i add the final batter in a 7" tin and slice it horizontally into 2 pcs will it be easy. I generally slice all my cakes horizontally. doubtful as I am not sure of the texture /softness of the baked cake

      @Rufina Menezes this cake bakes super soft and moist. Baking the full recipe into 1 7" tin would not be advisable, as it would be alot for 1 tin and will most likely spill over or create a unwanted dome on the top which you will have to cut off. Baking in 2 6" tins gives you just the right height. You can slice them each into 2 if you wish to have more layers and cream in between.

      @Sumitra you can 1/4 cup of curd or make a flax egg, for that mix 1 tablespoon ground flaxseed with 2.5 tablespoons of water and leave for 5 minutes on the counter, and then use it as a egg substitute.

      @Nay i would say a medium, which would be anywhere between 55-60gms . Here in India we dont often find the large ones. But i do make sure not to use the really small ones that are like about 40-50 gms.

      Hello Sargam, I had got mine from T-3 Duty free shop. You can also check the more fancy liquor shops in and around Delhi. I know one is in Metropolitan mall in Saket, Delhi if you are based here. Best is to ask someone who is travelling to get from duty free as that would be much more reasonable to procure. Hope this helps. 🙏

      Hello Mary, okay so brandy is very different from Baileys as baileys if a cream based liqueur whereas brandy is a spirit. So there is definitely going to be a texture change there. Let me know if you do us it and how it turned out.

      Hello Praveen, yes you can substitute egg with either 4 tablespoons of buttermilk or curd. It keeps the cake moist and won't change the taste much. Hope this helps.

      Hello Kayla, I have used unsalted butter in this recipe. Although you can use salted if you don't have the unsalted at hand, subsequently i would not add the salt which I did with the dry ingredients if I use the former.
      A little salt in this recipe helps cutting the sweetness of the sugar and Bailey's here. Hope this helps. Happy baking

      And would the recipe work with making vanilla cake? Minus the cocoa powder? If so, what should I do differently to it?

      Yes unsweetened cocoa is what I used. It will be great. If you wish to make it into a vanilla cake, I suggest omit the cocoa and add equivalent amount of more flour to the batter. Also add 1tsp baking powder to the batter and remove the baking soda if making a vanilla cake. I would suggest giving it a test run first.

      The flavour of Bailey's and the texture is just great with the chocolate cake. That is just my opinion. But do let me know how it turned out incase you are making this into a vanilla cake. Either way you can't go wrong with Bailey's right 😁😁.
