- The chocolate whipped cream cake recipe (16cm cake)

Chocolate sponge cake (16cm pan)
15g cocoa powder
35g milk
15g butter (or oil)
3 eggs
85g sugar
75g all purpose flour
Bake the cake at 170C for 40 minutes
Coffee syrup
75ml hot espresso
10g sugar
15ml Rum (optional)
Chocolate whipped cream
110g milk chocolate 54.5% (couverture)
110g heavy cream (to melt the chocolate)
350g cold heavy cream
Chocolate ganache on top
27g chocolate
27g heavy cream
Pour the ganache at 30C

Just made this cake for my birthday it turned out amazing. So delicious. The hint of coffee (cake syrup) makes a huge difference. It was moist and soft and chocolatey. Just great overall. Thank you! ❤️
(though I used a little more chocolate in the cream and the cake)
can you give tips to make that sponge cake because when i make it my cake becomes lumpy and the dough contains a lot of foam
@@noraininsaman3803 Oh I'm sorry I don't know much about baking I just follow the recipes... Maybe you're not heating the eggs mixture enough or too much. Also try to fold the flour in softly, the egg foam is very fragile. My cake wasn't as big as theirs but it wasn't lumpy or anything it was still kinda fluffy. Hope you nail it next time!
@@nothx8642 u need to keep it for 10 min inside the oven after it is baked..to avoid tje decrease of its size ..after 10 min from turning the oven off
@@danivida5928 thanks for the tip! Another thing my mom does is to turn the cake upside down (on 3 glasses for example so that the cake doesn't touch anything) so the gravity doesn't push it down and make it flat. It stays fluffy!
@@noraininsaman3803 I have the same problem. My last 5 cakes that were this type had lumps of flour. I fold it so gently already, I don't know what else to do or what I do wrong. Maybe wrong type of flour? I just don't know
