Goan Meatloaf Recipe

  • This recipe taste similar to a can corn beef. You can use it make meatloaf sandwiches with butter or mayo.
    Serving Size: 6-8
    Ingredients:
    1 lbs ground beef
    1/4 lbs of ground pork with some fat
    1 tbsp + 1 tsp of pink curing salt
    1/2 tsp of coarse black pepper
    1/2 tsp of nutmeg powder
    2 white bread slices quickly soaked in water and set aside
    1 whole egg
    Directions:
    Heat oven to 350F.
    Squeeze the additional liquid out from the soaked bread slices and mix it along with the rest of the ingredients thoroughly with clean hand.
    Spray bread pan with some oil and pack the meat mixtures into the pan nice and evenly.
    Bake for approx 1.15 hrs till internal temperature is approx 160F.
    Drain all the liquid and fat.
    Cover and chill in the refrigerator overnight or enjoy it warm out of the oven.
    Pressure Cooker: Pressure cook for 45 minutes cover the container with aluminium foil.
    To make meatloaf sandwich in a blender mix meatloaf and some softened butter till a smooth paste. Apply the paste on toasted bread. Enjoy!

    When i prepare this goan meatloaf,n cook it in cooker using double boiler container, when it is cooked it throws lot water/soup whereas baking in a oven it comes out dry.
    What does one do with the soup that comes up as not all people have oven at home. Please advise some solution.

      I don't use the soup water. Most meats in the US are injected with water to make it look plump and that is what causes meat to give out water when cooked in the pressure cooker.

    That seems like a hell of a lot of curing salt for the amount of pork.

    Can i substitute beef with chicken n bacon with pork? I want a small measurement just for 2 people so can i reduce 1kg of beef with 1/2 kg of chicken mince then how much of pork or rather bacon will i have to use for it? Will half kg of chicken mince with 1/4 kg of bacon be appropriate for this recipe? Pls reply.

      Hi Ingrid, I have not tried it with chicken so I wouldn't be able to say., but if you want a smaller portion reducing the recipe to half would work.

    You don't need that much curing salt do you? It is a chemical and is known to be carcinogenic

      Kevin you can adjust the curing salt according to you preference or not use it at all. It just help in maintaining the color of the meatloaf.

      Merlyn, salt petre is same as curing salt as they do not sell it under that name in the US..

    Did you try steaming this meatloaf instead of baking it?

      No I haven't, but I think my mum would steam it in the pressure cooker.
