Meatloaf sandwich is my absolute favorite thing in the whole world! My mom used to make them for me for lunch, I remember in the 8th grade when our cafeteria was closed down for the yr! Eating them now always reminds me of my dear Mom( love & miss her so much!)!!! This recipe looks sooooooo good! Great blog/post!♥️

And the boursin cheese in my area was about $7 so I was praying it was worth it. Man it delivered, it was full of flavor, held together well, and made my kitchen smell amazing. I made this last night and OMG! Best meatloaf I have ever tasted and I actually made it! Amazing! My wife loved it. And by the way, I hate sour cream but you said take your word for it and you were right. I think the secret ingredient in the Boursin cheese. And cooking it on the wire rack was ingenious. I also used the pork with the ground beef. It was perfect. Thanks for sharing! You are helping me look like I know what I'm doing in the kitchen!
A little tip to elevate this recipe is to sear it in the broiler first. When seared first it will allow the glaze to stick to the texture. After you're sauced up, slightly caramelize under broiler. Glaze again then bake until finished. Turns out with a nice glazed crust and juicy inside.

Looks delicious! I've made a cheddar cheese meatloaf like my mother's, lowfat turkey meatloaf with chicken & wild rice as a base and just experimenting on others. My grandmother made an out of this world meatloaf when I was 12 and I've never been able to replicate it. If we go out to eat and meatloaf is on the menu, that's what I get.

Use Saran Wrap inside a load pan and form a loaf. Then chill or freeze a tad and pull the loaf out easily. Remember, the top will be the bottom so flatten it out good. See Alton Brown meatloaf recipe. I’m trying this one! 😋Looks SO Good!
I made this (without barbecue coating) and it was a big hit. My husband likes his plain with beef gravy and we like it coated with ketchup. It was terrific. I had a hard time finding the Boursin but think it made a huge difference, that and the sour cream. I will make it with the barbecue sauce next time to see how it turns out.
Just my opinion... Since I don't eat pork, I replace that with ground lamb with the beef. Secondly, I've used bread crumbs in the past, but to me, it makes the loaf "gritty", so I go back to old school and use crushed Saltine Crackers. I do cook my loaf in a glass, pyrex dish which still gives a great crush, but also keeps all those spiced juices absorbed into the loaf. Lastly, I just use Sweet Baby Ray's BBQ sauce to candy the top. No need for mixing extra ingredients. Serve with xtra sauce if needed. Yet, essentially the same. Good stuff!
Sweet Baby Ray’s is the best barbecue sauce ever made imho! I first saw it in my local grocery store, thought I’d give it a try and am I ever glad I did. (I buy the plain sauce as we have those who don’t like spicy or hot flavours; my son adds hot red pepper flakes to his own plate.) Looks divine! My Mom always used crushed corn flakes instead of bread crumbs as a binder, but I like to use crushed saltine crackers. She made her topping from tomato sauce and brown sugar. I use tomato paste, brown sugar and ketchup. I love a good meatloaf sandwich with the leftovers. Thanks for sharing. I’m going to try your recipe.
1st of all it takes longer than 2 or 3 minutes to soften the onions & peppers, and onions be translucent, I would say around 10 - 15 minutes on low heat with a lid on and keeping stirring them and a eye on them, otherwise at 2 or even 3 minutes veggies would be very crunchy and raw. Also I could not find the Boursin in any local stores around me (small town) , but I did find Rondele" cheese spread garlic & herb used that and my meatloaf came out awesome!
My family could not stop eating this. I made 2-5lb meatloaf’s. 😂 even day two they said it tasted bomb. I substituted bread crumbs for broken bread(my son loves actual bread in it). I can’t thank you enough. 👍🏾

Winner Winner, Meatloaf Dinner!! I made 2 of these meatloaves last night. We are a family of 9 and it's often hard to please all tastebuds. I have one specific child that refuses any meatloaf so I just took some of the same flavorful meat and made her a burger patty with it....she approved. As for the rest of the fam, 8 out of 8 people loved it and requested 2nds. When I try a new recipe, I have everyone vote on if I should keep or toss the recipe. This one was not only a "keeper," but I was also asked when I planned to make it again.🙌 The sauce was also a hit and my boys & husband wanted extra. Note: It was flavorful, juicy, had a nice crust, sticky sauce, held it's shape perfectly, and was not soggy on the bottom like my (now) old recipe. This looks delicious and I always sauté my veggies first. Love catsup topping with brown sugar and worst word in the world sauce or a bit of soy sauce. One tip that guarantees a moist meatloaf (per Ina G) place a pan of water in the oven while cooking meatloaf. Perfection!

This was the absolute best and juiciest meatloaf recipe. I misplaced this recipe after moving. I am so glad I was able to relocate it. I work on a commercial boat in Alaska. These freeze beautifully. I have even made them into individual mini loaves, meatloaf meatballs, even stretched them out into the length of a bun for easy assembly and plenty seasoned glaze and crunch crust. i used to always use Ritz, but recently just started using Stove-top in its place, hands down best meatloaf filler!

To make a low carb meatloaf, I like to use finely chopped mushrooms as a substitute for the breadcrumbs. It's awesome!
You can also use ground up pork rinds.
Hope no one is allergic to mushrooms at your house! MANY people are allergic to mushrooms and have no idea. Use caution with ALL mushrooms. Thank you.

Looks divine! My Mom always used crushed corn flakes instead of bread crumbs as a binder, but I like to use crushed saltine crackers. She made her topping from tomato sauce and brown sugar. I use tomato paste, brown sugar and ketchup. I love a good meatloaf sandwich with the leftovers. Thanks for sharing. I’m going to try your recipe.
That Meatloaf looks delicious. Instead of using ketchup I use French or Russian Salad Dressing. Yum Yum. Now I want Meatloaf for dinner.

Exactly! This recipe looks delish! learned a long time ago when fixing meatloaf that sautéing the veggies first makes a big difference.

1st of all it takes longer than 2 or 3 minutes to soften the onions & peppers, and onions be translucent, I would say around 10 - 15 minutes on low heat with a lid on and keeping stirring them and a eye on them, otherwise at 2 or even 3 minutes veggies would be very crunchy and raw.
Also I could not find the Boursin in any local stores around me (small town) , but I did find Rondele" cheese spread garlic & herb used that and my meatloaf came out awesome!

My family could not stop eating this. I made 2-5lb meatloaf’s. 😂 even day two they said it tasted bomb. I substituted bread crumbs for broken bread(my son loves actual bread in it). I can’t thank you enough. 👍🏾

Made this today, and I was pleasantly surprised. Very good and was also very moist. This is the only way I will be making meatloaf from this day forward. I froze the left over sauce for next time.

Winner Winner, Meatloaf Dinner!! I made 2 of these meatloaves last night. We are a family of 9 and it's often hard to please all tastebuds. I have one specific child that refuses any meatloaf so I just took some of the same flavorful meat and made her a burger patty with it....she approved. As for the rest of the fam, 8 out of 8 people loved it and requested 2nds. When I try a new recipe, I have everyone vote on if I should keep or toss the recipe. This one was not only a "keeper," but I was also asked when I planned to make it again.🙌 The sauce was also a hit and my boys & husband wanted extra.
Note: It was flavorful, juicy, had a nice crust, sticky sauce, held it's shape perfectly, and was not soggy on the bottom like my (now) old recipe. I printed this one out for the family recipe book!!!

This looks delicious and I always sauté my veggies first. Love catsup topping with brown sugar and worst word in the world sauce or a bit of soy sauce. One tip that guarantees a moist meatloaf (per Ina G) place a pan of water in the oven while cooking meatloaf. Perfection!

Hello Mat, I wanted to let you know that I made the meatloaf last night using Turkey Meat & I asked my husband did he want some he said no not Turkey meat loaf, I said ok, I made him Turkey tacos, HOWEVEA, the meat loaf is really good and the husband has eaten more than half of it already, 😂😂😂. I am so glad I was able to relocate it. I work on a commercial boat in Alaska.
These freeze beautifully. I have even made them into individual mini loaves, meatloaf meatballs, even stretched them out into the length of a bun for easy assembly and plenty seasoned glaze and crunch crust. This is recipe is definitely going in my keeper box.

@@shawne2681 I made this today ,I must admit I was a bit nervous about using boursin garlic and herbs. It came out delicious ,they only thing i would do differently is use either non-stick or Parchment Paper on the rack Lol other then that Mr Make It happen is batting a 1000 for me

Did this tonight. HUGE hit. Making a 2nd one for sammies tmrw. Only difference is we put it on the smoker for a cpl of hours then glazed and bbq'ed for 40 mins on 300⁰ so so good!

I use the loaf/bread pan to shape the meatloaf. Transfer to a larger pan halfway before glazing.
