I never made meat loaf a day of my life but my husband loves it so definitely taking the extra mile and doing it your way 🙌🏾 I take on the challenge being a newbie in my first time 😂
Maybe it’s regional, but I grew up in meatloaf with red sauce. My family is born and raised in the 757 and red sauce is the only version we recognize and I was VERY confused the first time someone tried to give me meatloaf with brown gravy 😅
My mom's meatloaf looked like your meatloaf. She used ketchup in it and on top. It was sooooo good. She also would have a bread mixture in between the meat. It was soooo good. We're from Alabama.
I've had both styles of meatloaf but my moms always used a tomato based sauce on her meatloaf but the loaf itself was prepared like classic loaf. I'm going with your version 👍🏽
Both look great. I make mine with oatmeal, milk, eggs, onions, garlic, spices of course & a brown sugar, ketchup, mustard, nutmeg glaze. It's very flavorful.
Good afternoon! I made your meatloaf last night and my family and I loved it. I also made your green beans which I been making for a while and my family went back for seconds! You never miss! Your meals are amazing! Thank you for sharing🙂
Honestly your meatloaf is more like my Mom’s. She didn’t serve it with gravy. Her meatloaf and meatball mixture is the same. She put onions, peppers, sometimes mushrooms, always grated cheese. She used fresh and dry herbs. No pastes or blends. She added an extra egg. Somehow it lightens the mixture making a crust and fluffy inside. The other difference is she did not use bread crumbs. She soak bread in water or milk, squeezed it and add that. Again her meatloaf was moist inside. No glaze or gravy. We loved the outer crunchy bits. With her meatballs, same mixture and she dropped them raw into the pot of homemade tomato sauce. The sauce simmered for three hours. Meatballs went in last hour. The longer you cook it, the sweeter the tomatoes. No sugar needed. No tomato paste. Too much acid. No baking or frying first. Dropping them raw allows sauce to get flavor from meatballs and meatballs absorb the moisture of the tomato sauce. The best of both it the next day. Fresh fluffy white bread, Mayo and a healthy slice of cold meatloaf or meatballs. Only better sandwich is a thanksgiving sandwich. 👍🏻👍🏻👍🏻
I have been cooking with you for a while and not only have i use your recipes but now when i cook i think " what would Mr.makeithappen put in here" I love how you explain different ways to use seasonings as well as how i can differently season something. I find myself looking up my already perfect recipes on uour page just to see if there is a different and better way to make it.. u have never disappointed me, ur recipes are amazing!!! Im a vegeterian so i like eat plant based ground "meat". When i make a meatloaf,i like it to have the sweet glaze sauce on top with diced tomatoes inside. Ill put a pan of water in the oven because i think it helps with the moisture of the meatloaf
I just made your meatloaf and the sauce and also the mashed potatoes from the other video and WOW ! EVERYONE LOVED IT 😍. it was BOMBLICIOUS 😋 ✨️. Thank you for sharing it with us. P.s. New Subcriber ✔️
My meatloaf is made with a pack of onion soup, chopped garlic in the jar from the produce section; pepper, got to have pepper, especially fresh, cracked pepper; two eggs, and a little bit of water, just a little bit. I also top mine with ketchup. I don’t make mine with gravy for some reason. I like it with ketchup and put it in the oven and then pour extra ketchup over it to brown yummy!! 😊
I’m from socal and my family is Italian American and Mexican. My Mexican mom was taught how to make meatloaf by my American Italian grandma. She makes it exactly the new style way but instead of sour cream she uses milk and instead of Boursin she used herbs and garlic. We always had a ketchup/tomato paste worstechire and mustard crust. No gravy. And it’s my favorite in the world. We would have it with baked sweet potatos and salad. My grandmother was born in 1930 in Detroit to Sicilian immigrant and French Canadian immigrant parents. I have never seen meatloaf with gravy I have heard of it with mash and gravy but I always thought it was a southern thing.
@@MrMakeItHappen okay then!!! Thanks for letting me know! The flavors really come through!! Just used your skillet for the first time and it’s great! I gifted one to my favorite chef in town and he has been enjoying it too!
I would have loved to hear what your crew had to say about the meatloaf comparisons. Just from the ingredients used, it looks like YOUR recipe would be the more flavorful.... will definitely try your recipe, especially with the Boursin cheese mix.
I put my own spin on your meatloaf. I also make mine in the smoker instead of the oven. I'm actually making one today. One of the best things I do that I learned from you is to grate the onion. Game changer...
First meatloaf and tuna are two things I NEVER order out or eat prepared by anyone else. Of the two mine is closer to your version I just have to try adding the Boursin cheese and sour cream! I was waiting for your signature catch phrase…surely you haven’t retired it? Along with the mouth watering recipes it’s how I started following you religiously! Bring back “looking good” 😊! The collab cookbook with you, Kimmie and Dave is 🔥🔥🔥
We found a recipe my grandmother used to use for "Mexican meatloaf". Whatever the heck that is supposed to mean lol, but it's actually pretty tasty! It uses tomato and green chili (we just use a can of Rotel) and enchilada sauce, so it has a nice bite to it
Hey Mr. Make it Happen! I used to make my Mom's version(like your Mom's except with Ketchup)all of the time until I started experimenting with diff seasonings to get a diff flavor. My fave is Salsa. Depending on how big your loaf is 2 jars should be enough with everything else. I added diced onion too.
Because I've seen you make several recipes with the Boursin, I picked up a couple of them to try it out, and as a meatloaf fan, I've decided to try your version. A few years ago, I made one using a recipe by the late Michael Chiarello. His also had bell pepper and Parmesan cheese, ingredients which I didn't typically use in my typical meatloaf recipe, and it was pretty good. I look forward to trying yours.
I love to add shredded zucchini and carrot, you gotta have the onion, egg, panko and, for me, celery, and Worcestershire in with the beef. Simple but delicious glaze would be just catsup, mustard and brown sugar.
My mom's and now my meatloaf is closer to yours. BUT, instead ofbreadcrumbs, she always used crushed Corn Flakes. No dairy in it, just egg, onion, bell pepper, ketchup, tomato sauce, s&p and in later years garlic/onion powder. Her glaze was the leftover tomato sauce, ketchup & sugar, garnished with bell pepper flowers. I changed that basic recipe up a bit with more modern spice choices, honey instead of sugar, and vary the bread crumbs to anything from panko to Italian seasoned. I am going back to Corn Flakes this week, just something nostalgic about it. Oh yeah, my family is originally from NC, so I agree with another commenter that thered sauce is likely a regional thing, I bet! I am going to try your recipe soon .... Very much up my alley in terms of flavor combos and modernizing an old classic! Thanks for the inspiration you give! 🙂
I sauté the onions with olive oil and butter and let them cool to room temp, then add to mixture. I also soak the bread crumbs in milk before adding to the mixture. Try putting the meatloaf under the oven broiler at the end for a minute to crisp up the top. It adds another flavor to it.
I've never had an appetite for meatloaf before then I watch his version and can't wait to try it. On that note what temp and how long do you cook the meatloaf for?
They both look really good to me. My recipe has been the traditional one but I’ve always sautéed my onions. I like the fact that you great your onion definitely going to try that. Plus I want to make your version. I wish your video kept rolling showing all the guys taste testing. Thats fun! Lately I’ve been making a turkey quinoa meatloaf which I love but my husband‘s been asking for a beef meatloaf yours will blow his socks off!
I made the new style meatloaf from three years ago. Absolutely delicious but a tad different than the new style versus mom’s meatloaf. The older version was more time consuming as I had to sauté the raw veggies. You did not do that in the new version. This will be my new go to meatloaf recipe ( no more Mom’s meatloaf for me).🤗

New school version looks amazing! Did I miss how long it cooks for? Do you add the glaze on top for the whole cooking time? I definitely prefer your version over the gravy version. Making this tonight!
I'll try the new school style but I love my old style meat loaf (but has always been the tomato/ketchup glaze). Here's some preferences I have for the old school recipe though: onions and other veggies are sauteed in minced garlic first before mixing with the hamburger. I carmelizes them and sweetens them up and takes the rawness out of them. Also, I know everyone uses bread crumbs BUT I HATE BREADCRUMBS in my meatloaf and meatballs. I get that its supposed to be a binder but I think it contributes to the dryness some people find in some meatloafs and I've found that it isn't necessary to bind the mixture together....my perception is that it tastes like filler that takes away from the ground beef, akin to a bad fast food burger patty. Your recipe looks interesting but I'm not a bell pepper guy so never adding them in (I don't like a crunchy veg in my meatloaf whether it be bell pepper or onion...that's why I sautee my vegs first). The boursin cheese addition looks interesting but that's a big cost to add to the total meal budget (probably almost doubles the cost). I like the idea of adding some parmesan and if sour cream adds some moisture I'll give that a shot. Thanks for the recipe twist.
Try a fresh squeezed lemon and a half cup of ketchup to your meatloaf and a table spoon of Worcestershire and A1 steak sauce. Gives it a little tangyness
I like the traditional way. I do like it with a glaze and gravy from time to time. But most of the time our mama’s knew what they were doing when it came to food. Both of yours look good too tho!
Thank you thank you thank you for making a meatloaf with no bbq or tomato sauce!!!! I think I’m going to mix both of those. I’ll start with your favorite and add the gravy instead of the bbq glaze! I’m soooo excited to try this!! Thank you!!🙏 ❤❤❤
