If you don't have buttermilk just mix 2% with sour cream until you get the consistency of buttermilk then measure it out. Also using just normal 2% milk works as well but the sour cream helps get close to the taste buttermilk would provide.

Babish: "reapplying glaze every 15 minutes"
Me: Wrap it in bacon and forget about it until it's done.
Missed opportunity not to label this as a recipe from Rocky Horror Picture Show.
Oh, I would eat anything for lunch
I would anything FOR LUNCH
I would eat anything for lunch,
but I won't eat that!
I followed this and my meatloaf turned out really well! I used about 1.11lbs 80/20 ground pork and 1.13lbs 80/20 ground beef instead of all ground beef. The total amount of meatloaf mixture didn’t all fit into the one loaf pan I had, so I made 2 batches. I found the glaze to be a bit on the sweet side, so I plan on toning it down the next time.
"...plus I've got half a small onion here..."
proceeds to throw quadruple the amount of onion into the bowl
'Ground beef and breadcrumbs, some onions, and an egg.
My mouth is watering so please don't make me beg...'
I know everybody's got their tastes and that's just fine
But if you say that you don't like it then you've never tasted mine
The fact that you can convey so much with just your two hands and a fork…magic.

I just used this glaze (slightly modified) for the first time ever and it is absolutely spot on. Also thanks to Babby for teaching me about panade. Game changer!
"Box grater"
I think that's a cone but you're the teacher.
"if your knife has a hard time cutting through it, so will your teeth" is something I'm kind of annoyed to have not heard before this video
I just added all this stuff to my grocery list and I'm gonna make it for dinner tomorrow.
With fondant potatoes as a side.
