    I discovered a few years ago that a blend of pinto beans and kidney beans make the very best chili, imo. I enjoy your channel. It is a great blessing for a guy with limited culinary skills. God bless you and your family.

    Just recently discovered your channel, Becky, and it's great. I've just recently retired and have always liked to cook. I bought your cookbook and have used several of your recipes. The main reason I'm commenting on this video is a comment you made that really struck a chord with me. I totally agree, I probably have cooked a bunch of chili in my life, and probably never made it the same way!!!

    Good looking chili. I always add pintos, black beans and kidney beans. I like thick chili. Like you say never the same way twice it seems. Always a little change here or there depending on what is in the cupboard. Thanks for the video. God Bless.

    I add sugar to mine too to cut the acidity of the tomatoes. Also love to add a little cinnamon. I add stewed tomatoes just for the little bit of green pepper and spices.

    Becky, you cook like I do. If you don't have the exact ingredient, find something in the pantry that's similar and keep on cooking. I recently discovered your videos from 2015, and am enjoying watching them now in 2018. Timeless recipes from the south are the best.

    Tomato soups good in it!!!! I also use tomato paste as well as red wine and paprika...and some Worcestershire to each there own tho...

    You remind me so much of my precious mother who has been gone to heaven for about 10 years now. She would have loved your videos as much as I do!!!!!     I pretty much do my chili the same way, although I add about a third of hot sausage to mine , plus chili powder. Just made a pot today. I put shredded cheese on top. Had leftover cornbread too. I am stuffed! Looks delicious on a cold day like today.

    Thank you, Miss Becky. I tried making your buttermilk biscuit and they come out fluffy and soft. I had it with beef stew with your drop dumplings from your granny's chicken and dumpling recipe. And it was YUM!

    IT IS CHILLY HERE NOW SO I AM MAKING CHILI TODAY. I MAKE IT BASICALLY LIKE YOU DO BUT I USE THE CANNED CHILI BEANS. 4 CANS. I ALSO USE A CAN OF FIRE ROASTED DICED TOMATOES AND A LARGE CAN OF TOMATO JUICE. MY MOM CALLED IT CHILI SOUP AND SO DO I. I HAVE NEVER USED GREEN BELL PEPPERS IN IT BUT I WILL THIS TIME. SOUNDS DELICIOUS. GOD BLESS.

    Thanks for the video! I use dry beans in my chili. I find it easy to soak the beans overnight and be able to add my own salt.

    Fairly recent subscriber and loving every episode (video). When I decide to try a recipe I always make it with the ingredients used in the video. THEN, if necessary I may make a few alterations (that very rarely happens). If I was to start making changes to the recipe without trying it as presented first then it's not the recipe presented is it?! LOL.     I always cook my chili in the crockpot after I’m brown, the hamburger or chili meat with onions and peppers. I’ll spray my crockpot put that in there put at least three or four cans of beans, whole tomatoes and then I use the two chili mix seasoning they can pre-measured and not dump all that in there and let that sit on low for 4 to 6 hours. 8:26

    Hey Becky. I haven't been able to find your store on Amazon. I found your cookbook, but I already have it, and I love it! Where can I buy a big colander / strainer like you have? It looks like it's stainless steel w/a stainless mesh basket. It also has a long handle. I think I saw you use it in your Macaroni Salad recipe. Thank you for all your good works!     My mom always added tomato juice and light red beans. Dad liked his chile jyst a bit soupy because we always had crackers with it. I haven't been able to find the light red beans that mom used. So I have ended up using kidney beans and sometimes added black beans. I like your idea of using pinto beans and green peppers. I like green peppers and onions, but they don't always like me! Definitely will try adding pinto beans in my chile!

      Becky, I enjoy your recipes so much, I don't know how to thank you. I remember that in one of your videos you encouraged us to share spiritual experiences, including miracles. I think I witnessed one. During a routine check-up in May 2018, Mom was diagnosed with lung cancer (both lungs). Her laser treatment took 8 months. During that time, I did almost nothing but pray, there was nobody to pray with me 'coz I live far from home at the moment (in Europe) & here there aren't any Christian churches as we know them. Anyway, we had to wait until January 2019 to know the verdict. When mom came back from the hospital, she told me what the test results had confirmed: she's now 100% CANCER FREE ! I would never have believed that the power of prayer (even the prayers of one single person) could be so intense and powerful. All the glory goes to our Lord. I now feel closer to Jesus than ever before. More good news is that I've finally found a church I can go to in my native language (English). I hope to benefit from the Bible classes there and the fellowship of other Christians. I admire you so very much; first because of your ministry, putting God first. As well as the wonderful smell of foods from home drifting through my kitchen. Thank you so much Becky. I thank the Lord for people like you. God bless you always. @@TheHillbillyKitchen

    I add cocoa powder & brown sugar. We don't like it really spicy, we like it sweet. Then sprinkle some shredded cheddar & a dollop of sour cream. A bag of tortilla scoops finishes the meal. Sometimes I add other beans like cannelli beans. Then I wonder why I gained weight over the winter months, but it's sooo good! 🤗

    I do a 50/50 bean meat ratio too. I love taste testing my chilis and adjusting accordingly.

    I always Brown the meat then drain before the onion or I feel you’re draining a lot of flavor

      NVR thout of it like that bt I did stop seasoning my meat bfor drainin the greese. Now I dnt season my ground beef wenevr using it in a recipe til after draining the greese n I also put all butter in wen Browning it.

    That is comfort food. I like a big pan of cornbread, and a large glass of ice tea to go along with the chili, or pinto beans. Make sure to leave a window cracked at night.

    I love chili. I always use the pintos. And I am sure I have never made the same chili twice either. lol Once I even had a zucchini that I threw in there and It still turned out delicious. So much so that I even tried it in my spaghetti sauce.

      I add zucchini to my spaghetti sauce as well. It stretches the sauce, but I really think it's just a great addition.

    Just a suggestion but when I make beef stew I dont use corn starch to thicken it. When the stew is cooked I use my hand held potato masher very gently right inside the pan of stew. With some of the potatoes smashed up a bit it will thicken the stew for you. Potatoes already have natural starch so I just prefer not to add more. I always keep a box of instant potatoes around for the same reason to thicken many things, I just lightly sprinkle some instant flakes into whatever I want to thicken up and use a wisk at the same time to prevent lumps.

    I use V8 juice as my tomato base, it gives a great flavor, along with dice tomatos, always comes out great

    Instead of green peppers I use hatch green chili's and a mix of dried red chili.. Yummy. But I live in an area flush with green chili. 💚

    My mom would make whatever she had in the kitchen...I remember one time she made potato salad and didn't have what she really needed so she added tomatoes...my brother in law did tell her that was the best he ever ate...I don't know what else she ended up adding to it but she did say later that she didn't even remember either...

    Love your videos so much. I fixed your baked chicken last night. I have noticed a couple of times now that you mention it is snowing outside. The next video you make and its snowing...would you please show some footage of the outdoors? I love snow and we hardly ever get it here in Birmingham. I am so snow hungry. I don't like summer and summers here in Alabama are awful! Its soooo hot and humid that you can hardly breathe.

    Wash and freeze some of those fresh tomatoes. I just toss them in the freezer and let them freeze, then bag. Sure does a pot of soup or Chili good to have a couple of fresh tomatoes in teh dead of winter.

    Love watching your cooking.... I do have one question, though. I noticed that in this recipe and the hotdog chili one you didn't use cumin. I know that chilis vary and so do mine from batch to batch but over the last 45 yrs or so with few exceptions, every chili I've run into (homemade and commercial)has had cumin as a prominent part of the flavor profile. This is not a criticism, just curiosity.
    Again, I've enjoyed your channel - and have learned a fair amount from you. Thanks 😊

    Hello there Becky...I'm so thankful I found your channel because I love your style of recipes....down home cooking with regular ingredients. I tend to repeat my recipes to what I know because I dont like to buy specialized items I can only use once and hope we like the new recipe?. Can I just ask please...when you cook the beef, onions and peppers together then drain off the fat does the flavour also drain out? I usually cook the beef first, drain the fat then start to add the onion peppers etc. but I like your method better and quicker?       Thank you 😊 I actually cook it both ways. When you start the peppers and onions with the beef, I think the flavor really cooks in the beef. I have actually wondered how much flavor I was losing when I drain it 🤔 but I don't think it is much. God Bless You!

    That is so funny my husband and I are the same way I love kidney beans but he likes pinto beans I don't do peppers in my part because they bother my tummy and give me heart burn.....
