  • I am very sure this is not the real, traditional pastitsio
    But it is the version I have been making for over 40 years
    There is some fiddling to this but it makes a big batch that will feed quite a few and for low cost!!!
    You will need a 9x13 inch pan and an oven set to 375 degrees.
    I also sprayed the pan with Pam
    1 pound ground meat
    1 large onion, diced
    1 16 ounce can tomatoes, with liquid
    1 6 ounce can tomato paste
    2 cups elbow macaroni
    4 eggs, separated: 4 egg whites slightly beaten, 4 yolks slightly beaten
    1/2 cup American cheese
    1/2 cup butter
    1/2 cup flour
    1 teaspoon salt
    1/4 teaspoon cinnamon
    4 cups milk
    Brown burger and onion.
    Add undrained tomatoes, tomato paste and 1 teaspoon salt
    Simmer covered 30 minutes. Take a peek and stir every once in a while. Remove from heat.
    Cook macaroni and drain. Add slightly beaten egg whites and cheese. Do this while macaroni is hot so cheese will melt.
    Combine and add to meat mixture. Turn into 9x13 inch pan
    In large saucepan melt butter.
    Whisk in flour, cinnamon and 1 teaspoon salt. Whisk for about 1 minute to bake off the flour taste
    Add milk all at once.
    Cook stirring often until thickened.
    Remove from heat.
    Gradually add some hot sauce into egg yolks, blend well.
    Return yolks to rest of sauce, stirring rapidly.
    Pour atop meat mixture
    I sprinkled a little more cinnamon on top
    Bake 40-45 minutes
    Let stand 10 minutes to let the juices settle.
